250 g Prawns (King prawns, tiger prawns/shrimp

Red chilli pepper (Optional, Cut thin slices)

Vegetable oil

tbsp Light soy sauce

tsp Dark soy sauce

tbsp Oyster sauce

Sesame oil

Sugar

First, season the prawns with salt, black pepper, and Shao Xing wine. Boil the dried noodles by the packet instructions or use fresh egg noodles. Mix all the chow mein sauce in a bowl and set it aside.

Heat the large wok/pan into a medium-high heat, drizzle a tablespoon of oil. Saute the prawns for 2-3 minutes or until prawns clour changed, then remove from pan and set it aside.

In the remaining pan, drizzle 1-2 tablespoons of oil, and saute the chopped garlic for few seconds with medium heat. Then follow with the onion slices, carrot, and bell pepper slices. Stir fry for 1 minute.

Next add the noodles, pour the sauce mixture, toss well and cook for 2-3 minutes over medium-high heat.

Place the cooked prawns back in the wok, follow with spring onions, bean sprouts, and chilli slices. Toss well until all the ingredients combine evenly and cook for another 1-2 minutes.

Transfer to serving plate and serve immediately.

King Prawn Chow Mein Recipe

Prawn Chow Mein or Shrimp Chow Mein is one of my favourite take out dishes, made with Shrimp/Prawns, Veg and Noodles coated in a delicious sauce. The great thing? It is ready to eat in 15 minutes.

tbsp Light Soy Sauce

tbsp Oyster Sauce (or sub Hoisin

45 ml Stock (Fish

White Pepper (or Black)

225 g Chow Mein Noodles (or Egg Noodles)

tbsp Peanut Oil

Garlic Cloves (Sliced finely)

240 g Raw King Prawns (Cleaned)

130 ml Stock (Fish

Combine ingredients for sauce in a bowl and stir together.

Prepare the noodles according to the packet instructions and drain.

Heat oil in a large pan or wok.

Add the Garlic and stir fry for 10 seconds.

Add Prawns and stir fry for 2 minutes until coloured on both sides. 

Add the Stir fry Veggies and cook for 1 - 2 minutes till wilted.

Add the noodles, Sauce and Stock.

Stir fry for 1 minute, tossing constantly over high heat. 

Remove from heat and serve immediately.

Easy Prawn Chow Mein

Egg Noodle Nests

tbsp Fresh Ginger (peeled and finely chopped)

350 g Cooked King Prawns (defrosted if frozen)

Spring Onions (sliced)

tbsp Oyster Sauce

Cook the noodles according to packet instructions, drain and set aside. You can do this the day before and store in the fridge.

Mix together the chow mein sauce ingredients in a small bowl.

Heat the sesame oil in a large wok and fry the garlic and ginger on a high heat for 2 minutes.

Add the vegetables and beansprouts and fry for 3-4 minutes. Keep moving the vegetables around the pan so they cook evenly.

Mix in the king prawns, cooked noodles and stir fry sauce.

Warm through, season with salt and pepper (you wont need much salt due to the soy sauce), and serve with the sliced spring onions.
