Cut chicken to tiny bite sized pieces. Make sure you cut them to uniform sizes as this helps to fry all of them uniformly.

In a bowl, mix together seasoning and chicken. Sprinkle cornstarch and coat the chicken well.

Pour the egg white to a small bowl and then the bread crumbs to another bowl. Place them side by side.

Pick up each piece of chicken &amp; dip in the egg or buttermilk. Remove and roll in the bread crumbs. Place them in a wide plate. Repeat the same step until all the chicken bites are breaded.

For extra crunch you can also double coat the chicken pieces by dipping in egg mixture again and then rolling them in bread crumbs again.

Rest for 10 to 15 mins for the bread crumbs to stick well to the pieces. If you have used buttermilk then it is good to rest them at least for an hour. You can also refrigerate up to 48 hours for further use.

Heat oil on a medium flame.&nbsp;

When the oil is hot enough, check by dropping a small piece of bread crumb. It has to rise without browning a lot. 350 to 375 F is the right temperature if you are measuring.

Gently slide the pieces one after the other to the oil. Do not stir or disturb them for about a minute otherwise the bread crumbs may disperse in oil.

Do not crowd the pan with many chicken bites at one time. Fry popcorn chicken in batches.

Deep fry evenly till golden on a medium flame. Keep stirring after a minute or two for even frying.

Drain popcorn chicken on a kitchen tissue and serve hot with ketchup, sauce or any other dip.

Place the chicken pieces and 2 tablespoons hot sauce in a bowl and stir to thoroughly combine. Set aside.

Place the 1/2 cup flour/cornstarch mixture in a shallow bowl and set aside.

Combine the 2 cups of flour, baking powder, salt, sugar, garlic powder and onion powder in a large mixing bowl and whisk in the buttermilk and water until no lumps remain. Add the 4 tablespoons of hot sauce and the vinegar and stir to combine.

Pour some oil into a small skillet to at least 1/2 inch depth. Using a candy thermometer, heat the oil to 365ºF.

Dredge the chicken pieces into the 1/2 cup of flour/cornstarch, shake off the excess, then dip the pieces into the wet batter. Immediately place the chicken pieces carefully into the hot oil and fry on all sides until golden brown and cooked through, about 2 minutes on each side. Work in batches and be careful not to overcrowd the pan. Use a slotted spoon to transfer the chicken pieces to a plate lined with paper towels to drain for 1 minute.

Serve immediately with blue cheese dressing and celery sticks.

Crunchy Taiwanese Popcorn Chicken Recipe

garlic (minced)

tbsp shaoxing wine (Chinese rice wine)

sweet potato starch (or cornstarch)

20-25 Thai basil leaves

In a mixing bowl, combine chicken pieces, garlic, white pepper, five spice powder, sugar, soy sauce, shaoxing wine, salt, egg white, and 4 tablespoons of sweet potato starch. Mix well and marinate for at least 30 minutes to overnight for a better flavor.

Put 1 cup of extra sweet potato starch in a large bowl. Add a batch of marinated chicken pieces and coat with the extra starch. Put the chicken pieces in a plate and let sit for 5 minutes. You will see the starch form small beads on the surface as it clings to the chicken.

Heat up a wok of oil on medium heat and fry Thai basil leaves. Watch out for the oil splash. Deep fry for about 10-15 seconds until the leaves are crisp, but still retain their green color. Transfer basil to a wired rack.

First deep-fry: Drop pieces of chicken (one small batch at a time) into hot oil and fry them until lightly golden, about 3-4 minutes. Remove the pieces and transfer to a wired rack. Repeat with the rest of the chicken.

Second deep-fry: Raise the heat to medium high. Add a batch of fried chicken pieces to the hot oil again and fry them until they turn deep golden brown and crisp, about 2-3 minutes. Remove the pieces and return them to the wired rack. Repeat with the rest of the chicken.

To make spice seasoning mix, mix together salt, paprika, chili powder, white pepper, and garlic powder in a small bowl.

Put popcorn chicken in a large bowl along with Thai basil. Sprinkle some of the spice seasoning mix (as much as you desire) and toss it all together. Serve immediately.

Heat oven to 220C/200C fan/gas 7. Place the chicken thigh fillets between 2 pieces of cling film and bash with a rolling pin to about 1cm thick. Cut the chicken into bite-sized pieces.

Put the flour, eggs and breadcrumbs on 3 separate plates. Season the flour, then toss the chicken pieces in it to coat, followed by the egg and finishing with a coating of breadcrumbs.

Put the breadcrumbed chicken on a baking sheet and cook for 10-12 mins.

Meanwhile, in a small pan, melt the butter, then stir in the garlic and cook for 3-4 mins until it is softened. Turn down the heat, whisk in the crème fraîche and most of the parsley and season to taste. Serve the sauce in a small pot on the side, to dip into, sprinkle the remaining parsley over the sauce, and serve with salad leaves and skinny fries, if you like.

Cut the thighs into bite-sized pieces, roughly 3cm x 3cm (1" x 1").

Marinate them in the five spice powder, chicken bouillon powder, salt, sugar, grated ginger, finely chopped garlic, onion powder, corn starch, egg white, Shaoxing wine, light soy sauce, pepper and mashed fermented tofu for at least 20 minutes.

Toast the white and Sichuan peppercorns on low-medium heat until slightly brown.

Use a spice grinder to grind the peppercorns into a powder. Alternatively, use a mortar and pestle.

Combine the ground peppercorns with the five spice powder, paprika and salt.

Mix the potato starch and baking powder together, then coat the cut pieces in the batter. Use a colander to shake away any excess starch.

Heat up a wok of oil on medium heat and fry the coated pieces for 5 minutes or until golden.

Remove the pieces and let it drip dry in a sieve. Turn the heat up to high and double fry them for another 2 minutes.

Just before the chicken is ready, toss in the Thai basil leaves and let them fry for 2 minutes or until crispy. Scoop the chicken and leaves out into a large sieve or colander.

Put a serving of Taiwanese Popcorn Chicken into a platter along with some Thai basil. Add some of the spice mix in and toss all together until the pieces are evenly coated.

Air Fryer Popcorn Chicken

Add oil to a medium skillet over medium low heat. Add the panko and ½ teaspoon salt.

Toast panko for about 4 minutes or until just golden, stirring every 30 seconds to evenly brown.  Transfer crumbs to a plate.

Cut chicken into ¾-inch cubes (about the size of a small dice), season with ¼ teaspoon salt and pepper, to taste, then set up your dredging station. You should have about 60 cubes.

Place flour and ¼ teaspoon salt on a large plate.

Place egg in a bowl, add 1 teaspoon water and beat until uniform.

Add the garlic powder, onion powder, oregano and cayenne (if using) and black pepper, to taste, to the toasted panko and place the plate on the other side of the egg bowl.

Working with about 15 pieces at a time, dredge in flour, lightly coating all sides.

Then, egg, allowing excess to drip off (I like to use tongs and wipe the excess off on the side of the bowl).  Next add the pieces to the panko mixture and coat all sides evenly, pressing crumbs to make sure they adhere evenly. Repeat with remaining pieces.

Preheat air fryer to 400 degrees F.  Spray the basket with olive oil.

Add about 30 pieces to the air fryer basket, making sure to leave space between each piece so they get crispy. Spray the top with oil.

Cook for 5 minutes, shaking the basket halfway through cook time.  Serve immediately.
