Pisto (Spanish Vegetable Stew)

eggplant (diced)

salt (for eggplant)

olive oil (cold-pressed, good quality)

onion

long red chilli (diced (or 1/2 teaspoon chili flakes))

red bell pepper (capsicum, diced)

green bell pepper (capsicum, diced)

garlic (chopped (can be omitted, this is my personal addition))

1.5 cans crushed tomatoes (or tomato passata, organic, if possible)

salt

sugar (honey or coconut sugar (optional, omit for Whole30))

zucchini

Dice the eggplant into cubes and sprinkle generously with salt. Leave for 15-20 minutes. This removes some of the bitterness from the eggplant and draws out the moisture so that the vegetable doesn&#39;t need as much oil to fry in.

Add 4 tablespoons of olive oil to a large, deep frying pan or a casserole dish and heat over medium heat. Add the onions, chilli and diced peppers. Cook over medium heat for 12-14 minutes until well softened. Then, add the garlic, tomatoes, salt and sugar or honey and cook for 10 minutes covered with a lid, stirring a couple of times. In the meantime, dice the zucchini and set them aside.

Rinse the eggplant under water and pat dry slightly with the kitchen towel. In a separate frying pan, add 2-3 tablespoons of olive oil and heat over medium-high heat. Add the eggplant and cook for 4-5 minutes, stirring halfway, until slightly browned off.

Remove the eggplant and add a little more olive oil. Add the zucchini and cook for 4-5 minutes as well, stirring a couple of times.

Finally, add the pre-fried eggplant and zucchini to the pot with the tomato mixture and stir through. Cook together for 25 minutes over medium-low heat, covered with a lid. Stir a few times.

Let it sit for 5 minutes after cooking before serving. You may garnish pisto with fresh parsley, basil or coriander if you wish.

This recipe is great. Pretty much followed to a T. I fid need more tomato but that's probably because I had a ton of eggplant. Made this 2 so this month. It's so good and healthy. Had it with some bread for the sauce.

Modern hybrid aubergine (eggplant ) do not need to be salted to dry them. They can be used as they come.

Si te apetece comer más verdura en casa, esta receta de pisto con huevos escalfados es todo lo que necesitas. La harás una y otra vez. Pueden variar las verduras según lo que tengas por la despensa, cocerla más o menos tiempo según te guste más o menos blanda la verdura, o añadirle estos deliciosos huevos, o un poco de jamón ibéiroc. El caso es que te animes. ¡Apunta.!

Un pisto con huevos escalfados sencillo y sabroso

½ copa de vino de Jerez dulce

200 g de salsa de tomate

Tomillo

huevos

cdita de pimentón dulce

Aceite de oliva virgen

Sal y pimienta

preparar todos los ingredientes

Antes de empezar la receta, tener a mano todos los ingredientes necesarios.

Pimiento rojo. Cortar el pimiento rojo desechando las semillas, en cuadraditos pequeños.

Ajos. Pelar los dientes de ajo. Para quitar la piel con más facilidad, dar un golpe seco con la parte plana de un cuchillo y se desprenderá prácticamente sola.

Pimiento italiano. Por último y por orden de dureza, cortamos el pimiento italiano.

Y el calabacín. Por último, cortar el calabacín lavado y con la piel.

El pisto es un plato a base de verduras cortadas en cuadraditos. Así que vamos a cortarlas todas para empezar. Cortamos la cebolla.

Estofar las verduras por orden de dureza. Primero la cebolla.

Añadir el pimiento rojo. Añadir a la cebolla.

Ajo. Machacar los dientes de ajo para que se integren por todo el pisto. Si no se dispone de un machacador, cortar en trocitos pequeños.

Por último, las verduras más blandas. El pimiento verde, y el calabacín.

Estofar todo junto. Unos cinco/ocho minutos a fuego medio, o hasta que las verduras empiecen a ablandarse. Para ello, añadir una pizca de sal desde el principio, que ayuda a que la verdura se estofe más rápido.

Arrancamos la cocción. Calentar un fondo de aceite en una cazuela amplia.

Pimentón dulce. A la vez que el vino, añadir dos cucharaditas de pimentón dulce.

Por último, la salsa de tomate. Añadir en cuanto deje de oler el alcohol del vino. Si la salsa de tomate es casera, mucho mejor.

Aromatizar con tomillo. El tomillo aporta un sabor muy campestre, perfecto para este plato. Dejar cocinar todo junto entre 5 y 8 minutos a fuego medio, removiendo de vez en cuando para evitar que se pegue el tomate a la cazuela.

Poner al punto de sal. Un toque de pimienta recién molida también le va fenomenal.

Cuando las verduras estén blanditas, añadir la copa de vino dulce. Este paso es opcional, pero aporta un aroma muy especial.

Añadir los huevos. Cascar los huevos de uno en uno, y verter en el hueco que le hemos hecho en el propio pisto. Añadir un poco de sal en las yemas, y dejar cocer entre 4 y 6 minutos tapado, o hasta que la calra esté cuajada y la yema líquida. Ese es el punto perfecto.

¡A la mesa! Servir en la propia cocotte y recién hechos los huevos. Con un poco de pan, este plato es imbatible.
