lb. pig ears

pork

onion (minced)

soy sauce

black pepper

ginger (minced (optional))

chili flakes

garlic powder

lemon (or 3 to 5 pieces calamansi)

butter (or margarine)

chicken liver

water

mayonnaise

salt

egg ((optional))

Pour the water in a pan and bring to a boil Add salt and pepper.

Put-in the pig’s ears and pork belly then simmer for 40 minutes to 1 hour (or until tender).

Remove the boiled ingredients from the pot then drain excess water

Grill the boiled pig ears and pork belly until done

Chop the pig ears and pork belly into fine pieces

In a wide pan, melt the butter or margarine. Add the onions. Cook until onions are soft.

Put-in the ginger and cook for 2 minutes

Add the chicken liver. Crush the chicken liver while cooking it in the pan.

Add the chopped pig ears and pork belly. Cook for 10 to 12 minutes

Put-in the soy sauce, garlic powder, and chili. Mix well

Add salt and pepper to taste

Put-in the mayonnaise and mix with the other ingredients

Transfer to a serving plate. Top with chopped green onions and raw egg.

Serve hot. Share and Enjoy (add the lemon or calamansi before eating)

Tenderize the pork hock by combining all the pork hock boiling ingredients in a cooking pot. Cover and boil between low to medium heat setting for 80 minutes. Drain the liquid and let the pork cool down to room temperature. Debone the pork hock using a sharp knife. Set aside (note: You may discard the bones.).

Rub 2 teaspoons of salt all over the skin of the pork.

Prepare the dressing by combining all the dressing ingredients in a bowl. Stir until smooth.

Rub 1 teaspoon salt all over the liver. Heat the cooking oil in a pan. Fry both sides of the liver until it browns. Remove from the pan and slice into serving pieces. Set aside.

Heat oil in a deep cooking pot. Fry the pata until golden brown and crispy. Remove from the pot and let it cool down.

Chop the crispy pata into bite-size pieces. Put it in a large mixing bowl, add the fried liver, and add the dressing, onion, green onion, and chili peppers. Toss until well blended.

Transfer to a serving plate. Serve. Share and enjoy!

Sisig recipe using pork belly

pork belly (- sliced about half-inch thick)

salt and pepper

lemon (or 3-4 kalamansi juice)

chili peppers (- minced or 1/4 tablespoon chili flakes)

Season pork belly slices with salt and pepper. Let it marinate for at least 30 minutes.

Grill pork belly and chicken liver until well done. Pork skin should be crispy.

Once grilled, chop the pork belly and chicken liver into small fine pieces.

In a bowl, combine the chopped meat, onions, lemon juice and chili pepper. Season with soy sauce and pepper.

Warm it in a pan with a bit of oil if desired. Alternatively, heat a sizzling plate and add a some butter or margarine. Add the Sisig and serve while still sizzling hote.

This recipe was delicious! I added a couple tablespoons of mayo to add some creaminess. So easy and tasty!

I will try this,,I always planning to cook sisig at home. Can I use pork liver? Because I can't find chicken liver here in UK.

Hi neighbour! I grew up in Olongapo City and have been living all my adult life in the US. Yikes...I'm almost 40 and it seems like forever ago! I always just go to Kabayan stores that has "turo-turo" or small carinderia inside the store and would always buy a large to-go container of it whenever I crave it! In fact, my bf and I just got back from a Kabayan store and finished eating a bowl of rice and sisig! Haha!

I always knew sisig is very easy to make, but I get discouraged. I'm afraid I might mess it up. Your blog and videos has been a huge help! Your entire page has been a comfort for me whenever I miss home cooking and my late mum's cooking. I even learned how to make fresh lumpia wrappers because of you!

My only question is how one grills chicken livers? Seems like some “work arounds” would be needed to keep them from falling in the coals (I don’t consider gas actual “grilling”).

I combined this with another recipe and it turned out perfect.  Here the the additional items:
crushed ginger
coconut milk
butter
Mayonnaise

With the left overs I made some stuffing and mix it together.  More Yum!

I use the pork lechon head for my sisig. scrape all the meat in the lechon head and used the ingredients above.

Try this recipe for an authentic taste of Sisig of Pampanga. But instead of using pig mask and ears, we used pork belly for convenience and to cater to everyone, including those who would find a pig's head too exotic for their taste.
