For an easy dinner recipe that comes together in one dish try this dump and bake pork chop casserole. It's full of flavor and made with simple pantry staples!

Dump-and-Bake Pork Chop Casserole with Broccoli and Wild Rice

rice

chicken broth

broccoli

diced onion (or about ½ of a small fresh onion, diced)

butter

pork

Parmesan cheese

mozzarella cheese

Preheat oven to 350F (180).

Spray an 8- or 9-inch square baking dish with cooking spray. Place uncooked rice in the prepared dish.

Add broth and seasoning packet, whisking until combined. Stir in broccoli florets and diced onion.

Place butter on rice. Add pork chops on top, season with salt and pepper, to taste.

Cover dish tightly with foil.

Bake for 1 hour, or until rice is tender and pork is cooked through. Fluff the rice with a fork.

Switch oven to BROIL on high.

Sprinkle top of pork chops with Parmesan and add shredded mozzarella over all. Place casserole under the broiler (uncovered) for about 3-5 minutes, or until cheese is melted and golden brown on top.

Pulled Pork Rice Bowls

potato

olive oil

taco seasoning (or you can simply season with salt and pepper to taste)

rice (you'll need about 2 cups of cooked rice for these bowls)

avocado (halved, pitted, peeled and diced or sliced)

black beans

corn kernels

cheddar cheese

tomatoes (halved)

crispy tortilla strips (or crushed tortilla chips)

pickled red onion

Barbecue sauce (to taste)

Preheat oven to 400 degrees Fahrenheit. Place sweet potato chunks into a large bowl and add olive oil and taco seasoning. Stir well so that the sweet potato chunks are coated in the oil and taco seasoning. Place the sweet potato chunks onto a large sheet pan and spread them out in a single layer. Roast for 30 to 40 minutes or until tender, stirring halfway through cooking.Note: To save time, you can skip roasting the sweet potato chunks and use about 1 cup of diced bell pepper instead.

While the sweet potato chunks are roasting, cook rice according to package instructions. Then divide the cooked rice between two large bowls (I like to use bowls that are wide, so I can pile lots of toppings on there).

Divide the cooked pulled pork, roasted sweet potato chunks, avocado, black beans, corn, cheddar cheese, tomatoes, tortilla strips and pickled red onion between the two bowls, then drizzle with your favourite barbecue sauce. Serve and enjoy!

Oooo...what a great idea!  I always keep pulled pork in the freezer, so that means I'm always looking for fun ways to use it.  This sounds fantastic...and those sweet potatoes with BBQ sauce!?  That could be a side dish by itself!!

This Vietnamese Caramelized Pork is a great mince pork stir fry recipe that you should try. It&#039;s so flavorful and can be done at your dinner table in less than 30 minutes. It&#039;s definitely tastier and faster than any Asian take-out.

Vietnamese Caramelized Pork Bowls

pork mince ((ground pork))

neutral oil ((divided)

ginger

garlic

red chili pepper

shallots ((lightly packed))

brown sugar ((or add more

Vietnamese fish sauce

lime

scallions

salt and black pepper ((to taste))

Heat 1½ tablespoons of oil in a large skillet over high heat. Add pork and cook undisturbed for 1 minute. Add a pinch of salt and black pepper then cook for 4 minutes or until brown. Transfer the pork to a colander to remove the excess liquid and fat. Drain and set aside.

Heat 1½ tablespoons of oil in a large skillet over high heat. Add shallots, cook for 1 minute, then add ginger and chili and cook for 1 minute. Add garlic and cook for about 15 seconds. Keep stirring.

Add the browned pork back into the pot and stir. Add fish sauce and brown sugar. Stir then let it cook undisturbed to caramelize for about 1 minute. Stir again for a few seconds and let it cook undisturbed for another 1 minute. Gently scrape up the brown bits from the bottom of the pan to prevent burning. Repeat this process if necessary or until you reach the desired consistency or crispiness. The pork meat should turn golden brown with caramelized flavors. Do not overcook to prevent burnt taste and dry meat. Add salt and pepper if necessary.

Add chopped scallions, lime zest, and lime juice. Give it a quick stir for a few seconds, then turn off the heat. Serve with white rice or lettuce and more lime juice if desired. Enjoy!

This was so delicious. I realized I forgot the ginger after it was devoured, so will definitely make again. Next time with ginger!

I make this often as it's a family favorite. I use red onion instead of shallots, add chopped red bell pepper, and some hot fried chili paste.  I often double the recipe and squeeze half of a lime over it.

I’ve made this 7 or 8 times now. My favorite fish sauce is the Vietnamese one “Red Boat”. I like mine more caramalized and pretty much double the times given for the meat before and after the sauce.  Tonight I gambled (and succeeded) at tripling the recipe. And I made it on the griddle outside. Awesome recipe!

This was delicious and so quick and easy to put together. I added small dice carrots, celery, and daikon. I used a teaspoon of sambas oelek in lieu of the hot pepper, and ground ginger instead of fresh. Don’t skip the lime zest or juice. Served it with Momofuku soy &amp; scallion package noodles with the added sauce. This recipe will be a regular in my house. Everyone said it was delicious and empty bowls were the proof.

Loved this! Added some fresh thinly sliced cabbage at the very end just to use it up,  added for some extra crunch. Delicious!
