Chicken stew with corn (pollo guisado) is one of my favorite comfort foods, and my whole family loves it. I made this three times the past two weeks, that's how good this was!

cilantro (plus 1 tbsp for garnish)

Pressure Cooker Stewed Chicken with Corn (Pollo Guisado con Maiz)

Season chicken with salt and garlic powder.

Saute the onions, scallions, tomato and garlic in olive oil until soft, 2 to 3 minutes. Add 1/4 cup cilantro and stir 1 minute. Add tomato sauce, water, Bouillon, cumin and stir. Place the chicken in the sauce. Top with corn, cover and cook on high pressure 20 minutes. Natural release and top with remaining cilantro.

To make on the stove, simmer low covered 40 minutes adding the corn the last 5 minutes.

Instant Pot Latin Chicken Stew (Pollo Guisado) is a family favorite! Nothing fancy, but it's total comfort food to me! Serve it over rice or cauliflower rice!

Instant Pot Latin Chicken Stew (Pollo Guisado)

Pollo Guisado or Latin Chicken Stew is a hearty braised chicken stew popular in Caribbean, Central and South American cuisines, with loads of flavor and so easy to make!

Pollo Guisado or Latin Chicken Stew

chicken drumsticks (on the bone, 14 oz total)

chicken thighs (on the bone, trimmed, 20 ounces)

adobo seasoning salt

scallions

garlic

cilantro (plus 2 tbsp for garnish)

sazon seasoning (optional)

green olives (plus 2 tablespoons brine)

Chicken Better Than Bouillon (or 1 cube)

bay leaves

Season chicken with adobo seasoning salt.

In a large deep skillet,  pot or Dutch oven, over medium heat saute the scallions in olive oil until soft, 2 to 3 minutes.

Add the garlic and 1/4 cup cilantro cook until soft, 1 to 2 minutes until fragrant.

Nestle the chicken in the pot and let brown 5 minutes, turning halfway.

Add tomato sauce, Sazon if using, 1 cup water, olive, olive brine, Bouillon, cumin and stir. Add the bay leaves and bring to a boil.

Cover and cook 50 minutes over medium-low heat, until the chicken is tender.

Uncover the pot, increase the heat to high and cook to thicken the sauce, about 5 to 10 minutes.

Remove the bay leaves, adjust salt if needed and add the remaining 2 tablespoons cilantro.

Cook on high pressure 20 minutes.

Natural release, discard bay leaves and top with remaining cilantro.

Dry the chicken thighs thoroughly with paper towels. Cut into 2-inch cubes. Season with Adobo.

Set a Dutch oven over medium-high heat. Add the oil. Once it has warmed, add the chicken in one layer and brown.

Once the chicken has browned, remove it from the pot and set it aside. Add the onion to the pot, and cook until translucent, about 2 minutes. Add the garlic and cook until fragrant, about 1 minute.

Add the sofrito and tomato sauce. Cook for 2 to 3 minutes until it is thick and bubbly.

Add the sazón, bay leaves, oregano, olives, potatoes, carrots, and chicken broth. Bring the mixture to a boil.

Add the chicken back into the pot. Lower the heat, cover the pot, and simmer for 40-50 minutes until the chicken is cooked through.

Take the stew off the heat, sample it, and add salt and pepper to taste. Remove the bay leaves before serving.
