artichokes (jarred) (, well drained then sliced)

(1 heaped cup) mozzarella cheese (, freshly grated)

Pizza toppings

Preheat oven to 275°C/530°F, or as high as it will go. Place oven shelf in top third of oven.

Stretch dough to form pizza base and slide onto baking pan.

Follow topping directions below, then place in oven.

Turn pizza at 4 minutes so it cooks evenly, and check at 8 minutes (even if recipe says 10 minutes). Take out early if cheese gets too brown.

Spread pizza sauce over base, followed by cheese.

Distribute pepperoni over pizza, and bake.

Scatter remaining ingredients over pizza, and bake.

Ham &amp; Pineapple

Spread barbecue sauce over base, followed by cheese.

BBQ Meatlovers

Toss prawns/shrimp with salt.

Heat butter over medium heat in a skillet or heavy frying pan until frothing. Add garlic and cook for another 30 seconds.

Cook prawns for 1 minute on one side until just starting to brown. Flip prawns, cook 1 minute more and remove. Reserve garlic butter.

Scatter remaining ingredients except rocket over pizza, top with prawns. Bake until done.

Drizzle reserved garlic butter over prawns and scatter with rocket.

Garlic Butter Prawns &amp; Chilli

Scatter remaining ingredients over pizza, and bake. (Note 2)

Sausage &amp; Kale

Spread pizza sauce over base. Drizzle 1 tbsp of oil over base, and bake.

After 5 minutes, remove pizza from oven. Tear buffalo mozzarella into 10 pieces and distribute over pizza. Continue baking until pizza is done.

Drizzle with remaining olive oil, and scatter with basil leaves.

Margherita

Capricciosa

Spread mozzarella cheese over base. Scatter provolone, parmesan and finally blue cheese over pizza. Bake.

Quattro Formaggio (Four Cheese Pizza)

Spread pizza sauce over base, followed by cheese. Drizzle 1 tbsp oil over pizza and bake.

2 minutes before the pizza is done, remove from oven. Drape prosciutto casually around the pizza.

Continue baking until done. Scatter rocket over pizza and drizzle with a little more olive oil.

Scatter remaining ingredients over pizza, taking special care to spread the garlic very well so you don&#039;t have big clumps, and bake.

Cheese &amp; Garlic

Spread mozzarella cheese over base.

Arrange potato slices over pizza, each slice overlapping no more than 1/3 so it will cook through properly.

Sprinkle over the rosemary and salt, and drizzle with the olive oil. Bake for the standard cooking time given. Check with a fork or skewer that the potato is tender. If not fully cooked, cook another 2 minutes.

Potato &amp; Rosemary

Create your own pizza base and top it with your favourite ingredients. This wet dough mix needs the proving time to work, so leave it overnight in a cool place if you can

Simple pizza base

strong white bread flour, plus plenty for rolling

½ tsp dried yeast

tbsp olive oil, plus extra for drizzling

Put the flour, yeast and 1 tsp salt into a large bowl. Stir in 500ml of slightly warm water and the oil. You should end up with a wettish dough that is rough and lumpy. Scrape down the sides of the bowl, cover with a tea towel and if your kitchen is cool keep it out, but if it’s warm put it in the bottom of the fridge. Leave dough to rise for at least 6 hrs or until doubled in size.

When ready to cook, bring the dough to room temperature. Heat the oven to 220C/200C fan/gas 7. Dust 2-4 baking sheets with semolina. Dust the work surface with flour, then divide the dough into 2 or 4 pieces. Knead each piece on the floured surface, incorporating enough flour to stop the dough being sticky.

Roll each piece into a pizza shape and lift onto baking sheets. Leave to rise for 10 mins while you sort toppings (see ideas, below). Top the bases with your chosen ingredients, drizzle with olive oil, sprinkle with salt and bake following the timings for each topping (18 mins for a large pizza or 12 mins for an individual) or until the crust is crisp and the topping is bubbling.

Turn up the heat! This spicy pepperoni pizza gives an even bigger punch using jalapenos.
