Recipe video above. An exciting way to use ground meat (mince) to make a quick stir fry that taste unbelievable! This is great made with chicken, turkey or pork. It also works with beef though it is better made with &quot;white meats&quot;. Serve it over rice or vermicelli noodles to make rice bowls with shredded lettuce, carrots and cucumbers on the side (very classic Vietnamese meal!).

Vietnamese Caramelised Pork Bowls

tbsp cooking oil ((I use peanut oil))

onion

ginger

garlic (, minced (2 tsp paste))

birds eye

pork ((mince) (Note 2))

tbsp brown sugar

tbsp fish sauce

Rice

red chilli, tomato, cucumber ((optional))

Heat the oil in a large skillet over high heat.

Add the onion, ginger, garlic and chili and cook for 2 minutes.

Add the pork mince and cook for 2 minutes or so until white all over, breaking up the meat with a wooden spoon.

Add the sugar and fish sauce. Stir, then leave it to cook without touching until all the juices cook out and the pork starts caramelised - about 2 minutes. Then stir it and leave it again, without stirring, for around 30 seconds to get more caramelisation. Repeat twice more until caramelised to your taste.

Serve over rice or vermicelli noodles, garnished with sliced scallions/shallots. For a low carb, low cal option, try Cauliflower Rice! I like to have chunks of plain cucumber and carrots on the side which is a classic way of making Vietnamese bowls.

Pork Stir Fry with Green Beans

oz / 300 g green beans ((Note 1a))

oz / 220 g pork mince ((Note 1b))

small onion, finely chopped (about 1/2 cup)

tsp finely chopped garlic (2 cloves) ((Note 2))

tsp ginger, finely chopped ((Note 2))

tbsp peanut oil (or vegetable

tbsp dark soy sauce (Note 3)

Chinese cooking wine (Note 4 for subs)

tsp sugar

tsp + Chilli Garlic Sauce (Note 5)

Mix Sauce ingredients in a bowl.

Trim the tough end of the beans, then chop into 2 - 2.5cm / 4/5 - 1" pieces.

Charred Beans:&nbsp;Heat 1 1/2 tbsp oil in a heavy based skillet over high heat (I use cast iron) until smoking. Add beans, spread out to cover base. Leave for 1 minute. Quick stir, spread out, cook for 30 seconds. Stir, then leave for 30 seconds, then repeat once more (so 2 1/2 minutes in total cook time) until beans are charred but tender crisp (not withered and floppy). Remove into bowl.

Turn heat down to medium high, add 1 tbsp oil. Add onion, then garlic and ginger. Cook for 1 minute until edges of onion are golden.

Turn heat back up to high. Add pork and cook, breaking it up as you go. Cook for 2 minutes until the pork is cooked through, then add Sauce. Cook for 30 seconds, then add beans and stir for another 30 seconds.

Serve over rice. Garnish with slices of large red chilli (it&#x27;s mild), entirely optional. To eat, mix the pork into the rice then eat it with a spoon - forget chopsticks for this one! (For a low carb, low cal option, try Cauliflower Rice)

A simple and rustic Italian pork meatballs recipe.

Italian pork meatballs

pork sausages

lemon breadcrumbs

spaghetti

olive oil

onion, finely chopped

tomato pasta sauce (we like Sainsbury’s So Organic Pomodoro)

feta, crumbled

Squeeze the meat out of the sausages into a bowl (discard the skins) and combine with the mixed herbs and breadcrumbs. Shape into 8 equal-size balls, place on a plate, then put in the freezer for 5 minutes.

Preheat the grill to medium-high. Cook the spaghetti according to the packet instructions, then drain. Meanwhile, heat the oil in a large frying pan and cook the onion for about 5 minutes. Add the meatballs and cook for a further 5 minutes, turning frequently, until browned. Stir in the tomato sauce and basil, then simmer for 10 minutes.

Tip the cooked spaghetti into a baking dish, then add the meatballs and sauce. Sprinkle over the feta, then grill for 5 minutes. Serve scattered with the reserved basil leaves.
