Wow. This is an incredible recipe. Thank you so much! I think this is not only the best salmon I have had but it is the best meal I have made in a very long time. The only thing different that I did was add hollandaise sauce dribbled over the salmon.

This was the easiest salmon I’ve ever made and it was the tastiest!  I made it exactly as the recipe states and it was delicious.

I've poached  and grilled the salmon. Love it either way, however think I prefer it poached. Its quick, easy and has a lovely mouth feel. Making it for dinner tonight with a lovely stuffed artichoke i made. Thank you. ( using Dill and lemon)

Recipe video above. Poached Salmon in a coconut lime sauce that tastes like a Thai coconut curry - except it's super quick and easy to make! Even though the salmon is poached, it's well worth searing lightly to brown for the extra flavour on both the salmon and in the sauce.

Poached Salmon in Coconut Lime Sauce

salmon fillets (, 180 grams/6 ounces each preferably skinless (Note 1))

Salt and pepper

tbsp oil (, separated)

garlic (, finely grated)

tsp ginger (, finely grated)

lemongrass (, peeled, finely grated (Note 2))

brown sugar

tsp chilli garlic paste

coconut milk ((Note 2))

tbsp fish sauce ((or soy sauce))

tsp lime zest ((1 lime))

Lime juice (,

Fresh coriander/cilantro leaves (, finely chopped (recommended))

red chillies ((optional))

Vermicelli noodles OR

jasmine rice

Sprinkle both sides of salmon with salt and pepper.

Heat 1 tbsp oil in a non stick pan or well seasoned skillet over medium high heat. Add salmon, skin side up, and sear for just 1 1/2 minutes until golden. Turn salmon and cook the other side just for 1 minute, then remove onto a plate (should still be raw inside).

Turn heat down to medium low and allow skillet to cool.

Heat remaining 1 tbsp oil. Add garlic, ginger and lemongrass. Cook until garlic is light golden ~ 1 minute.

Add sugar and cook for 20 seconds until it becomes a caramel (see video). Then stir in chilli paste.

Add coconut milk and stir, scraping the bottom of the skillet to dissolve any bits stuck on the base into the sauce.

Stir in fish sauce, increase heat to medium. Simmer for 2 minutes.

Place salmon into the sauce, lower heat and simmer gently for 4 minutes, or until just cooked.

Remove salmon, stir in lime zest and juice to taste. Adjust salt to taste with fish sauce.

Serve salmon over noodles or rice. Spoon over sauce, garnish with coriander and chili if using.

Create a poaching liquor of fennel, bay and parsley for your fish, then serve with an Italian 'green sauce'

Easy poached salmon

tsp peppercorn

white wine vinegar

fennel bulb

bay leaves

few parsley stalks (from the bunch used for the salsa verde)

British salmon fillet

garlic clove

anchovy fillets, rinsed if packed in salt

flat-leaf parsley

basil

First make the poaching liquid for the fish. Put the peppercorns, 2 tsp salt, vinegar, fennel, bay leaves and parsley stalks in a saucepan with 2.5 litres of water, and bring to the boil. Boil for 10 mins so all the flavours infuse into the liquid.

Make sure that you choose a roasting tin big enough to hold the salmon fillet. Strain the liquid into the empty tin, bring to the boil on the hob, then add the fish, skin-side down, making sure it is covered in liquid. Scatter around the lemon slices, and simmer gently for 1-2 mins until the fish changes colour completely. Cover the surface with a large piece of foil, turn off the heat and leave to cool completely. The fish will cook as the liquid cools.

To make the salsa verde, put all the ingredients into the bowl of a food processor, then blitz to make a bright, slightly chunky sauce. Season to taste.

Carefully remove the salmon to a serving platter and peel away the skin if you like. Serve with the salsa verde, new potatoes and asparagus.

Easy Citrus Poached Salmon Recipe

chicken broth

orange juice (about 3 oranges)

orange zest

lemon (squeezed)

dill

salt

bay leaf

Optional garnishes 1 each chopped dill and chives

Combine the broth, orange juice, lemon juice, dill, salt, peppercorns and bay leaf in a skillet or pan with tall sides. Bring to a boil. Boil for 2-3 minutes, then reduce to a simmer. Simmer for about 15 minutes, stirring occasionally to allow all of the flavors to come together.

While the broth is coming together, remove the skin for the fish or better yet, have your fish monger remove it for you when it&#39;s purchased.

Slide the salmon into the simmering broth. The broth should come halfway up the sides of the fish. Spoon the sauce over the fish, cover and cook for 5 minutes, baste again and cook for an additional 5 minutes or until the flesh is firm.

Serve warm or chilled, garnish with chopped dill &amp; chives.
