This recipe for a roast rack of pork shows you how to make a delicious pork roast dinner with a wonderful crunchy crackling. Watch out for your teeth on the crackling!

Let the pork come to room temperature before...

Let the pork come to room temperature before cooking. Pre-heat the oven to its maximum temperature (mine is about 230C).

Work out the total cooking time for your joint. I use approx. 35 minutes per pound, depending on the shape, as we like the pork well cooked. Or 1 minute per mm of length. My cut was 130mm and about 1,6 kg so I cooked this one for about 130 minutes in total.

Place on a roasting pan, skin side up, and put in the oven. Cook for 30 minutes on high heat. After this, the fat under the crackling should have started to render and the crackling should have started to blister and become a bit crunchy already.

Then baste the joint in its own juices and reduce the heat to 180C and cook for 60 minutes.

Baste again and cook for a further 25 minutes. Then remove from the oven and check the temperature of the meat. (63C (145F) is the safe internal temperature for pork, but I like to cook to at least 68C (155F) to ensure it is fully cooked).

If your meat is not yet cooked, put it back in the oven for another 15 minutes with the temperature turned up high and check again. When it is ready the meat should be allowed to rest for 15 minutes before carving and serving.

If your crackling is not yet fully crispy...

If your crackling is not yet fully crispy when the meat is ready, remove the crackling from the meat and cook it separately in the oven on high heat for 15 minutes, while the pork is resting, to crispen it up.

A roasted rack of pork (or pork rib roast) is a great choice for a family or company meal because it&#39;s relatively inexpensive, it&#39;s easy to make and it&#39;s impressive. Not to mention delicious!

Rack of Pork Recipe (Succulent, Easy, Impressive)

BRINE PORK RIB ROAST: Note 2. Optional but recommended.

HEAT OVEN TO 325F/163C, Note 3. Line a roasting pan with aluminum foil for easy clean up.

SEASON PORK: In a small bowl, mix together seasoning ingredients. Spread over entire surface of the rack of pork. Place meat, fat side up, in prepared pan.

ROAST THE PORK: Place pan with pork on rack in middle of oven. Roast for about 30-35 minutes per pound at 325F/163C (I prefer this temp) or 20-25 minutes per pound at 350F/177C. Check temperature 10-15 minutes before it&#39;s done with instant read thermometer. It&#39;s best not to rely on timing alone as most oven temperatures are not exact. Remove pork roast when meat thermometer reads 140F/60C. The temp will rise by 5 degrees f on resting.

REST MEAT, SLICE AND SERVE: Place pork on cutting board and loosely cover with foil. You can make gravy in the meantime (or see Note 4). Rest meat for 10-15 minutes. To slice, use a sharp knife to slice off all the bones together. Then slice between ribs to separate them. Place roasted pork cut side down and slice roast. Alternatively, slice between the ribs for thick pork chop style servings. Transfer to platter and serve with gravy and your favorite sides. If you didn&#39;t brine the meat, consider a light sprinkle of sea salt to bring out the flavor.
