Pickled garlic is a staple side dish in Korea. Through a two-step process, the garlic loses much of its pungent bite and becomes slightly sweet and tangy.

Korean Pickled Garlic (Maneul Jangajji)

garlic (about 8 – 9 whole heads)

water ((bottled water, preferably, for less mineral))

soy sauce

sugar (Use more for sweeter pickles)

Separate the garlic cloves from the bulbs. Soak in hot water for 30 minutes or longer. Soaking the garlic helps the skins come off easily. Peel and remove the root ends with a small knife. Rinse and drain. Add to the jar.

Stir the vinegar brine ingredients together until the salt is dissolved. Pour over the garlic cloves. The liquid should fully cover the garlic cloves. Let stand at room temperature for 7 to 10 days or longer without exposure to sunlight. (See note 1)

Bring the soy sauce, sugar and water a boil, and gently boil for a minute over medium heat. Pour in the vinegar. Drain the vinegar brine from the jar. Pour the soy brine, while still hot, over the garlic cloves.

Make sure all the garlic cloves are fully covered. Close tightly with a lid, and let stand at room temperature for 2 weeks without exposure to sunlight (see note 1). The garlic can be eaten at this point, but it will taste better as it matures. Refrigerate after opening. The garlic cloves will keep for a few months or longer. (See note 2.)

This recipe is not suitable for shelf-stable canning. If you make this recipe, you MUST store it in the refrigerator. Even if you seal the jars with a water bath. Refrigerate!

Pickled Garlic

Combine canning salt and vinegar in a large saucepan. Bring to boil; reduce heat and simmer 10 minutes (180 degrees).

Meanwhile, pack garlic in to 4 sterilized pint jars (about 8 ounces per jar) leaving 1/2-inch of headspace. Add 1/4 teaspoon red pepper flakes and 1 head of dill to each jar. 

Using a ladle, divide hot pickling liquid between the 4 jars, leaving 1/2-inch of headspace. Remove air bubbles, clean jar rims, center lids on jars, and adjust band to fingertip-tight.&nbsp;

Chill in the refrigerator until pickled as desired (I recommend at least 3 weeks in the refrigerator). Store in refrigerator for up to 4 months (see notes) or seal jars following the instructions below (the pickled garlic must still be refrigerated; it will not be shelf-stable).

Process jars in boiling water for 10 minutes. The jars must be covered by at least 1 inch of water. Turn off heat and remove cover. Let jars cool 5 minutes. Cool 12 hours. Check seals. Chill in the refrigerator until pickled as desired (I recommend at least 3 weeks in the refrigerator). Store in refrigerator for up to 4 months (see notes).

Cut the ends off first of each clove then blanch for 30 seconds in boiling water. The skins will come right off.

Fill pint or smaller jars with blanched/peeled garlic. Simmer in dutch oven or other non-reactive pot the vinegar, sugar, mustard seed, and celery seed. Cook until the sugar is completely dissolved.

Pour vinegar mixture over cloves in jars leaving 1/2&quot; headspace.

Use spatula to remove excess air in jar and fill jar again to maintain headspace. Place sterilized lids and rings on jars and tighten. Process in boiling water bath for 20 minutes.

How to Make Pickled Garlic (Plain and TikTok Spicy Pickled Garlic)

Wash the jars and lids in hot soapy water, rinsing well. Then place the jars (no rubber or plastic parts) in a pre-heated oven for ten minutes at 160ºC/325ºF to completely dry them.

Step 1: Sterilize the jars

Combine the water, vinegar, and salt in a small pot and heat over medium, stirring, until the salt is completely dissolved. Then remove from the fire and add the chopped dill and coriander seeds and mix.I usually use some scissors to chop the dill directly into the pot.

If you want to add honey, you can add it right at the end of this step before moving the brine to the jar.

Step 2: Prepare the pickling brine

Peel the garlic using one of these methods and then place the cloves directly into your sterilized jar/s.

Then pour in the brine until it completely covers the cloves, leaving around ½ inch (1.2 cm) headspace at the top of the jar, and stir a couple of times to mix everything well.

Allow the garlic to pickle for about a week in the refrigerator. The longer you can hold out, the better the flavor will be, so I recommend waiting at least one week, but around 3 weeks is the sweet spot!

Step 3: Assemble the pickled garlic jar

Once your garlic is ready, and at your desired flavor level, it&#039;s time to make this spicy pickled garlic recipe (more of a marinated garlic).Drain the pickling brine from the garlic – this can be used for a second batch of pickled garlic.

Then add the hot sauce (or sriracha), chili powder, dried thyme, and honey to the garlic and mix well. You can do this in a bowl or directly in the jar (place the lid on and shake!)You can then enjoy the spicy garlic pickle immediately or allow it t marinate for a few hours to help the flavor meld with the garlic.

To make spicy pickled garlic

Plain pickled garlic: Store the garlic pickle jar in the fridge and aim to use it within three months. If you notice any signs of mold or yeast growth, then it&#039;s time to start again!Spicy pickled garlic: Once this is prepared, I aim to eat these within a few days since the garlic is no longer stored within the brine.

This recipe shows an easy way to make sweet, sour, and crunchy Chinese pickled garlic at home, using whole, unpeeled garlic heads rather than individual peeled cloves.

Chinese Pickled Garlic

lb Fresh garlic ((16 - 18 whole heads))

Water

tbsp Non-iodized Kosher salt ((Or 1½ tbsp fine salt))

White vinegar ((½ cup + 2 tbsps))

Vodka ((Optional))

Remove the outer layers of skin that are loosely covering the garlic bulbs. Do not peel the skin off each individual clove. Do not separate the cloves; leave them attached to the bulb.

Mix 3 tbsps of salt into 4 cups of cold water until fully dissolved. Soak the garlic in the salt solution for 12 hours.

After soaking, drain the water. Rinse the garlic with clean water. Place them on a drying rack, allow them to thoroughly dry in direct sunlight.

Meanwhile, place all the ingredients listed for the brine into a saucepan. Bring the mixture to a boil, stirring until fully dissolved. Turn off the heat and allow the mixture to cool to room temperature.

Once the garlic bulbs are fully dried, transfer them into a sterilized glass fermentation jar or a large mason jar. Pour the cooled brine over the garlic, and use clean chopsticks to reposition the bulbs, ensuring they are completely submerged in the brine. Optionally add in ¼ cup of Vodka. (See Note 1)

Cover the glass fermentation jar with its lid. Add water around the lid to make the jar airtight, so that the gas produced in the fermentation process can escape, but there is no outside air into the jar. Since water evaporates, remember to refill the waterlock seal every 5 to 7 days. (Using a large mason jar as a substitute for the fermentation jar is acceptable; just ensure its lid is tightly closed.)

Let the garlic sit under room temperature for 2 months, avoiding direct sunlight. After 2 months, you can enjoy the Chinese pickled garlic, and its flavor will continue to enhance with longer marination. Refrigerate the jar after the initial 2 months. When retrieving the pickled garlic, always use clean chopsticks. They will remain fresh in the fridge for up to 6 months.
