Season steak pieces on all sides with salt and pepper. Add oil to a large cast iron pot over medium heat-high heat. Once hot, add steak, in small batches, and brown on all sides. Don’t crowd the meat in the pan or it will steam instead of sear. Set aside the seared steak onto a plate.

Add a little more oil to the pan, if needed and reduce heat to medium. Add onions and cook until golden. Return the meat back to the pot, along with tomato sauce, bouillon cubes, water, paprika and vinegar.

Cover pot, reduce heat to low and simmer for 2 hours, until meat is fall apart tender. Remove from heat and allow to cool for 10 minutes, then stir in the sour cream.  Taste and add additional salt and pepper, as needed.

Boil noodles according to package instructions and serve pörkölt over them.

Use your Instant Pot to make amazing and tender Hungarian Goulash, or Porkolt, in no time! It&#x27;s simple, delicious, and better yet, it&#x27;s authentic!

Hungarian Goulash

Bell Peppers (of your choice, diced)

Garlic (minced)

Canned Tomatoes

Sweet Hungarian Paprika (DO NOT USE smoked Spanish paprika)

Chicken Stock

Cornstarch (dissolved)

Sour cream

Tarhonya

Chicken Broth

Butter

Sprinkle meat chunks with salt and pepper to taste.

Turn your Instant Pot or pressure cooker to Sauté wait until hot, then add cooking oil.

Brown the meat â€“ leave it alone for a few minutes to get a nice color.

Remove to a bowl when nicely browned, and add the onion and bell pepper to your pressure cooker. Cook for about 5 minutes.

Add garlic and sauté til fragrant (30 sec or so)

Add remaining salt, tomatoes, stock/broth and paprika, and add the meat along with any juices. Stir well

Cancel the saute. Seal the lid

Push the meat/stew button and adjust time to 25 minutes.

Allow it to release pressure naturally for 10 minutes, and then release any remaining pressure.

Cancel the keep-warm function and turn on Sauté

Mix the cornstarch with a little water, and add this to the stew. Bring to a brief boil to thicken

Serve over starch of your choice with a big dollop of sour cream. Traditionally it would be Tarhonya but you can also use potatoes or rice.

For Porkolt

Sauté tarhonya in butter until deeply toasted. Some of the nuggets should be pretty dark brown.

Heat the broth in a separate pot or the microwave until boiling.

Pour hot broth over the tarhonya.

Cover and simmer on low for 20 min until tender.

Season to taste.

Instant Pot Authentic Hungarian Goulash Porkolt

One of the most famous Hungarian dishes, this slow-simmered Hungarian beef and onion stew is loaded with flavor and is positively delicious!

Authentic Pörkölt (Hungarian Beef and Onion Stew)

In a heavy pot or Dutch oven fry the bacon until done. Add the onions and cook over medium-high heat until golden. Add the bell peppers and garlic and cook for another two minutes. Add the beef and cook for a minute until some, but not all, of the pink is gone. Stir in the paprika and remove from heat.

Add the remaining ingredients. Add just enough water to come up to just over the halfway point of the stew mixture (in other words, not so the water is covering it). Return to heat and bring it to a boil. Cover, reduce the heat to medium-low and simmer for 90 minutes. If the stew isn&#039;t thick enough, continue to simmer uncovered for a few more minutes so that some of the liquid evaporates. Add salt to taste.

Serve with Spätzle (in Hungary they are shorter and stubbier, so prepare the dough accordingly or just use whatever method/shape you prefer - the texture and flavor of the dough is the same regardless). Or serve with boiled potatoes or wide egg noodles. A side salad, particularly a cucumber salad, is traditional. If desired, serve with a dollop of sour cream.

Fjern de groveste hinnene og overfl&oslash;dig fett, og kutt kj&oslash;ttet i terninger p&aring; ca. 3x3 cm. Dryss over salt.

Finhakk løken. Varm olje i en gryte (gjerne en jerngryte) og stek løken på svak varme til den blir gyllen, ca. 20 minutter. Tilsett litt vann så er du sikker på at løken ikke blir brent.

Ta kjelen av varmen og bland inn paprikapulver. Pass på at det ikke brunes eller blir brent – det vil ødelegge smaken.

Vend kjøttet inn i løk/ paprika-miksen. Tilsett pepper og vann så det akkurat dekker kjøttet. Kok opp (men ikke skum av), senk varmen, sett på lokk og la kjøttet småkoke i 2-3 timer, til det er mørt.

Skrell og kutt poteter, gulrot, persillerot og sellerirot i små terninger. Bruk morter og knus karve grovt.

Flå tomaten ved å skjære et kryss i skinnet og dyppe den i kokende vann til skinnet begynner å løsne. Løft den ut av vannet og fjern resten av skallet. Hakk tomaten fint.

Ha poteter, grønnsaker, karve og tomat i suppen og la alt koke med den siste halvtimen, eller til potene er møre. Smak eventuelt til med litt salt og pepper. Dryss over hakket persille.
