Chicken Pesto Recipe | Creamy Pesto Chicken

Boneless Skinless Chicken Thighs

(onions)

Canned Tomatoes (undrained)

Garlic

Italian Seasoning

Water

Black Pepper (to taste)

Heavy Whipping Cream

Place the chicken, onions, tomatoes, garlic, 1 tablespoon pesto, Italian seasoning, water, salt, and pepper in the inner liner of your Instant Pot or pressure cooker.

Cook for 5 minutes at high pressure. At the end of the cooking time, allow the pot to rest undisturbed for 10 minutes and then release any remaining pressure.

Remove the pieces of chicken and set aside.

Add the whipping cream and pesto to the vegetables in the pot. Using an immersion blender, purée until you have a smooth and creamy sauce. At this point, if you would like a thicker sauce, turn the Instant Pot to Sauté and when the sauce boils, add the Xanthan gum or cornstarch slurry and cook until the sauce has thickened (about 2-3 minutes).

Add the chicken to the sauce and serve.

Preheat oven to 450 degrees. If desired, pound chicken breasts lightly so they are of even&nbsp;thickness, then dry with paper towels.

Pour oil in a 9x13 baking dish. Roll the chicken breasts through the oil to coat it, then&nbsp;place chicken breasts side by side in the dish.

Combine salt, pepper, onion and garlic powders in a small bowl. Sprinkle mixture over&nbsp;chicken and rub with your hands to coat in the oil and seasonings.&nbsp;

Bake uncovered for 15-20 minutes, or until a meat thermometer reads 160-170 degrees.

While the chicken is baking, make the pesto sauce. Place all the pesto sauce ingredients into a blender or food processor and pulse until smooth. Add more olive oil for a thinner sauce.

Once chicken is out of the oven serve immediately with a dollop of pesto sauce on top. Enjoy!

Prepare the shredded chicken using your desired method (see various methods in notes below).

Meanwhile place all ingredients for pesto in a food processor and blend until a paste like consistency is formed. You may wish to add extra olive oil if you prefer a thinner pesto sauce.

Mix pesto in with shredded chicken until evenly distributed. Serve in wraps, with rice on pizza or sweet potatoes!
