Air Fryer Pork Belly Bites (Only 3 Ingredients)

Cut Pieces

Cut pork belly into 2 inch pieces. Season them generously with salt and pepper.

Prep Air Fryer

Place pork belly in one layer in an air fryer basket.

Air Fry

Air Fry at 400°F for 20 minutes, turn them every 5-7 minutes to ensure that all the sides are evenly cooked.

Smoked Pork Belly Burnt Ends Recipe

extra virgin olive oil

dry rub, (see notes for our favorite)

unsalted butter

honey

Prepare Smoker

Preheat smoker to 225 – 250 degrees using fruit wood (we used cherry for color and sweeter flavor)

Trim, Cube, and Season

Trim excess skin and fat off the pork belly and slice into 2 inch cubes and place into a large bowl. Add olive oil and dry rub liberally and then place cubes onto a wire rack or directly on the smoker.

Smoke

Smoke uncovered for three hours. Look for a darker red color and a modest bark develop.

Sauce and Wrap

Remove the pork belly cubes from the smoker and place into a foil pan and then add your BBQ sauce, butter, and honey, and stir. Next cover the pan with aluminum foil and place back on the smoker.

Cook for an additional 90 minutes or until the internal temperature (IT) is roughly 200 – 203 degrees Fahrenheit.

Uncover

Remove the foil, close the lid to the smoker, and smoke for another 15 minutes to let the sauce thicken up.

Pan-fried pork belly bites, this must be the quickest pork belly recipe there is. Addictive, sweet, and sticky pork pieces perfect for serving as an appetizer or a main meal.

Quick Pork Belly Bites

fine sea salt (or Kosher)

thumb-size piece of fresh ginger (grated)

garlic

soy sauce

cider vinegar

red chili flakes (to taste)

green onion (thinly sliced)

Season

Season: Remove the skin. Cut the pork belly into cubes. Place in a bowl, sprinkle with salt and pepper and rub to season all over.

Cook

Cook: Heat a large cast-iron skillet or heavy-bottomed pan on high heat (Note 1). Fry the pork cubes for 5 minutes on each side. When flipping, reduce the heat to medium-high. If the meat gets too brown, reduce heat to medium (Note 2). Remove the cubes with a slotted spoon. Then, carefully, discard the fat accumulated in the pan. (Be careful: a cast-iron pan is very hot and very heavy).

Sauce

Sauce: While the meat cooks, make the sauce. Grate the ginger and the garlic, place in a small bowl. Add honey, soy sauce, cider vinegar, and chili. Stir well to combine.

Mix: Return the pork belly bites to the pan. Pour the sauce over them. Stir continuously for 2-3 minutes on medium-low heat until the pieces are glossy and coated and the sauce reduces.

Garnish

Garnish: Serve immediately sprinkled with green onions.

With the lid closed, preheat your pellet grill or smoker to 275ºF with cherry, apple, or another fruit wood in the hopper. Place a cooling rack over a rimmed half sheet pan and set aside.

While it is preheating, toss the pork belly cubes with enough dry rub to coat them completely on all sides. Arrange the cubes on the cooling rack, being sure to leave space between the cubes so that smoke can circulate around them freely.

Spritzing the pork cubes with apple juice if they start to look dry, smoke them for about 2 hours, or until the internal temperature of the cubes is 190ºF to 195F.

Transfer the bites to a disposable foil pan, scatter the brown sugar evenly over the bites and dot with butter. Drizzle with the honey and whatever apple juice you didn&#39;t spritz on the pork belly while smoking it.

Cover with foil and return to the smoker for about 1 ½ hours, or until the pork belly cubes reach an internal temperature of 200-205ºF.

Drain the liquid off of the pork, toss with a little barbecue sauce (just to coat), and return the pan -uncovered- to the smoker for 10-15 minutes to allow the sauce to set up around the pork cubes. Serve hot or warm.

To Make on a Pellet Grill or Smoker:

Preheat your oven to 275ºF. Place a cooling rack over a rimmed half sheet pan and set aside.

To Cook Pork Belly Burnt Ends in the Oven

Store leftovers in a tightly covered container in the refrigerator for up to 4 days. You can freeze leftovers for up to 1 month. TO REHEAT: lay them out in a single layer on a foil or parchment lined pan and heat in a 350ºF oven for 5 to 10 minutes or in a 375ºF air fryer for 4 minutes.
