Avui us presentem una tapa molt coneguda al sud de la península. Allà s'acostuma a fer amb caçó, però també podeu fer servir altres peixos de carn similar, com el rap. La recepta és ben senzilla: només us cal preparar un fàcil adob el dia anterior. L'endemà, a fregir i a menjar! Trobeu diferents variants d'aquest adob, cada mestre té el seu llibret que diuen, però els ingredients sempre són força similars. Podeu adobar el peix, enfarinar-lo i congelar-ne una part també. Som-hi!

Peix adobat i fregit

Talleu i netegeu el peix. En aquest cas jo he utilitzat una cua de rap sencera d'uns 600 grams.

I l'aigua. És una part de vinagre per quatre d'aigua, en general.

Ara aixafeu els alls fent pressió amb la part plana del ganivet.

Poseu els alls dins el bol juntament amb les fulles de llorer tallades a trossets.

Poseu els trossos de peix dins de l'adob.

Tapeu el bol amb paper film i reserveu-lo a la nevera. Us recomano adobar el peix un mínim de 12 hores.

L'endemà, prepareu la farina. Jo he utilitzat meitat farina per fregir i meitat farina de cigró.

Retireu els trossos de peix de l'adob, descartant el llorer, llavors de la llimona... i poseu-los sobre un paper absorbent.

Amb més paper absorbent, procureu assecar el peix.

I ara ja el teniu a punt per ser enfarinat.

Amb paciència, enfarineu els trossos de peix.

Heu de procurar que no quedi cap tros sense enfarinar, ja que volem que el fregit encapsuli el peix, garantint que quedi sucós per dins i cruixent per fora.

Ara, amb oli ben roent (a 180 graus) fregiu els trossos de peix.

Els heu de tenir un parell de minuts, no gaire més. No volem coure excessivament el peix per dins. Tan bon punt siguin cruixents per fora, els retireu.

I els deixeu sobre un paper absorbent, per allò de l'oli de nou.

Mentre feu la resta, prepareu una salseta per acompanyar. Pot ser un allioli, o fins i tot un romesco. Jo he optat per fer una salsa rosa picantona.

Finalment, serviu-ho tot junt i, si us ve de gust, tireu-hi una mica de sal en escates per sobre.

Spanish pintxos recipes

Manchego cheese (or 4 if large slices/small pieces of bread)

Spanish chorizo

To make the caramelized onions, start by halving the onion then cut into thin slices. Warm the oil in a wide skillet/frying pan over a medium heat then add the  onion. Start to soften the onion but try to avoid it browning or burning. If needed, add a little more oil.

As the onion starts to soften, reduce the heat to low and cook, stirring now and then, so that the onions very gradually become brown. It should take a good 20 - 30 minutes.

Once the onions are starting to brown, add the sugar and salt. Stir to mix through and continue cooking until browned. Then, set aside to cool. The onions can be made ahead and stored in the fridge for a day or two until needed. Gently warm or at least bring to room temperature to make a little softer before using.

To make the pintxos, top each slice of baguette with a slice of cheese - if using chevre-style, a single slice is best, of a soft goat cheese, then you may need two thinner pieces to help make a thin layer, unless it spreads on easily.

Top each slice with a teaspoonful of caramelized onions then skewer with a cocktail stick.

For goat cheese and caramelized onion pintxos

Shred up the imitation crab - you may want to halve them first if they are in sticks. Place in a bowl and add the mayonnaise and mix well.

Spoon some of the mixture on top of each slice of bread so you have a small mount covering the top of the slices. Skewer each slice with a cocktail stick.

For imitation crab (txaka) pintxos

Halve the tomato through the middle and rub each slice of bread with the cut side so they have some of the juices in the bread. Sprinkle each slice with a scant pinch of salt then, if you like, drizzle a small amount of olive oil on top.

Place two slices of Manchego cheese on top of each slice of baguette (or one, if the cheese slices are larger/baguette slices are small). Top each piece of bread with a slice of chorizo then thread a slice of chorizo onto a cocktail stick and skewer it into the slice of baguette.
