Make these easy piri-piri chicken pittas for lunch or a quick dinner. All you need is four ingredients: chicken, piri-piri sauce, coleslaw and pitta breads

Piri-piri chicken pittas

chicken breasts

tbsp medium spice piri-piri sauce

tub coleslaw

pitta breads

Chop the chicken into 2cm cubes and toss in the piri-piri sauce. Heat the grill to high, push the chicken onto four skewers and grill on all sides for 10-12 mins in total or until cooked through and a little charred. Meanwhile, warm the pittas in a toaster.

Slice the pittas in half, stuff with the coleslaw, then slide the chicken from the skewers and add to the pittas.

Pair subtly spiced sumac turkey meatballs with sweet-and-sour slaw for a vibrant dinner. This recipe takes just 25 minutes to make and is budget-friendly, too

Sumac turkey-stuffed pittas

turkey mince

sumac

tsp cumin

garlic clove, crushed

lemon,

olive oil

mint, leaves

½ red onion,

½ cucumber, deseeded and chopped

pomegranate seeds

pittas, toasted (gluten-free, if needed)

dairy-free natural yogurt, to serve

Tip the mince, sumac, cumin, garlic and lemon zest into a bowl, season and combine using your hands. Form into 10 small balls, about 30g each. Heat the oil in a pan over a medium heat and fry the balls for 8-10 mins, shaking the pan now and then until browned and cooked.

Combine the cabbage, mint, onion, cucumber and pomegranate seeds with the lemon juice. Season. Stuff the slaw and meatballs into the pittas and serve with the yogurt.
