Pesto Vinaigrette Recipe

basil leaves (loosely packed)

pine nuts (or sliced almonds)

garlic (minced)

white wine vinegar

lemon juice

parmesan cheese

kosher salt*

black pepper

extra virgin olive oil

Place fresh basil leaves, pine nuts, garlic, vinegar, lemon juice, parmesan cheese, salt, and black pepper into the bowl of a food processor. Pulse 4-5 times to give them a rough chop.

Turn the machine on and while it is running drizzle the olive oil through the tube. Stop and scrape once or twice and continue running the machine until the salad dressing is creamy, 45 seconds or so.

Taste for seasoning and add in if necessary. Give it one more pulse and serve.

Creamy Pesto Salad Dressing

plain whole milk yogurt

mayonnaise

pesto (or homemade Basil Pesto or Cashew Pesto)

red wine vinegar

salt

Stir together all ingredients in a bowl. Serve immediately or refrigerate until serving.

I didn't have regular yogurt, so I ended up making this with some honey greek yogurt I already had in the fridge. The dressing ended up being a little thick, but it was still AMAZING. I did add an extra 1/2 tsp of vinegar to liquify it a bit, but didn't want the dressing to be too sharp and pungent, so I just accepted that my dressing would be a little creamier.

I made the Pesto dressing. Really simple and yummy!
