This quick and easy pesto pasta is a delicious vegetarian weeknight dinner! I like to add a handful of arugula, but feel free to skip it or use your favorite soft greens in its place.

Easy Pesto Pasta

spaghetti (reserve 1/2 cup starchy pasta water)

basil pesto

Extra-virgin olive oil (for drizzling)

lemon juice (as desired)

arugula

pine nuts

Sea salt and black pepper

Cook the pasta in a large pot of salted boiling water according to package directions or until al dente. Reserve 1/2 cup of the starchy cooking liquid before draining. Drain the pasta and toss with a tiny bit of olive oil.

In a large skillet over very low heat, add the pesto, 1/4 cup of the reserved pasta water and stir to combine. Add the pasta and toss to coat, and more pasta water as needed to create a loose sauce. The amount of water needed will depend on thickness of your pesto.

Turn the heat off. Add lemon juice, salt, and pepper, to taste. Then, add the arugula and toss to barely wilt. Garnish with the red pepper flakes and pine nuts and serve.

Red pepper pesto pasta

dried pasta (whatever shape you have handy; see Easy Swaps)

jar roasted red peppers, drained

blanched hazelnuts

garlic clove, crushed

½ tsp sherry vinegar vinegar

parsley

Bring a pan of salted water to the boil. Add the pasta and cook according to the packet instructions. Drain the pasta, reserving a cup of the starchy cooking water.

Meanwhile, put the peppers, hazelnuts and garlic in a food processor and pulse to a chunky texture. With the motor running, slowly trickle in the olive oil. Add the vinegar, grated cheese, parsley or basil and seasoning, then pulse again until combined.

Return the pasta to the pan, then add the pesto and a splash of the reserved water, tossing together until well coated. Divide among 4 bowls and serve with extra grated cheese.

Cook the pasta to al dente in a large pan of salted water.

Reserve a cup to a cup and half of pasta water once the pasta has cooked

lb penne pasta (choose

store bought pesto or homemade pesto

cherry tomatoes

beans

balsamic vinegar

In a large bowl, combine the drained beans, pesto, tomatoes and balsamic vinegar

When pasta is fully cooked, strain and add it to the bowl

Toss pasta and ingredients together well to combine

This Tagliatelle Pesto Pasta is ready in just 15 minutes! It&#39;s light and healthy but packed with flavor from the homemade pesto. Serve with a generous sprinkle of parmesan and garlic bread on the side!

Tagliatelle Pesto Pasta (15 Minutes)

(30 grams) basil

pine nuts (or other nuts

lemon juice

garlic

parmesan cheese (use vegan if needed)

olive oil (extra virgin)

dry tagliatelle pasta ((use gluten-free if needed))

Fill a large pot with water, add 2 tsp salt, and bring to a boil. Next, add the pasta and boil until al dente, following the recommended time on the packaging. Save 1/2 cup of the pasta water before draining.

In the meantime, prepare the pesto. Start by toasting the pine nuts, if you haven&#39;t already. Add to a skillet and toast over medium heat for 5-6 minutes or until slightly golden.

Add all of the ingredients to a food processor- basil, pine nuts, garlic, lemon juice, a pinch of salt, black pepper, and parmesan cheese. Pulse for 30 seconds to roughly chop.

Then, slowly pour the olive oil while blending on low speed, until fully incorporated.

Add the drained pasta back to the pot along with the pesto, and a splash of pasta water. Cook on low heat for 2-3 minutes, until creamy and well coated.

Serve topped with more parmesan (optional) and enjoy immediately.

Save in a covered container, in a fridge for up to 4 days.

Finely dice the onion and bring a saucepan of salty water to the boil.

Heat a spray of oil in a separate large pan and add the onion over a low-medium heat. De-skin the sausages by making a shallow cut lengthwise down one side of the sausage with a sharp knife and pulling the skin off. Add the de-skinned sausages to the pan and break up with a spatula. Alternatively, you can use your fingers like they are scissors and pull around 2.5cm of sausage at a time out of the casing and into the pan. Increase the heat and cook for around 5 mins until cooked through.

Meanwhile, tip the pasta into the boiling water.

Add the garlic Italian seasoning, basil and paprika to the sausage pan, followed by the tomato purée and pesto. Stir to coat, then pour in the cream and a ladle of pasta water to thicken.

Leave to simmer for a few minutes until it thickens, then add the cooked and drained pasta, along with some extra pasta water to loosen it up if necessary.

Share between three bowls and top with chopped basil and parsley.

Preheat the oven to 350°F and boat a 9x13 baking dish (or larger) with cooking spray. Set aside.

In a medium bowl, mix together the sausage, cheese, pesto, cream, tomatoes and onion.

Add the cooked pasta to the casserole dish and evenly top it with the sausage mixture..

Bake the casserole uncovered for 20 minutes. Remove and allow it to sit for 5 minutes before serving.
