Butchers are telling me they still have lots of big cuts available, so let’s celebrate that with this tasty recipe. Crispy pork belly roasted in a homemade piri piri sauce – a great alternative to traditional roast pork, and the leftovers will be phenomenal.

This easy Portuguese piri-piri chicken is perfect for the barbecue. You can prepare it the day before, then cook it in just 30 minutes!

Piri-piri chicken

chicken (about 1kg/2lb 3 ounces), spatchcocked

salt and black pepper

tbsp garlic

salt flakes

oregano

paprika

100 milliliters/3½fl oz olive oil

milliliters/1¾fl oz red wine vinegar

On prépare ce condiment passe-partout , en mélangeant de la sauce piquante ainsi qu’une bonne quantité de beurre et d’huile d’olive à des épices, des oignons verts et du persil au robot culinaire. On n’hésite pas à doubler la recette et à congeler la sauce. Ainsi, elle vous accompagnera dans tous vos barbecues !

Sauce piri-piri

ml (1/2 tasse) d’huile d’olive extra vierge

ml (1/2 tasse) de beurre salé, fondu

ml (1/3 tasse) de jus de citron

ml (1 c. à soupe) de paprika doux

ml (1 c. à thé) de coriandre moulue

ml (1 c. à thé) de sel

2,5 ml (1/2 c. à thé) de poivre noir fraîchement moulu

gousses d’ail, pelées

oignons verts, parés et émincés

45 ml (3 c. à soupe) de persil plat haché grossièrement

feuilles de laurier, émiettées

Au robot culinaire ou au mélangeur, réduire tous les
ingrédients en purée lisse. Verser dans un pot en verre.

La sauce piri-piri se conserve une semaine au réfrigérateur.

Make these easy piri-piri chicken pittas for lunch or a quick dinner. All you need is four ingredients: chicken, piri-piri sauce, coleslaw and pitta breads

tbsp medium spice piri-piri sauce

tub coleslaw

Chop the chicken into 2cm cubes and toss in the piri-piri sauce. Heat the grill to high, push the chicken onto four skewers and grill on all sides for 10-12 mins in total or until cooked through and a little charred. Meanwhile, warm the pittas in a toaster.

Slice the pittas in half, stuff with the coleslaw, then slide the chicken from the skewers and add to the pittas.

This oven-roasted chicken can also be spatchcocked and barbecued. If you don't like it too hot, adjust the amount of chillies in the piri-piri marinade

To make the marinade, tip the dried chillies and the vinegar into a pan and bring to the boil. Remove from the heat and leave the chillies to soak until the vinegar is cold. Put the red chillies, garlic, soaked dried chillies and vinegar in a food processor and blitz. Add the smoked paprika, oregano, thyme, sugar, a pinch of salt and the lemon juice. Blitz again to a paste and set aside.

Sit the chicken in a shallow dish and use a small knife to score all over with cuts 1cm deep. Make sure you do the legs and the underside. Tip the marinade over the chicken and massage into the cuts. Cover and chill for at least 4 hrs, but overnight would be better.

When you’re ready to cook, heat oven to 180C/160C fan/gas 4. Roast the chicken for 1 hr, then turn the heat up to 220C/200C fan/gas 7 and cook for a further 30-35 mins until a crust has formed on the outside of the chicken.

Remove from the oven and leave to rest for 30 mins. Serve with homemade wedges or jacket potatoes, coleslaw, some buttered corn cobs and chilli & mint peas.

Portuguese-Style Grilled Chicken (The Best)

shallots, thinly sliced

½ cup ml) olive oil

tbsp ml) store-bought piri piri sauce

½ cup ml) white wine

½ cup ml) chicken broth

½ cup g) unsalted butter,

garlic, chopped

whole chicken, about 4 lb (1.8 kg)

In a small saucepan over high heat, brown the shallots in ¼ cup (60 ml) of the oil. Add the piri piri and paprika. Cook for 1 minute. Add the remaining oil (¼ cup/60 ml), the wine, broth and butter. Let simmer for about 15 minutes or until the sauce thickens slightly. Add the garlic and cook for 1 minute. Set aside.

Spicy Sauce

On a work surface, place the chicken, breast side down. With a chef’s knife or kitchen shears, remove the backbone and push down to open the chicken flat. 

Season the interior and exterior with the salt and rub with the cut side of the lemon for about 3 minutes or until the salt begins to dissolve. Let rest for 5 minutes. Place the chicken in a large glass dish. Coat with ¼ cup (60 ml) of the spicy sauce. Cover with plastic wrap. Transfer the remaining sauce to an airtight container. Refrigerate the chicken and the sauce for 12 hours or overnight.

Preheat one side of the grill, setting the burners to high. Oil the grate.

Drain the chicken. Place flat on the unheated section of the grill, skin side down. Close the lid and cook for 45 minutes. Flip the chicken and continue cooking for about 30 minutes or until a meat thermometer inserted into the thigh, without touching the bone, reads 180°F (82°C). Finish by crisping the skin on the heated section of the grill. 

Meanwhile, in a saucepan over medium-low heat, warm the reserved spicy sauce.

Cut the chicken into pieces. Brush generously with the reserved sauce.

J'adore cette recette avec des hauts de cuisse de poulet que j'accompagne avec des frites de Rutabaga cuites au four et que je sers avec mayo épicé et des légumes cuits au four. Un vrai délice!

Absolument incroyable sur charbon de bois. J'ai utilisé la piri piri en bouteille du St Hubert. Servi avec un riz aux légumes avec tomates cerises et ça s'agencait parfaitement. Ne pas lésiner sur la sauce lors du service. Se mange un peu comme un ragoût de poulet. Engin une bonne recette de poulet portugais!

Je suis vg, donc j’ai gouté à la sauce grâce à du tofu et c’est excellent. Ma famille a adoré ce poulet.,,, Merciiiii encore à L’équipe Ricardooooo!

J'ai beaucoup aimé la technique de cuisson au BBQ. Par contre, le poulet était trop salé et nous n'avons pas apprécié la sauce. La prochaine fois, je badigeonnerais seulement de sauce Piri piri.

Quelle excellente recette! Le poulet est juteux et savoureux. La sauce ajoute encore plus de saveur. Je l’ai accompagné d’une autre excellente recette de Ricardo: Salade de pommes de terre grillées. À refaire absolument!
