Tear bread into pieces, then process to make fine crumbs. Transfer to a large bowl. Pick leaves from parsley, then finely chop half, reserving remaining leaves. Grate 1 apple, then cut remaining apple into matchsticks.

Add pork, grated apple, chopped parsley, egg and 1 garlic clove to crumbs and mix. Using damp hands, shape mixture into eight equal patties. Flatten. Spray with oil. Heat a large non-stick frying pan over medium-high heat. Cook patties for 5 minutes each side or until cooked.

Spray onion with oil. Heat a medium saucepan over medium heat. Add onion and remaining garlic and cook, stirring, for 2 minutes or until softened. Add beans and cook for 1 minute or until combined. Add stock and  cup water and bring to the boil. Reduce heat and simmer for 3 minutes. Remove from heat. Season. Process until smooth.

Toss remaining parsley, rocket and apple matchsticks in a large bowl. Spoon purée onto plates. Top with patties. Serve patties with rocket salad and lemon wedges.

Slice off the stem of eggplant. Using a mandolin slicerslice into ¼-inch-thick slices. You should have about 12 slices.

Heat oil in large skillet over medium-low heat. Add tomatoes with juicetomato paste and bouillon. Cookstirring frequentlyfor about 5 minutes or until mixture is thickened. Stir in evaporated milk½ teaspoon oregano and sugar. Cook for 1 minute. Remove from heat.

Spread 2 tablespoons of sauce in an oven-safe dish.

Arrange half of the eggplant slices in one layer on bottom of dish. Top with ½ cup sauce. Sprinkle with half of the chorizo and 1/3 cup cheese. Repeat layers by placing remaining slices over first layer. Top with remaining saucechorizo and cheese.

Bake for 20 minutes. Remove from oven; sprinkle with remaining ½ teaspoon oregano and serve.

all-purpose flour

Melt 3 tablespoons butter over medium heat in medium saucepan. Add mushrooms; cookstirring occasionallyfor 6 to 8 minutes or until tender and golden.Add ham; stir for 1 minute. Remove from heat.

Melt remaining 3 tablespoons butter over medium heat in large saucepan or skillet.Add flourstirring constantlyuntil mixture turns light brown in color.With wire whiskslowly add evaporated milk and warm beef brothwhisking constantly.Bring to a boil.Cook for 6 to 8 minutes or until smooth and slightly thickened (mixture coats back of spoon).Remove from heat.Stir in cheese.Stir in peppercinnamonnutmegreserved mushroom mixture and nuts.

Pour sauce over hot pasta.Sprinkle with parsley.

Pat dry pork belly skin with a kitchen towel. Take a metal skewer or sharp toothpick and poke small holes all over the skin. Spend a good 10 minutes or so doing this. More holes will help the skin puff up and crisp when cooking.

Cover the skin lightly with the salt. This will draw out moisture. The drier the pork belly skin, the crispier the crackling.Let this sit for about 10 minutes. After 10 minutes, you will see some moisture on the skin. Wipe this off with kitchen towel.

Turn pork belly over and massage the Chinese five spice into the meat. Place this skin side up uncovered in the fridge overnight.

The next day, take pork out of the fridge 30 minutes before going into the oven. Preheat the oven to 160°C. Cook for 90 minutes or so allowing the internal temperature of the pork belly to reach at least 70°C.

After the 90 minutes and the pork is cooked, turn the heat of the oven to 240°C. You will see that the skin is not puffy/crispy yet but don&#39;t worry. Wipe any excess oil/moisture from the skin and put the pork belly back into the hot oven.

The second stint in the oven will crisp up the crackling. This will take about 10 - 20 mins but best to keep an eye on the pork. Watch for the skin to puff up and turn into amazing crackling. If you see one side puffing up faster, it&#39;s probably a hot spot in the oven. Either rotate the meat around or over the puffy side to avoid burning and uneven cooking.

After the skin is crispy, take it out of the oven and let it rest for 10/15 minutes before slicing. Enjoy.
