Vegan BBQ Pizza on Pita Bread with Avocado Sauce

whole wheat pita breads

½ C BBQ sauce ((can use store bought))

green bell pepper

small-medium red onion

smoked tofu

C corn (, cooked (I use frozen))

½ C cherry tomatoes

19 oz can chickpeas

avocados ((ripe))

lime

salt

garlic powder

Drain and rinse the can of chickpeas.

Toss the chickpeas with the BBQ sauce in a non-stick pan over medium heat.

Cook until the BBQ sauce is no longer runny and is sticking to the chickpeas; about 8 minutes.

BBQ Chickpeas:

Use a food processor or blender to mix together the 3 avocados, juice of 1 lime, ½ tsp salt, ½ tsp garlic powder. Add up to ¼ C of oil, as needed, to get a smooth consistency.

Adjust seasoning (lime juice, salt, garlic powder) as needed.

Set aside.

Avocado Sauce:

Preheat the oven to 350 °F.

Thinly slice the 1 bell pepper, 1 red onion, block of smoked tofu and ½ C cherry tomatoes.

Cook the corn.

Lay out the 4 pita breads onto parchment-lined baking trays.

Spread about 2 tbsp BBQ sauce onto each pita.

Top each pita with the bell pepper, red onion, smoked tofu, cherry tomatoes, corn and BBQ chickpeas.

Bake for about 12 minutes, until the pita bread is crisp on the bottom.

Drizzle avocado sauce over the top of the pizza.

Serve and enjoy. Note: these pizzas contain a lot of toppings and are difficult to pick up and eat (without toppings falling everywhere). This is more of a fork-and-knife pizza recipe.

Flatbread Pizzas with Spinach and Feta

With the rack in the middle position, preheat the oven to 425°F (220°C). Line a baking sheet with a silicone mat or parchment paper.

In a large skillet over medium-high heat, lightly brown the garlic in the oil. Add the spinach and oregano. Cook for 1 minute, stirring constantly. Season with salt and pepper. Drain the spinach in a strainer and let cool. 

Place the pitas on the prepared sheet. Top each one with one-quarter of the spinach and feta, then drizzle with olive oil. Bake for 12 minutes or until the flatbread is light golden brown. Let cool and serve with a squeeze of lemon.

Je double aussi la quantité d’épinards...Et je poivre généreusement.
Aussi bonnes froides pour la boîte à lunch...
J’accompagne d’une salade Grecque.

Ces pizzas sont délicieuses, je les fais régulièrement. 
J'ai personnalisé un peu au fil du temps et dans le mélanges d'épinards, je mets environ le double des épinards, j'ajoute un piment rouge tranché et quelques champignons. Je mets aussi un peu plus d'origan séché. 
Le pain naan est aussi un bon substitut.

Très bonne recette. 
J'ai pris du pain naan à l'ail pour donner d'avantage de gout, ajouté quelques champignons et du haché pur boeuf pour mon homme carnivore :)

Greek Style 15 Minute Pita Pizza Recipe!

pita breads (you can buy them

ketchup

tomato

passata juice (3.5 oz.)

basil

chilli pepper (optional)

mozzarella (13-14 0z.)

tomato,

tbsps pesto

rocket

mozzarella (7 oz.)

feta cheese, crumbled (7 0z.)

green bell pepper, thinly sliced

red onion, thinly sliced

Kalamata olives, pitted, sliced

To prepare this pita pizza recipe, start by making the sauce.

In a blender add all the ingredients for the sauce and pulse, until smooth. Have a taste and adjust the seasonings.

For the sauce

Layer one large baking tray with parchment paper and place the pita breads on top. Spread each pita with 2 tbsps of the tomato sauce and sprinkle with mozzarella. Add 2 tsps of pesto sauce, layer the sliced tomatoes and sprinkle with a little bit more mozzarella cheese.

Bake in preheated oven at 180-190C for 10 minutes, until the cheese is golden and bubbling.

Turn the pita pizza out of the oven and garnish with rocket leaves.

For the Italian style pita pizza

Layer one large baking tray with parchment paper and place the pita breads on top. Spread each pita with 2 tbsps of the tomato sauce and sprinkle with mozzarella. Layer the sliced tomatoes and onions and sprinkle with crumbled feta cheese. Top with sliced pepper and black olives.

Bake the pita pizza in preheated oven for 10 minutes, until the cheese is golden and bubbling. Enjoy!

For the Greek style pita pizza

Pita pizza is a fast, easy weeknight recipe that&#039;s healthy too. Top with hummus, veggies, cheese, or toppings of your choice.

small yellow summer squash

green goddess dressing

Spread

Preheat the oven to 425 degrees F. Arrange 4 pita bread rounds on a baking sheet lined with parchment paper or a silicone baking mat. Spread each pita with roasted garlic hummus (I used about 1 1/2 tablespoons per pizza). Set aside.

Toss

In a large bowl, toss the zucchini and yellow squash slices with the dressing. Add the tomatoes to the bowl, and toss gently again. cheese.

Assemble

Arrange the veggie slices on top of the prepared pitas. Sprinkle with mozzarella

Bake

Bake the pita pizzas for 8 minutes, until lightly crisp and the cheese is melted. Let cool slightly, garnish with basil or parsley as desired, slice, and serve.

Greek Chicken Gyro Pita Bread Pizzas

red wine vinegar

lemon juice

yogurt

garlic (finely minced or pressed)

white wine vinegar

small/medium pita breads (lighting toasted)

tomatoes (diced

English cucumber (diced small)

feta cheese

red onions (diced small)

parsley (minced for garnishing)

To a large skillet, add the oil, chicken, evenly sprinkle with oregano, salt, pepper, and cook over medium-high heat for about 5 minutes, flipping intermittently so all sides cook evenly.

When chicken is about 90% cooked through, reduce the heat to medium-low, add the red wine vinegar, lemon juice (use caution because it will bubble up), and allow chicken to simmer another 1 to 2 minutes, or until done. Cooking time will vary based on thickness of chicken breasts and sizes of pieces.

Set pan aside off the heat while you assemble the salad.

Chicken:

To a medium bowl, add all ingredients, whisk to combine, taste, and check for flavor balance. Add additional salt, pepper, lemon juice, pinch sugar, etc. if necessary, to taste.

Tzatziki Sauce:

Lightly toast each piece of pita bread. You have a few options for this: toast over a low flame on a gas stove, grill briefly on an outdoor gas grill or indoor grill pan, bake for about 10 minutes in a 450F oven (or until lightly crisp), or simply add to your toaster.

To each pita bread, add a light coating of tzatziki sauce or to taste, and evenly top with all remaining ingredients, to taste. Pizzas are best fresh.

These 20 Minute Zucchini Ribbon Pita Pizzas are an easy vegetarian meal your whole family will love. You simply top whole-wheat pitas with marinara sauce, thin ribbons of zucchini, mozzarella, feta and a sprinkling of oregano and then bake. A vegetable peeler is all you need to make those pretty zucchini ribbons!

20 Minute Zucchini Ribbon Pita Pizzas

Marinara or Tomato Sauce

(4 ounces) shredded part-skim mozzarella cheese

Arrange oven rack in the bottom third of the oven. Preheat oven to 425 degrees F.

Lay pita breads on a large rimmed baking sheet lined with parchment or foil. Spread tomato sauce over the pitas, leaving edges clean and dividing the sauce evenly. Top with mozzarella cheese. Divide the zucchini ribbons over the cheese. Top with feta, dividing evenly. Sprinkle with oregano and pepper.

Transfer the baking sheet to the bottom rack of the oven and bake until the cheese is melted and the pitas are browning along the edges, 7 to 10 minutes.

Delicious! Loved the flavor combination of the mozzarella and feta cheeses. Quick and easy, perfect!

Made this for lunch today, delicious! I used spinach instead of zucchini, goat cheese instead of feta, added grill chicken and garlic red peppers.  What ever was in the frid. Easy as pie to make.
