pineapple cheese casserole

This Southern pineapple cheese casserole combines sweet pineapple with cheddar cheese and Ritz crackers. It's warm, gooey, and perfect for potlucks.

Pineapple Cheese Casserole

shredded sharp cheddar cheese, divided

sugar

all-purpose flour

pineapple

sleeve Ritz crackers, crushed (about 30 crackers)

(1/2 stick) butter, melted

Preheat the oven to 350°F (175°C) and grease an 8x8-inch baking dish with butter or cooking spray.

In a large bowl, mix 1 cup cheddar cheese with the sugar and flour.

Drain the pineapple through a fine mesh sieve (saving 1/3 cup of the juice). Pat the fruit dry with paper towels, then add them and the juice to the bowl. Mix until well combined.

Pour the filling into the baking dish and top with the remaining cheese.

In a separate bowl, combine the crushed Ritz crackers and melted butter until the cracker crumbs are evenly moistened. Sprinkle the topping over the pineapple filling.

Bake for 30-35 minutes, until the top is golden brown and the pineapple mixture is hot and bubbly.

Remove from the oven and let stand for 10 minutes before serving warm. Enjoy!

I have this recipe from our Church cookbook.  I altered by using graham crackers instead of Ritz!  It makes it just a tad sweeter but so good!  We love it!!
