These Pineapple Bars are light and full of crushed pineapple. Our favorite pineapple dessert recipe! 

Pineapple Bars

butter (softened)

sugar

eggs

flour

baking soda

salt

pineapple (well-drained)

sugar (for garnish)

In a large bowl, mix together butter, sugar and eggs.

Beat in flour, baking soda and salt.

Stir in pineapple.

Spread into a greased 9x9 square pan.

Bake at 350 degrees F for 28-33 minutes until done. Cool in pan for 10 minutes.

Sprinkle with powdered sugar and cut into squares. Serve.

This tropical treat features a tender and crumbly coconut shortbread crust topped with a smooth refreshing pineapple mango custard.

Pineapple Mango Coconut Bars

(86 grams) all-purpose flour

Tbsp sugar

(57 grams) unsalted butter (softened)

(50 grams) unsweetened shredded coconut

(125 milliliters) mango juice

(125 milliliters) pineapple juice

(150 grams) granulated sugar

(30 grams) all-purpose flour

Preheat oven to 350F. Butter and line a 8x8" square baking pan with parchment paper.

Toss the flour and sugar together.

Use a pastry cutter or a fork to cut the butter into the flour mixture until crumbly. Stir in the shredded coconut and press FIRMLY onto the prepared baking pan.

Bake for 10 minutes or until the edges just start to brown.

Crust

Meanwhile, whisk together the fruit juices and sugar.

Whisk in the eggs and salt. Sift in the flour, whisk again and gently pour over hot crust.

Reduce oven temperature to 325F and bake for 25 minutes or until custard is set. Cool for 1 hour and chill in the fridge for atleast 1 hour before cutting into squares.

Custard

Growing up in the Philippines, mangoes and coconuts were always my favourite foods. I tried these out a few days ago and they tasted super good and my sons kept asking me for more so I guess I need to make more soon.
