Mozzarella Cream

lb g) fresh mozzarella cheese, drained and torn into pieces

cup ml) 35% heavy cream

In a food processor, pulse the cheese until coarsely chopped. Add the cream and pulse until creamy. Season with salt and pepper. 

Use on Focaccia with Fresh Herbs (see recipe) or enjoy as a spread on bruschetta, toast, pizza, etc.

How to preserve cheese

Whip up this quick and easy "feta" anytime you're craving a crumbly, salty, fresh topping for your salads, pizzas, and pastas!

Quick &amp; Easy "Feta" To Top Your Creations!

extra firm tofu (pressed)

apple cider vinegar

water

tbsp miso paste

salt

tbsp parsley

tbsp nutritional yeast to deepen the flavour

If your tofu brand is not pre-pressed, press the excess water so that it will soak up more of the dressing. Use a tofu press or wrap the tofu in a clean dish towel and place something heavy on top for about 10 minutes.

Mix the dressing ingredients in a bowl. Taste and adjust to your liking. More vinegar for extra tartness, miso for savoury flavour, extra salt, or nutritional yeast for depth of flavour and a little cheesiness. 

Pour the dressing over the tofu and refrigerate in an air-tight container until ready to use. Refrigerate for 2 hours before using if possible. This allows time for the flavours to penetrate the tofu.

Keeps well for 2-3 days and easily crumbles for a crumbled quick and easy “feta”! Try it crumbled over our Pesto Pizza!
