These Air Fryer Plantains are a perfect side dish or snack. Made in the air fryer for a healthier version with much less calories compared to the traditional fried plantains. Vegan, gluten-free, paleo and whole30 approved.

Air Fryer Plantains

Plantains (medium, ripe)

Oil (I used avocado oil)

(optional

Peel &amp; Slice

Using a shark knife, cut the edges of the plantains. Run the knife through the skin of the plantain lengthwise, making sure not to cut the flesh. Peel the skin and discard. Then slice into 1/2&quot; thick pieces diagonally.

Transfer

Spray oil or lightly grease the bottom of the air fryer basket. Line the plantains in the basket in a single layer. Spray some oil and sprinkle salt, if using. (If the plantains are firm, then you can also transfer them to a bowl and mix with oil and salt before lining in the air fryer basket)

Air Fry

Turn on air fryer to 380°. Cook plantain for 10-12 minutes, flipping over half way through.

Serve

Transfer plantain pieces carefully from air fryer basket to a serving plate. Repeat until all the plantain is cooked.

These fried plantains or platanos maduros are very ripe bananas fried in oil until crispy and caramelized. A quick snack or side dish that can be made in under 10 minutes.

Fried Plantains (Platanos Maduros)

yellow plantains (very ripe)

oil,

Begin by peeling the plantains and cutting off both ends. Cut a slit down each plantain and then remove the peel. Slice the plantain into 1/4 inch thick slices. 

Heat some oil in a skillet. Once the oil reaches 325 degrees F, fry the plantains for 2-3 minutes on each side or until golden brown. Keep an eye on them, they tend to burn very quickly. Season with salt, if desired, and enjoy.

Fried Sweet Plantains (15 Minutes!)

Prep the plantains

. Slice the plantains on a bias, at an angle, about 1/2-inch thick (as illustrated in images). Set the sliced plantains aside on a plate/platter or small baking sheet.

Fry the plantains

. Heat the oil in a large non-stick skillet over medium heat. Once the oil is hot and shimmering, add the plantain slices into the skillet- working in batches, careful not to overcrowd. Fry the plantains until golden brown and slightly crisp, about 2-3 minutes on each side. Use a slotted utensil (I like to use a fish spatula) to gently flip the plantains while frying; careful not to handle them too aggressively as they&#8217;re super tender.

If you notice your plantains are browning too quickly, reduce the heat to medium-low. I find 2-3 minutes on each side to achieve perfectly crispy yet nice, tender-in-the-middle plantains. However, you can fry your plantains until they reach your desired level of doneness- just look for them to be caramelized on the outside with a buttery center.

. Set the fried sweet plantains onto a paper towel-lined plate to sop up any excess oil. Season the plantains, if desired. I like to sprinkle them with a mix of cajun seasoning and brown sugar- the perfect savory/sweet combo. Serve plantains immediately as a snack or alongside your favorite main entrees. Enjoy!

Heat ~&frac12;-inch neutral vegetable oil in a large pot over medium until the oil temperature reaches 350-375&deg;F.

When the oil is ready, test a pinwheel to see if it starts to puff up within a few seconds. If it does, cook the chicharrones de harina in batches for 45-60 seconds, stirring frequently.
