grams/1¾oz porridge oats

200 milliliters/7fl oz whole milk

cocoa powder

caster sugar,

nuts, hazelnuts

chocolate

½ banana, sliced

berries,

½ tsp runny honey (optional)

cranberries

tsp chopped dried apricots

tsp coconut flakes coconut

How to make porridge

Tapioca pudding is transformed into a lovely comforting Suhoor breakfast with rose-flavoured rhubarb and pistachios.  This eats well warm or cold.

Tapioca porridge with baked rhubarb 

rhubarb

brown sugar

tsp vanilla extract

lemon, zest only

tsp rosewater

70 grams/2½oz tapioca pearls

500 milliliters/18fl oz full-fat milk

cardamom pods, seeds removed and finely ground

4–5 tbsp light brown sugar

tbsp fine desiccated coconut

tbsp pistachios

This porridge is made with water and skimmed milk to keep the calories low. A little ground cinnamon  and juicy grated pear makes it taste sweeter.
