I live at 5,300 ft elevation and I cook on a gas stove with propane, so I thought I'd put in my changes for anyone in the same circumstances. This is a great recipe. For higher elevation and hotter cooking stoves add 1/3 cup water for a total of 2 1/3 cups water. Follow the recipe exactly as written except use a flame tamer under the pot, cook it for 25 minutes, then remove from heat as directed &amp; let it stand for 5 more minutes before fluffing with a fork.

This recipe is perfect! I have been struggling to make good rice for a while and followed many recipes and my rice always came out hard. I think the most important part was watching the video, and seeing specifically what the "gentle simmer" appeared to be. I also, washed my rice until the water was clear and then soaked it for about 10 minutes. Used Carolina Basmati rice, followed the label instructions for water to rice ratio but followed temperature and time instructions in this guide and came out perfect!!

Well I guess I don't have the knack for making rice on the stovetop. I've tried this recipe 3 times. I do not live at high elevation. I have a fairly new electric stove. With my burner on the lowest setting the rice is boiling hard enough that I have to tilt the lid or risk having the rice boil over. I end up having to leave the rice on the stove for 40 mins, still not done, and finish it in the microwave.  )-:

Followed the instructions exactly... At 30 minutes my brown rice was horribly burnt. Not sure what I did wrong, I made sure to turn down the heat after adding the rice.

This worked perfect for me, my first time cooking rice and it tastes amazing.

This is not how rice should be cooked. 
For perfect rice it should be :
 1 1/2 cup of water for 1 cup of rice, stop the heat as soon as the water runs out, then let sit for 10 minutes. 

You should NEVER have to drain the water.

My pot kept overflowing even when on the lowest heat! Changed it over to a weaker stove and seemed to do the trick but had to have the lid ajar.

I'm almost 13 years old, and if you do this recipe step by step and watch the rice, you will make perfect rice.

Works pretty great! Still a good idea to rinse your rice if you’re using a cooker though. Gets the grains clean and makes cleaning the cooker easier.

In a medium saucepan with a tight-fitting lid, cover the rice with cold tap water. Swish the rice around until the water becomes cloudy, then slowly pour it out, using your hand to keep the rice from falling out of the pan. Repeat 2 or 3 more times until the water runs mostly clear, then drain well.

Add 175ml water and bring to the boil over a high heat. Once boiling, lower to a simmer and cover for 15-20 mins until the water is absorbed and the rice is soft. Do not lift the lid while the rice cooks. Remove the saucepan from the heat and let it sit, covered and undisturbed, for 10 mins. Uncover the pan and gently fold the rice over itself to fluff it up a few times before serving.

How to Cook Perfect Rice

c. long-grain white rice, jasmine rice, or basmati rice

Measure out 1 1/2 cup of white rice...

Measure out 1 1/2 cup of white rice and pour it into a saucepan that has a tight-fitting lid. Move over to the sink and run some room-temperature water over the top of the rice until it covers the rice by about an inch. Use your fingers to swirl the rice and water around the pan. Drain the water off of the rice using a fine mesh sieve or through your hand if you don’t have one. Repeat the process of adding water, swirling, and draining two more times.

Once you've finished, measure 2 cups of water...

Once you've finished, measure 2 cups of water and add it to the pot. Stir the rice as you add in the water, but do NOT stir it again once you've turned the heat on - ever.

Set the pot over medium-heat and patiently wait...

Set the pot over medium-heat and patiently wait as it comes to a boil. Let it boil until the water level drops below the level of the rice (the rice will be peeking through the top). Turn the heat down to the lowest setting possible, place the kitchen towel over the top of the pot, and cover the rice with the pot’s lid. Bring the edges of the towel up and twist around the handle of the lid so they aren't dangling down near the heat element.

Set a timer for 15 minutes and walk...

Set a timer for 15 minutes and walk away. Once that timer goes off, turn the heat off entirely and let the rice sit for 10 more minutes before taking off the lid. After 10 minutes, remove the lid and fluff the rice with a fork. Serve hot.

How to Make Fluffy Japanese Rice without a Rice Cooker

(1½ US cups) Short Grain Rice

(1¾ US cups) Cold water

First, measure out your rice. We recommend that you weigh it out using kitchen scales. (See note)

Next, pour the rice into a sieve and put the sieve into a large bowl. Pour cold water on to the rice and wash. When the water becomes cloudy, drain it out and repeat this step 2 more times.

Then, put the rice into a pot with a thick base, one that has a lid. Pour in 400ml of cold water and leave to soak for 30 minutes.

Put your pot on the stove on a medium heat and bring it to the boil.

Don't take off the lid, listen for the boiling water. Once you can hear it boiling set a timer for 2 minutes.

After 2 minutes are up, reduce the heat to medium-low and set a timer for 3 minutes.

After 3 minutes are up, reduce the heat to the lowest setting and simmer for 5 minutes.

Turn up the heat to max for 10 seconds and then turn off the heat completely, leave the rice to steam for 10 minutes. Don't be tempted to take off the lid or mix it.

After the 10 minutes are up, your fluffy and slightly sticky Japanese rice will be ready! Simply mix well and serve up!
