Vegan Mac And Cheese Burger Recipe

oz Violife Just Like Cheddar Shreds

coconut milk

5.3 oz macaroni noodles

chives ((chopped))

olive oil

salt and pepper ((to taste))

avocado

red onion ((finely chopped))

coriander

lime ((juiced))

oz tinned beans, drained ((black work well))

3.5 oz cooked brown rice

onion ((grated))

fennel seeds ((crushed))

garlic powder

tsp smoked paprika

breadcrumbs

parsley

Violife Just Like Cheddar

Cook the macaroni according to the packet instructions. Drain and place in a bowl.

Heat the coconut milk in a small pan and add the Violife Just Like Cheddar Shreds and a bit of olive oil, stirring until it becomes a rich, thick sauce. Season with salt and pepper and stir in the pasta. Add chives and set aside.

To make the mac and cheese

Add all ingredients in a bowl and mash well with a fork.

To make the guacamole

Add all the ingredients into a blender and pulse until combined. Divide into four equal parts and shape into burger patties. 

Heat a griddle pan on high heat, drizzle with some olive oil and grill patties for three minutes on each side. Top each pattie with a Violife Just Like Mature Cheddar Slice and remove from heat.

To make the burgers

Cut burger buns in half and spread the base with mayo. Top with lettuce, Violife burger pattie, tomato, a dollop of mac and cheese and pickled onions.Spread the top bun with mustard and cover your burger. Enjoy!

Gluten-Free Chickpea Burger Recipe (Vegan Option)

cauliflower florets (350-400 grams)

(13 ounces) chickpeas, drained

olive oil oil

smoked paprika, divided

garlic

fine kosher salt

green onion

pumpkin seeds (pepitas)

torn parsley

cumin

chili powder

black pepper

flaxseed

gluten free all purpose

Optional Toppings – tomato, lettuce, onion, hummus, aioli

Preheat the oven to 400F. Line a 9&#215;13 baking pan or baking sheet with aluminum foil.

In a small bowl, toss together the cauliflower florets, chickpeas, oil, 1/2 teaspoon smoked paprika, garlic, and pinch of sea salt. 

Spread the cauliflower and chickpeas on the prepared pan. Place in the oven and roast for 18-20 minutes, or until tender but slightly undercooked. Remove and set aside to cool.

Transfer the roasted cauliflower and chickpeas to a food processor and pulse until combined.

Add the chopped green onion and pumpkin seeds to the food processor. Blend until batter is combined but thick and chunky, scraping the sides as needed. 

Add the remaining ingredients; torn parsley, 1 1/2 teaspoons paprika, cumin, chili powder, salt and pepper. Blend until a moldable “burger” batter is formed. (The seeds and herbs will be finely diced at this point, not fully blended.)

Transfer the batter to a large mixing bowl. Add the ground flaxseed and gluten free flour and mix with a large spoon. Place the batter in the fridge to chill for 20 minutes.

Preheat the oven to 400F and line a baking sheet with parchment paper. Set aside. 

Once the batter is chilled, use ⅓ &#8211; ½ cup batter to shape into patties by hand (3 to 4 inches wide). Place the patties on the prepared baking sheet and bake for 10-15 minutes. Carefully flip the burgers and bake an additional 10 minutes or until golden brown and baked through.

Serve the chickpea burgers on buns with optional toppings. Store burgers in an airtight container in the fridge for up to 4 days. When reheating, place burgers in the oven at 350 and reheat until heated through.
