Strawberry Avocado Salad

/ 6 oz baby spinach

onion

/ 12 oz ripe strawberries (, sliced (Note 1))

avocados (, quartered and sliced (Note 2))

feta (, crumbled)

tbsp (15 grams) butter, unsalted

tbsp white sugar

pecans (, roughly chopped)

tbsp eschallots ((French onion), very finely chopped)

2.5 tbsp white wine vinegar

olive oil

mayonnaise

tbsp poppyseeds

salt

tsp black pepper

Place Dressing ingredients in a jar and shake well. Set aside for 10 minutes+ (keeps for a week).

Place butter and sugar in a non stick skillet over medium high. When butter is melted, add nuts.&nbsp;

Stir 5 minutes - sugar will go sandy, then eventually melt into a caramel.

Once sugar melts, cook for 2 minutes then spread pecans out on tray.

Cool then break to separate.

Candied Pecans:

Place spinach and onion in a bowl, drizzle with about 3 tbsp Dressing, toss.

Transfer 1/3 spinach in a bowl. Scatter over 1/3 of each strawberries, avocado, feta, pecans. Drizzle with a bit of dressing.

Top with another 1/3 spinach, strawberries, avocado, feta, pecans, then a bit more Dressing. Repeat once more.

Serve immediately!

Crunchy Cabbage and Kale Salad

kale (thinly sliced)

cabbage (thinly sliced)

carrot

brussel sprouts (stems removed, thinly sliced)

cranberries

pecans (roughly chopped)

pancetta (diced)

feta cheese

lemon

apple (I used granny smith, sliced)

+ 1/2 teaspoon sugar

white wine vinegar

dry mustard

onion (grated)

+ 2 teaspoons vegetable

poppy seeds

Preheat oven to 300 degrees.

Place pecans on a baking sheet and bake until golden brown and fragrant, about 10 minutes.  Set aside.

Heat a small skillet over medium high heat.  Add pancetta and cook until golden brown.  With a slotted spoon transfer pancetta to a plate lined with paper towels.

In a small bowl add the sugar, vinegar, dry mustard, kosher salt, oil, grated onions, lemon zest and poppy seeds.  Stir to combine.

In a large bowl, combine the kale, cabbage, brussel sprouts, carrot and cranberries.  Add the lemon juice to the salad and toss to combine.  Add pecans, pancetta and feta cheese.  Dress the salad with enough salad dressing to evenly coat the greens, but don't overdo it.  If there's leftover dressing, save it for another salad. Divide the salads among plates and tuck several slices of apple into one side of the salad. &nbsp;Serve.

This Mixed Green Salad with Berries is to DIE for! A bed of mixed green lettuce topped with strawberries, blueberries, raspberries, candied pecans, feta cheese and a creamy poppyseed dressing.&nbsp;

sweet apple (, chopped)

pecans

feta cheese crumbles

container strawberry yogurt

Tablespoons milk

Tablespoons sugar

Tablespoons apple cider vinegar

Add all of the dressing ingredients to a blender and blend until smooth.&nbsp;

Taste. Add additional vinegar if you want it tangier, more sugar if you like it sweeter, or a dab more mayo and splash of milk if you want it creamier.&nbsp;

Stir in poppy seeds. Store dressing in the fridge for up to 2 weeks.

Make candied pecans.&nbsp;

Prepare, wash and dry berries, and chop the apple and onion. Add greens to a large mixing bowl. Add toppings (I like to set aside a spoonful of each topping to add at the end, for aesthetics.)&nbsp;

Toss the mixture in desired amount of dressing. Serve immediately.&nbsp;&nbsp;

Salt

In a small bowl with a whisk, or in a jar with a tight-fitting lid, add the vegetable oil, red wine vinegar, sugar, dried mustard, poppy seeds, and salt to taste (I like 1 teaspoon).

Shake or stir to combine. If you’re making a salad right away, keep the dressing out at room temperature to let the flavors mingle while preparing the salad. Or refrigerate for up to 4 days.

Grilled Chicken Strawberry Poppyseed Salad

Place the chicken in a baking dish or a resealable bag. In a small bowl, whisk together the olive oil, balsamic vinegar, garlic, salt and pepper. Pour it over the chicken and toss to coat. Marinate for at least 30 minutes or even overnight.

Heat your grill to medium-high heat. Grill the chicken for 5 to 6 minutes per side. Let it rest for a few minutes before slicing it thinly.

Grilled chicken

In a large bowl, toss the butter lettuce with a pinch of salt and pepper. Add the strawberries, pineapple, blueberries, and oranges and toss well. Add the chicken and pecans on top, and drizzle on the dressing to serve.

Fruit Vegetable Mix

Combine the vinegar, orange juice, lime juice, honey, shallot, garlic, mustard powder, salt, and pepper in a food processor and blend until combined. With the processor on, stream in the olive oil until the dressing is emulsified and comes together. Stir in the poppy seeds with a spoon and serve. This stays great in the fridge for a few days!
