Still a relatively cheap cut, pork belly yields beautiful soft flesh and crisp crackling when slow-roasted.

Three-hour pork belly

fennel seeds

1.5-2kg/3lb 5 ounces-4lb 8 ounces piece boneless pork belly, skin scored

lemons

Toast 2 tbsp fennel seeds and 1 tsp black peppercorns in a dry <a href="https://www.bbcgoodfood.com/content/top-five-non-stick-frying-pans">frying pan</a> for a couple of mins. Pound them together in a <a href="https://www.bbcgoodfood.com/content/top-five-mortar-and-pestles">pestle and mortar</a> with some flaked sea salt, the leaves from 1 small bunch of thyme and 3 garlic cloves to make a paste.

Mix with 2 tbsp olive oil and rub all over the flesh of a 1½ - 2kg piece of boneless pork belly. Cover and chill, leaving to marinate for a few hours or overnight.

When ready to cook, rub the skin of the joint with plenty of salt and 1 tbsp more olive oil. Sit on a <a href="https://www.bbcgoodfood.com/content/kimberley-wilsons-top-five-cooling-racks">wire rack</a> in a <a href="https://www.bbcgoodfood.com/review/test-five-best-roasting-tins">roasting tin</a> and roast at 200C/180C fan/gas 6 for 30 mins.

After this time, squeeze 2 lemons over the skin and turn the heat down to 180C/ 160C fan/gas 4. Roast for a further 2 hrs.

Finally, turn the heat back up to 220C/ 200C fan/gas 7 and give it a final blast for another 30 mins or so, to finish the crackling.

Allow to rest somewhere warm for 20 mins. <a href="https://www.bbcgoodfood.com/content/top-five-cooks-knives">Carve up</a> into chunks or slices and serve with the braised cabbage (below) and bay-infused potatoes (see 'goes well with').

Preheat smoker to 275 degrees Fahrenheit (F) using apple or cherry wood.

Trim excess fat off of pork belly so it is uniform in shape and no excess fat or meat is hanging off the belly. Place pork belly fat/skin side down on the board so flesh is facing you.

Make 1-inch vertical slices in the pork belly, taking care not to cut all the way through. Cut about 2/3&#x27;s through the flesh.

Coat both sides of the pork belly with olive oil and the dry rub. Rub the dry rub into the ridges created by the vertical slices.

Place into the smoker and smoke for 2 hours or until the internal temperature of the pork reaches 200 degrees F using an instant read thermometer. When the probe goes into the belly it should slide in easily. That is when you remove from the smoker.

Prepare the grill for direct grilling, targeting 450 - 500 degrees F over the flame. Place the pork belly over direct heat and grill each side for 2 minutes. Be sure to close the lid between flipping to avoid too much air causing flare ups, the fat from the belly will drip into the flame.

Remove the belly from the grill and finish slicing the vertical slices. Apply sauce and serve as small long strips for a meal, or cut into cubes for an appetizer.

In a medium size bowl, combine Hoisin sauce, Thai chili sauce, lime juice, and graded fresh ginger. Stir to incorporate.

Smoked Pork Belly Burnt Ends Recipe

Prepare Smoker

Preheat smoker to 225 – 250 degrees using fruit wood (we used cherry for color and sweeter flavor)

Trim, Cube, and Season

Trim excess skin and fat off the pork belly and slice into 2 inch cubes and place into a large bowl. Add olive oil and dry rub liberally and then place cubes onto a wire rack or directly on the smoker.

Smoke

Smoke uncovered for three hours. Look for a darker red color and a modest bark develop.

Sauce and Wrap

Remove the pork belly cubes from the smoker and place into a foil pan and then add your BBQ sauce, butter, and honey, and stir. Next cover the pan with aluminum foil and place back on the smoker.

Cook for an additional 90 minutes or until the internal temperature (IT) is roughly 200 – 203 degrees Fahrenheit.

Uncover

Remove the foil, close the lid to the smoker, and smoke for another 15 minutes to let the sauce thicken up.

Quick Pork Belly Bites

Season

Season: Remove the skin. Cut the pork belly into cubes. Place in a bowl, sprinkle with salt and pepper and rub to season all over.

Cook

Cook: Heat a large cast-iron skillet or heavy-bottomed pan on high heat (Note 1). Fry the pork cubes for 5 minutes on each side. When flipping, reduce the heat to medium-high. If the meat gets too brown, reduce heat to medium (Note 2). Remove the cubes with a slotted spoon. Then, carefully, discard the fat accumulated in the pan. (Be careful: a cast-iron pan is very hot and very heavy).

Sauce

Sauce: While the meat cooks, make the sauce. Grate the ginger and the garlic, place in a small bowl. Add honey, soy sauce, cider vinegar, and chili. Stir well to combine.

Mix: Return the pork belly bites to the pan. Pour the sauce over them. Stir continuously for 2-3 minutes on medium-low heat until the pieces are glossy and coated and the sauce reduces.

Garnish

Garnish: Serve immediately sprinkled with green onions.

Most British recipes for Boston baked beans just use a piece of pork belly, but we think it needs some salted or smoked meat to counteract the sweetness, so we include bacon or pancetta. We’ve based the recipe on one our mothers used to make – when they weren’t opening a tin. The alcohol isn’t authentic, but adds flavour (we’ve tried all three). 

This takes a long time to cook, but once it’s in the oven there’s nothing more to do. It makes quite a large amount and can be reheated the next day for your breakfast, brunch, lunch or supper. We think it makes the most wonderful cooked breakfast or side dish with sausages.
