prosciutto salad

This lemony bean salad has creamy white beans, salty prosciutto, parmesan cheese, peppery arugula, and a punchy lemon dressing. Both canned beans and home cooked beans work beautifully in this salad.

Lemony White Bean Salad with Prosciutto

white beans, drained and rinsed or use 1 1/2 cups cooked beans

parlsey leaves, chopped

parmesan cheese

arugula

prosciutto

Dijon mustard

lemon (about 1/4 cup)

extra virgin olive oil

fine sea salt

black pepper

honey, optional

This salad is a recent find and an instant favorite for us! It’s quick to prepare, and absolutely delicious. We’ve made it every week for the past month! Perfect for the summer too

This is fantastic! I used a mesclun/arugula mix and cut the oil down by half.

This was excellent. can't wait to make again.

So yummy! The dressing is fantastic. Definitely don’t add the dressing too early to the salad - it will wilt those leaves. We made the dressing ahead of time and the beans absorbed so much flavor! Deeeeelish!

This crazy delicious salad came together as a bunch of leftovers. And it turned out to be the most delicious fig, golden beet and prosciutto salad.

Fig, Golden Beet and Prosciutto Salad with Fig Vinaigrette

figs (halved)

golden beets

figs

olive oil

tbsp champagne vinegar

tsp shallot (finely diced)

tsp dijon mustard

salt and pepper

Wash and cut the stems off the golden beets. Bring a pot of water to a boil, gently drop in the beets into the pot and boil for 30-40 minutes or until easily punctured with a knife.

Remove the beets and let cool for a few minutes. Peel the beets and slice into small chunks. Place in the refrigerator for 10 minutes to cool.

Assemble the salad by combining the arugula, figs and beets. Slice each prosciutto piece in half lengthwise, then roll up.

Make the dressing by combining all ingredients in a food processor and pulse until combined. Add the dressing to the salad and serve immediately.

I don't know how I never thought of this flavor combination before!
When I saw the title included three of my FAVORITE fall/winter staples....I knew I had to give it a try. It was absolutely delicious; and I want to try the combination out on some homemade pizza next!

Love this fresh salad with prosciutto and golden beet! Excellent for hot summer days!

The best salad! The flavors of the beets with the fig and prosciutto is so good, we couldn't get enough!

This beet salad with figs looks so delicious and healthy. Easily can be fit into clean eating plan.

Easy and flavor-packed prosciutto fig salad with creamy burrata cheese, pistachios, fennel, and easy dressing. A seasonal summer salad at its best!

Easy Prosciutto & Fig Salad Recipe (video)

oz baby arugula

fennel bulb (thinly shaved/sliced)

Persian cucumbers (sliced)

basil (chopped)

oz burrata cheese

pistachios (salted & roasted; chopped)

tbsp honey

tbsp balsamic glaze

sea salt & ground black pepper (to taste)

Start by prepping some of the ingredients: slice the cucumbers, quarter the figs, chop the fresh basil, and chop the pistachios.

Trim the green parts off the fennel bulb and save them for garnish. Also trim off the bottom and any brown bits. Use a mandolin slicer to very thinly shave the fennel bulb.

Preparing the Salad Ingredients:

On a large serving platter or in a large salad bowl, combine the baby arugula with the thinly sliced fennel. Toss the two together until they’re well combined.

Next, top the salad with sliced cucumbers and chopped fresh basil. Pull apart the prosciutto slices into small, bite-sized pieces and add those next.

Gently pull apart the burrata cheese and drop the cheese evenly over the top of the salad. Next, top with the quartered figs.

Garnish the salad with diced pistachios and sprigs of fennel greens.

When ready to enjoy, season the salad generously with sea salt and ground black pepper.

How to Make Fig Salad:

Drizzle olive oil over the top, followed by honey and balsamic glaze. Dig in and enjoy!

Enjoy this salad on its own, or pair with grilled steaks, roasted chicken, roasted lamb, or duck.
