Southern Pimento Cheese Recipe

(8-ounce) sharp cheddar cheese (shredded)

(8-ounce) mild cheddar cheese (shredded)

(8-ounce) package cream cheese (softened)

pimentos

salt

black pepper

mayonnaise or Greek yogurt (optional)

Cream together cheddar cheese with the softened cream cheese until well combined.

Stir in pimentos and salt and pepper.

If you prefer your pimento cheese to be a bit thinner for spreading, add in optional mayonnaise, Greek yogurt, or liquid from the diced pimentos to preference.

Pimento Cheese Sandwiches

white bread (thick

cheddar cheese

Monterey Jack cheese

oz cream cheese, softened

mayonnaise

garlic powder

onion powder

Kosher salt and black pepper,

cayenne pepper

In a mixing bowl, combine cheeses, pimento, mayonnaise, onion powder, garlic powder, and cayenne pepper. Stir to mix well. Sprinkle generously with Kosher salt and black pepper.

Spread pimento cheese mixture generously on 6 slices of thick white bread. Top with remaining white bread slices, then cut diagonally.

Serve pimento sandwiches on their own, or plate with potato chips and salty pickles. Keep any remaining pimento cheese spread in the refrigerator for 3-5 days.

(8 ounce) packages extra sharp cheddar cheese, shredded (Cracker Barrel)

(4 ounce) jar diced pimentos (well drained)

Place cheese, pimentos, relish, salad dressing and onion salt in a large mixing bowl.

Using a hand mixer, beat until well combined and desired texture is met.  Add additional dressing for a creamier consistency if desired.

Taste and season with additional onion salt if desired.

This classic Southern Pimento Cheese is sure to be the hit of your next party.  To take it over the top, serve in little steamed red potatoes.

Pimento Cheese Recipe

(8 ounce) box cream cheese

mayo (preferably Duke's)

white cheddar cheese

dry mustard

Worcestershire sauce

mirin (optional)

Salt and pepper

In a stand mixer, using a paddle attachment, beat cream cheese and mayonnaise until smooth and creamy. 

Add the cheddar cheese, garlic powder, onion powder, dry mustard, cayenne pepper, Worcestershire sauce, and mirin (optional); beat just until blended.

Stir in the pimentos. Season with salt and pepper to taste.

Refrigerate until 30 minutes prior to serving.

We love this, I must admit I usually buy dips but this was so quick and easy! So flavorful!
