Step 1

Preheat the oven to 350°F (175°C) and grease an 8x8-inch baking dish with butter or cooking spray.

Step 2

In a large bowl, mix 1 cup cheddar cheese with the sugar and flour.

Step 3

Drain the pineapple through a fine mesh sieve (saving 1/3 cup of the juice). Pat the fruit dry with paper towels, then add them and the juice to the bowl. Mix until well combined.

Step 4

Pour the filling into the baking dish and top with the remaining cheese.

Step 5

In a separate bowl, combine the crushed Ritz crackers and melted butter until the cracker crumbs are evenly moistened. Sprinkle the topping over the pineapple filling.

Step 6

Bake for 30-35 minutes, until the top is golden brown and the pineapple mixture is hot and bubbly.

Step 7

Remove from the oven and let stand for 10 minutes before serving warm. Enjoy!
