Made with a rotisserie chicken, this hearty white chicken chili is a one-pot meal that you can have on the table in under an hour.

White Chicken Chili

white beans,

low-sodium chicken broth, divided

olive oil

yellow onion, diced

jalapeño pepper, seeded and minced (see note)

poblano peppers, seeded and diced (see note)

garlic cloves,

cumin

coriander

ancho chili powder

Salt

rotisserie chicken, skin removed and shredded (about 4 cups)

corn

lime juice,

cilantro

Sour cream

tortilla chips

cheddar cheese

Lime wedges

In a food processor, blend 1/2 of the beans (1 can) with 1 cup of the chicken broth. Set aside both the puréed beans and the remaining whole beans.

Add the oil to a large pot or Dutch oven and heat it over medium-high heat. Add the onion, jalapeño pepper and poblano peppers and cook, stirring frequently, until soft, 4 to 5 minutes. Add the garlic and cook for one minute more. Add the cumin, coriander and ancho chili powder and continue to cook, stirring frequently, for one minute more to toast the spices. Add the chicken broth, puréed beans and 1/2 teaspoon of salt; bring to a boil. Reduce the heat to low and simmer, uncovered, for 20 minutes.

Stir in the shredded rotisserie chicken, reserved whole beans, corn, and lime juice; bring back to a simmer and cook until everything is heated through, about 5 minutes. Taste and adjust seasoning with more salt and lime juice, if necessary. Stir in the cilantro. (Note that the broth will be somewhat soupy -- that's how it is supposed to be. It thickens the longer it sits; see note below.) Ladle the chili into bowls and serve with sour cream, crushed tortilla chips, and lime wedges.

Note: The seeds and ribs in the peppers hold all of the heat. I don't use them to keep the chili mild and family-friendly, but if you like a spicy chili, save them and stir some in at the end. (If you do touch the seeds, be sure to wash your hands well and avoid touching your eyes.)

Note: The chili thickens as it sits. If you make it ahead of time, you will probably need to add more broth or water to thin it out.

Freezer-Friendly Instructions: The chili can be frozen for up to 3 months. Reheat it on the stovetop over medium-low heat until hot. (The chili will thicken up some when frozen, so you’ll likely need to add some broth when reheating.)

A recipe for grilled stuffed peppers with poblano peppers that are filled with cheddar and mozzarella cheeses, then grilled until nice and melty. So delicious!

Grilled Cheese Stuffed Poblano Peppers Recipe

Heat

Heat grill to medium heat and lightly oil the grates.

Grill Poblanos

Grill the poblano peppers about 10-15 minutes, flipping often, until skins are blackened and charred. Set them into a plastic bag and seal, allowing them to steam and cool.

Peel

Once cooled, peel away the charred skins. They should come away easily. You do not have to achieve a perfect peel.

Slit and Core

Slit each poblano pepper from stem to tip and scoop out the innards.

Stuff with Cheese

Stuff each poblano pepper with 1.5 ounces each of cheddar cheese and mozzarella cheese.

Grill Stuffed Peppers

Set back onto the grill over indirect heat and cook about 6-8 minutes, or until cheese is nice and melted.

Serve

Chiles in Nogada are laborious. They use many ingredients, such as Poblano chiles, plantains, piloncillo and acitrón, that require a proper introduction by themselves or in a simpler dish. Also, Chiles in Nogada look strange. If you are not familiar with them, you see a large green chile overstuffed with an odd looking filling, covered in a pale looking sauce and pomegranate seeds on top. What’s more, they are served lukewarm, which is unexpected.

pineapple (chopped)

plantain (peeled and diced, about 1 1/4)

Bartlett pear (about 1 1/4 cup)

diced Golden Delicious apple (about 1 1/4 cup)

yellow peach (mature but firm, diced, about 1 1/4 cup)

cloves

ceylon cinnamon stick

blonde raisins

silvered almonds (lightly toasted)

pinenuts (lightly toasted)

manzanilla olives

walnuts

heavy cream

milk (more or less to taste)

confectioners' sugar (or more to taste)

white pepper

Dry Sherry (or more to taste)

pomegranate seeds

parsley (optional)

Rinse and char chiles. To char, you can either place them on a baking sheet or pan under the broiler, directly on the grill, hot comal or directly on an open fire flame. In any case, turn every 2 to 3 minutes until they are charred and blistered but not burnt. Place them, while very hot, in a plastic bag. Close bag tightly and cover with a kitchen towel. Let them sweat for 10 to 20 minutes.

Take them out one by one, and peel off the skin in the sink. As you do so, lightly rinse the chile with water. With a knife, make a slit down one side to take out and discard the seeds and membrane. Treat the flesh carefully so it will not tear and keep the stem on. Place them in a container and cover with the water previously simmered with the piloncillo or sugar until well diluted, anywhere from 2 to 24 hours. If it is more than 2 hours, place them in the refrigerator, covered once they have cooled down. Drain and either use or store in the refrigerator. You can prepare them 4 to 5 days ahead up to this point.

To prepare the chiles:

Place the meat already cut into 3 to 4&quot; chunks on the bottom of a cooking pot along with the garlic cloves, 1/4 white onion, carrot, bay leaves, thyme, peppercorns and a teaspoon of salt. Cover with water and place over medium high heat. Simmer for 20 to 25 minutes, until meat is cooked through. Turn off the heat and let the meat and broth cool down. remove the meat with a slotted spoon and chop it finely, reserve. Strain the broth into a container, reserve.

Heat the olive oil in a large deep saute pan over medium high heat. Add the garlic clove and saute for a minute or until it starts becoming fragrant, but don't let it brown. Add the onion and saute for a couple more minutes, until it becomes translucent and soft and starts gaining some color. Pour in the tomato puree and let it season, stirring often, for about 5 to 7 minutes, until it has deepened its color, thickened its consistency and lost its raw flavor.

Incorporate the chopped meat, 2 cups of cooking broth, a teaspoon of salt, mix it all together and let it cook 3 to 4  minutes. Add the chopped acitron, mix with the meat and let it cook for 4 to 5 minutes. Incorporate the chopped plantain, pear, apple, and peach and gently mix it all together, let it cook for a couple minutes. Sprinkle the cumin and ground cloves, making sure you mix those spices well. Place a cinnamon stick in the middle of the pan, cover  with a lid, lower the heat to medium and let it cook for about 8 to 10 minutes.

Uncover, add the raisins, almonds, pine nuts, green olives, mix well and taste for salt. Add more if need be. Turn off the heat. You can make the filling up to 2 days in advance, cool, cover and refrigerate.

To prepare the filling:

Place all ingredients except the Sherry in the blender and puree until smooth. You can make the sauce a couple days in advance, but bring it to out room temperature before using. Mix the Sherry into the sauce up to 2 hours before serving. Add more to taste, but it shouldn&#x27;t have a strong alcohol flavor. If it thickened while in the refrigerator, lighten it up with some milk.

Finally!!!! To assemble Chiles en Nogada: Place the chiles in a serving platter. Stuff each one with about 1/2 cup filling. Close as best you can. Generously spoon walnut or pecan sauce on top to cover chiles entirely and sprinkle with pomegranate seeds and chopped parsley on top.

NOTE: Some cooks batter and fry the chiles before adding the sauce. But that version is much heavier and has become less and less popular over time.

Cool and set the peppers into a plastic bag to steam. This will help loosen the skins. Most times I can just peel the skin right off without steaming.

Peel the charred skin from the roasted poblano peppers and slice them into strips about ¾ inch thick.

Heat a large pan to medium heat and melt the butter.

Add the onion and cook about 5 minutes, until the onion strips are translucent and soften up.

Add the poblano pepper strips and cook another minute, stirring.

Swirl in the crema and stir to incorporate.

Stir in the melty cheese a bit at a time, constantly stirring, until it melts through.

Add the seasonings and stir. Reduce the heat and let the mixture warm for about a minute or so, stirring here and there.

Roasted Poblano Strips in Cream Sauce (Rajas con Crema) - Recipe - Chili Pepper Madness

Corn, Cheese and Chile Verde Tamales

white corn kernels (fresh

evaporated milk

unsalted butter (at room temperature)

dried corn husks (plus more for lining the steamer)

Coarsely puree the corn kernels along with the evaporated milk in a food processor or blender. The mixture should be a bit chunky, not completely smooth.

Combine the butter and sugar in the bowl of a stand mixer fitted with the paddle attachment, and beat at medium speed until very soft and creamy, about 2 minutes. Scrape down the bowl and beaters.

In a medium bowl, combine the masa harina, the baking soda and 1/2 teaspoon of salt.

Reduce the mixer speed to low and alternate adding the ground corn mixture with the masa harina mixture. Once all is incorporated, add 1 teaspoon of vegetable oil, increase the speed to medium and continue beating until completely amalgamated, creamy and fluffy, about 7 to 8 more minutes.

To make the fresh corn masa:

Heat 1 tablespoon of vegetable oil in a skillet or sauté pan over medium heat. Add the onion and cook, stirring often, until it begins to soften, about 3 to 4 minutes. Stir in the sliced roasted Anaheim chiles, sprinkle with 1/2 teaspoon salt, and continue to cook for another 3 to 4 minutes, stirring often, until the onions are very soft and all of the flavors have combined. Remove from the heat and scrape into a bowl.

To make the filling:

Remove about 30 good size corn husks from the package and place in a large bowl of hot water. Soak for a couple of minutes, or until they are pliable, and drain. One by one, lay out a corn husk with the tapering end towards you. If the husks seem thin, layer a second corn husk on top. Leaving a 1 to 1 1/2-inch space at the bottom, a minimum of 1/2 inch space on the sides and a little more than that at the top, spread about 1/4 cup masa into an approximately 2x3-inch rectangle. The masa layer will be a little thicker than 1/4 inch. Place a very generous tablespoon of the Anaheim and onion filling along with a very generous tablespoon of the grated cheese lengthwise down the middle of the masa.

Pick up the two long sides of the corn husk and bring them together (you will see how the masa swaddles the filling) and fold the joined edges to one side, rolling them around the tamal. Fold up the empty tapering end, from the bottom up. This will form a closed bottom and the top will be left open. If the tamale won’t hold, you can tear strips from unused tamale wrappers and tie them around the bottom. Gently press from the bottom to the top to even the filling out, without squeezing too hard.

If not steaming right away, place on a plate or sheet pan, cover with plastic, and refrigerate. You can assemble them a day ahead of steaming. You can also steam them ahead and reheat (see below).

To prepare the tamalera or steamer: Place water in the bottom pan of a steamer, so that water is under the steamer basket or rack, and bring it to a simmer. If you want to be reassured that the water hasn’t all evaporated during the long steaming time, place a penny in it so you can hear it dancing around. Line the steamer with one or two layers of soaked corn husks.

To assemble the tamales:

When you have all tamales ready, place them as vertically as you can in the prepared steamer with the open end on top. If there is space left in the steamer, tuck in some corn husks, so the tamales won’t dance around. Cover with more corn husks, cover tightly with a lid, and steam covered for 1 1/2 hours.  Allow the finished tamales to rest for 10 to 15 minutes. You know the tamales are ready when they come away easily from the husks. They will still be moist, and as they are released from the husks, you will see the moisture, like when you remove good moist muffins from their paper baking cups.

Finished tamales will stay warm for about 2 hours in the steamer. They can be made ahead and stored for several days in the refrigerator, well wrapped. They can also be frozen for months. In either case, reheat in a steamer. For refrigerated tamales, it will take about 20 minutes and about 45 minutes for frozen tamales.

To cook the tamales:

Sonora Cheese Soup

potatoes (about 4 medium, peeled and diced (about 3 cups))

Heat the oil over medium heat in a large, heavy soup pot. When hot, add the potatoes and onions and cook, stirring often, until the onions are soft and translucent, about 4 to 5 minutes. Add the tomato, prepared Anaheim or poblano chiles, and salt, and cook until the ingredients are softened, 4 to 5 minutes more.

Add the chicken broth, bring to a simmer and cook for 10 minutes, or until the potatoes are completely tender and the broth has thickened a bit. Taste and adjust salt. Reduce the heat to medium-low, slowly add the milk and bring back to a gentle simmer. Gradually crumble the cheese into the simmering soup and stir until cheese is completely melted – or serve in bowls with cubes of the cheese in the bowls adding the soup on top. Taste again for salt and serve hot.

Cucharadas de Aceite Sabrosano

Taza de Aceite Sabrosano

queso panela

250 Gr Carne deshebrada

Huevos

Taza de harina

Jitomates asados

¼ de Cebolla

Diente de ajo

Cucharadas de pan molido

Tazas de caldo de pollo

Pizca de mejorana

Pizca de tomillo

Colocar los poblanos a fuego directo hasta que tengan un aspecto de quemado por todos lados. Retirar del fuego y colocar dentro de una bolsa de plástico y cerrar. Dejar que suden por aproximadamente 15 minutos. Retirar los chiles de las bolsas y desprender la piel de cada uno de los chiles.

Hacer una incisión a lo largo del chile y retirar las semillas. Enjuagar y secar los chiles. Tomar dos trozos de queso panela y acomodar en el interior de cada uno de los chiles, pegado hacia las paredes. Agregar la carne deshebrada y cerrar sosteniendo con un palillo. Reservar. Para hacer el caldillo de tomate. Asar los tomates, la cebolla y el ajo en un sartén o plancha. Retirar y licuar. Colar la salsa y poner a un lado. En una olla mediana, colocar el Aceite Sabrosano y agregar la salsa colada. Sazonar con mejorana y tomillo y dejarla por 10 minutos a fuego bajo.

Agregar 3 Cucharadas de pan molido, mezclar, agregar el caldo de pollo y hervir por 15 minutos a fuego medio/bajo revolviendo ocasionalmente. Reservar. Calentar el resto del aceite Sabrosano en un sartén grande.  Mientras tanto, batir las claras a punto de nieve y agregar las yemas una a una. Batir unos minutos más. Pasar los chiles ya rellenos de queso por la harina, luego por el huevo batido y freírlos en le sartén caliente. Escurrir el exceso de aceite con un papel de cocina.

Sumergir los chiles ya capeados en el caldo de tomate y hervir por dos minutos.
