Tender and flavorful pork Carnitas can be made in the oven, slow cooker or instant pot and are veratile to serve with tacos, burritos, quesadillas and more!

pork shoulder

Tablespoons chili powder

cumin

oregano leaves

salt (or more, to taste)

black pepper

garlic (, minced)

onions (roughly chopped)

juice oranges

juice limes

Trim and discard excess fat from the pork.

In a small bowl, combine chili powder, cumin, oregano, salt and pepper. Generously season the pork on all sides. 

Add the seasoned pork to the bottom of the slow cooker. Add garlic, chopped onions, orange juice, and lime juice.&nbsp;

Cover and cook on LOW for 7-8 hours or high for 4-5 hours.

Remove pork from the slow cooker, shred the meat, and return it to the pot. Taste and add more seasonings and salt and pepper, if needed. 

At this point you can eat the pork as it, or (to be truly authentic) you can place the meat on a baking sheet and broil it for 2-3 minutes until the edges are crispy. 

For tacos, serve warm inside corn tortillas, garnished with cilantro. Add salsa or pico if desired.

Serve with a side of authentic Mexican rice and refried beans. 

Store leftovers in an airtight container in the refrigerator for 3-5 days.

Quick Pork Carnitas Tacos

pork

salt, (to taste)

black pepper, (to taste)

avocado oil, (or olive oil)

yellow onion, (finely diced)

garlic, (minced)

brown sugar

oregano

ancho chili powder

orange juice

lime, (juiced)

flour tortillas, (for tacos)

avocado

pico de gallo

cilantro, (for garnish)

Cut up the pork tenderloin into small bite-sized pieces and season with salt and pepper; set aside.

Heat oil in a large skillet set over medium-high heat. Add diced onions to the heated oil and cook for 2 minutes. Stir in garlic and cook for 15 seconds or just until fragrant.

Add the pork to the skillet; season with brown sugar, oregano, chili powder, and cumin. Cook, stirring frequently, for about 10 minutes or until pork is cooked through.

Stir in orange juice; continue to stir and scrape up the browned bits from the bottom of the pan. Add lime juice and continue to cook for 2 more minutes.

Remove from heat. Taste for salt and pepper and adjust accordingly.

Serve in tacos, burritos, over rice, and/or on salads.
