Princess Krofne/Cream Puffs are a traditional dessert found on most dessert displays. 

Princes Krofne / Cream Puffs

+ 2 tablespoons (120 g) unsalted butter

(250 ml) water

(3 g) salt

(13 g) sugar

(120 g) flour

eggs

(500 ml) milk

(60 ml) heavy cream (slatka pavlaka)

(100 g) granulated sugar

(g) vanilla extract

sugar

Preheat your oven to 350 F (200 C) and line a baking sheet with parchment paper. Set aside.

In a large pot, combine water, butter, salt, and sugar. Heat on medium-high heat until the butter is completely melted.

When the butter is completely melted, add in the flour (all at once) and stir with a wooden spoon until a dough forms and pulls away from the sides and bottom of the pot. It will turn into a smooth dough ball. Continue cooking the dough, moving it around, and stretching it with your spoon for another 2 minutes, this will ensure the flour is slightly cooked and any extra moisture is released. A thin film will form on the bottom of the pot. Remove from heat after 2 minutes.

Transfer the dough into a large mixing bowl and allow to cool to room temperature. Mix the dough every couple of minutes so it cools faster.

Once the dough has cooled, use a hand or stand mixer to incorporate the eggs, one at a time, into the dough. A hand mixer is best for this step. Add in one egg, then beat until the egg is incorporated. Repeat this step with all eggs. You should end up with a sticky, thick, dough that is able to be piped and forms a thick ribbon when pulled up with a spatula. Depending on the size of your eggs you may need 4 or 5 to achieve the proper texture.A note of caution: It will not look good when you start adding in the eggs. In fact, it will look like you did something wrong. But it will be ok, the mixture just needs some whisking and it will turn into a sticky, thick, dough.

Transfer the pastry dough into a piping bag fitted with a star tip. Pipe as many puffs as you'd like, but keep them all the same size so they cook evenly. I get 10-12 larger puffs from this recipe. Pipe the dough in a circle and work your way up, but avoid making a peak. It will burn in the oven. If you end up with peaks, just flatten them down slightly.

Bake the pastry for 30 minutes, and do not open the oven during the baking time. After 30 minutes, the pastry should be golden brown. If they are not quite golden brown after 30 minutes, cook for another 5-10 minutes. Remove from the oven and cool completely.

Choux Pastry

Add in half of the milk to a medium pot and reserve the other half. To the pot with the milk add in the granulated sugar, vanilla sugar, heavy cream, and vanilla extract. Heat on medium heat until just starting to boil.

While the milk heats up, to a mixing bowl add in the reserved milk, egg yolks, and flour. Whisk very well until the flour is combined and there aren't any lumps.

When the milk begins to just boil, add in the milk and flour mixture and whisk quickly. Continue whisking and cooking the custard until it becomes very thick. It will be slightly thicker than pudding. Once it has become very thick, continue cooking it for another 2 minutes. Remove from heat.

Taste the custard for sweetness and add any additional sugar if you'd like at this point. Transfer the custard to a bowl and cover with plastic wrap, making sure the plastic wrap touches the top of the custard (so a skin doesn't form). Cool to room temperature and then in the refrigerator until cold. Transfer to a piping bag when cold.

Vanilla Custard

Cut each pastry puff horizontally, pipe in the vanilla custard on the bottom piece and top with the top piece. Dust with powdered sugar before serving.

za 45-50 kom princeski:

250 ml vode

g maslaca

g brašna

žlica šećera

prstohvat soli

srednje velika jaja ili 200-220 g

jaja

žlica šećera (100 g)

vanilin šećer

malo ribane limunove korice

žlica gustina ne prepunih (oko 120 grams)

500 ml mlijeka

šećer u prahu za posipanje

200 ml slatkog vrhnja, po želji

U posudu stavite vodu, maslac, šećer i sol i kad uzavre, neka kuha dok se maslac ne otopi.Maknite sa vatre pa umiješajte brašno SVE odjednom, ne malo po malo. Energično miješajte drvenom kuhačom dok se tijesto ne poveže pa vratite na vatru i stalno miješajući kuhajte dok se tijesto ne počne odvajati od posude.Prohladite cca 2 minute stalno miješajući da se po vrhu ne uhvati korica.U toplo tijesto dodajite 1 po 1 jaje. Svako jaje dobro umiješajte i kad se potpuno upije u tijesto, dodajte sljedeće. Tijesto će na kraju biti glatko, mekano i svilenkasto. Pokrijte i ostavite da se hladi na sobnoj temperaturi. Treba biti mlako kako bi se moglo istiskivati iz slastičarske vrećice.

Lim za pečenje obložite papirom za pečenje.Tijesto stavite u slastičarsku vrećicu sa zvjezdastim nastavkom i istiskujte na papir kuglice veličine oraha na razmaku od 3-4 cm. Ako kraj tijesta strši uvis, poravnajte ga vlažnim prstom.Stavite u pećnicu zagrijanu na 200°C i pecite 30-35 minuta ne otvarajući vrata, dok krafnice ne dobiju zlatno smeđu boju.

Ohladite i prerežite popola pa punite ohlađenom kremom pomoću slastičarske vrećice sa zvjezdastim nastavkom. Po želji, preko kreme stavite sloj tučenog slatkog vrhnja isto pomoću slastičarske vrećice pa poklopite pripadajućim gornjim dijelom krafnice.Pospite šećerom u prahu.Spremite u hladnjak u plastičnoj posudi sa poklopcem da se ne suše.

Stavite mlijeko na vatru da uzavre, par žlica odvojite sa strane.Odvojite bjelanjke od žumanjaka pa umutite u čvrsti snijeg sa prstohvatom soli. Stavite sa strane.Žumanjke odmah stavljajte u posudu u kojoj ćete kuhati kremu. Pjenasto ih umutite sa šećerom i vanilin šećerom. Dodajte malo ribane limunove korice i gustin. Dobro izmiješajte pa razrijedite sa onim odvojenim mlijekom.

U žumanjke polako ulijevajte uzavrelo mlijeko, dobro promiješajte da se ne stvore grudice. Uključite mikser i kuhajte stalno miksajući na laganoj vatri dok se krema ne zgusne. Povremeno kremu promiješajte drvenom kuhačom, pogotovo rubne dijelove posude.Kad se krema zgusnula umiješajte narezan maslac, a kad se maslac istopi, maknite sa vatre i lagano umiješajte snijeg od bjelanjaka. Ja sve još miksam najmanjom brzinom dok se sve fino ne poveže.Ohladite.

Hrskave princes krafne  (Choux au Craquelin)

Za 20 komada:

60 g maslaca sobne temperature

šećera

brašna

ml vode

žličica šećera

srednje velika jaja

žumanjka

g šećera

malo naribane limunove korice

375 ml mlijeka

300 ml vrhnja za šlag

Craquelin sloj:Sve sastojke izmiješati da se dobije kompaktno tijesto.Tijesto pobrašniti pa razvaljati između dva papira za pečenje. Vaditi krugove promjera 5 cm, debljine 2 mm. Krugove tijesta staviti na tacnu obloženu papirom za pečenje. Spremiti u zamrzivač dok se ne napravi tijesto za krafnice (choux pastry).

Kuhano tijesto (Choux pastry):Uzavreti vodu, maslac, šećer i sol. Maknuti s vatre, dodati brašno sve odjednom i dobro ujednačiti. Vratiti na vatru i kuhati stalno miješajući dok se tijesto ne počne odvajati od posude. Prohladiti 1-2 minute pa umješati jedno po jedno jaje. Napuniti slastičarsku vrećicu i istisnuti male kuglice na papir za pečenje, dovoljno razmaknute jer će se napuhnuti (kuglice veličine manje šjive).Na svaku kuglicu staviti kolut tijesta iz zamrzivača.Napomena: Promjer koluta tijesta treba biti malo veći od promjera kuglice tijesta, kako bi je pri pečenju prekrio sa svih strana.Peći 35-40 minuta na 180°C ili dok krafnice ne dobiju zlatno smeđu boju. Dok se peku, NIPOŠTO NE OTVARATI VRATA PEĆNICE.Ohladiti.

Krema:Zagrijati mlijeko do vrenja.Žumanjke, šećer i limunovu koricu pjenasto izmutiti u posudi za kuhanje.Umiješati brašno pa postupno dodavati vrelo mlijeko stalno muteći pjenjačom da nema grudica. Staviti na laganu vatru i skuhati kao puding stalno miješajući. Ohladiti.Dok se krema hladi, koji put promiješati da se po vrhu ne napravi korica.Vrhnje za šlag izmiksati, ne prečvrsto da se ne pretvori u maslac. U šlag pomalo dodavati kremu i lagano izmiješati pjenjačom.Napuniti slastičarsku vrećicu sa glatkim nastavkom. Nastavkom napraviti rupicu s donje strane krafne i puniti kremom.ILI odrezati kapicu na vrhu krafne, napuniti kremom i vratiti kapicu.
