Easy homemade Pumpkin Protein Bars made with just 4 simple ingredients and packed with 15 grams of plant-based protein. And they taste like just a pumpkin perfect bar! Vegan, gluten-free, and dairy-free.

Pumpkin Protein Bars

pumpkin puree ((180 grams))

natural almond butter ((192 grams))

vanilla protein powder ((150 grams) (see notes))

Line a bread loaf pan* with parchment paper and set aside.

In a medium-sized mixing bowl, add your pumpkin puree and almond butter and mix well until combined and smooth. Add your protein powder, pumpkin spice, and salt and mix well to combine. It will get crumbly at first but then will come together in a large dough ball. The consistency should almost be a little thicker and dryer than cookie dough and hold together well. If needed, add a little more protein to absorb any extra liquid.

Press the mixture into the bottom of the pan. If desired, place in the fridge for 15 minutes to firm up some (I like doing this). Cut into 6 equal-sized bars and enjoy!* Store in the fridge for up to a week in a tightly sealed container.

No bake chocolate peanut butter protein bars that taste just like a peanut butter cup. These low carb peanut butter protein bars will be your new favorite snack to keep in your fridge and enjoy all week long!

No Bake Chocolate Peanut Butter Protein Bars

natural creamy peanut butter (just peanuts + salt)

honey (or coconut palm syrup, if vegan)

coconut oil

vanilla

flaxseed meal

chocolate bar

In a medium bowl mix together peanut butter, honey, coconut oil, vanilla together until smooth. Add in ground flaxseed meal and protein powder of choice. Use a spoon to mix together until you can’t anymore, then use clean hands to help work together. The batter should be similar to cookie dough.

Press into an 8x4 inch pan lined with parchment paper.

Make the chocolate layer by adding 2.5 ounces of dark chocolate to a small saucepan and melting until completely smooth. Pour the melted chocolate over the peanut butter layer and tilt the pan so that the chocolate covers the peanut butter layer entirely.

Place in the fridge for 30 minutes-1 hour before slicing into 10 bars or squares (either works but I love squares the most). Store covered in the fridge until ready to eat. Bars will keep for up to two weeks.

Packed with 12 grams of protein each these no-bake protein bars are delicious and super easy to whip up. They&#039;re the perfect snack to meal prep for the week.

Protein Bars

vanilla protein powder (I used Nuzest)

oat flour

salt (omit if peanut butter has salt)

peanut butter (or almond butter)

honey (or maple syrup)

Tablespoon melted coconut oil (plus more if needed)

chocolate chips (plus more for topping)

Prep pan

Line a loaf pan with parchment paper. Set aside.

Combine

Combine protein powder, oat flour and salt. Add in peanut butter, honey, vanilla and coconut oil. The dough will be quite thick. I suggest combining the dough with your hands. If it’s still too dry add more melted coconut oil or water, 1 teaspoon at a time.

Mix in

Mix in chocolate chips with hand or spoon.

Press dough

Press dough into a lined loaf pan and add more chocolate chips on top. Press the chips in with your hands.

Chill

Let bars chill in fridge for at least one hour before cutting.

Cut and enjoy

Remove bars from the fridge, cut into 6 equal-sized bars and enjoy. Bars will last about one week in the fridge or up to 3 months in the freezer.

I make this often as a snack for entire  family. We love it!! Simple and easy to make, very delicious.

These are divine and took me no time to make! I had to substitute the oat flour for 1/2 gluten free flour and 1/2 almond meal because of what I had on hand and they turned out great! They were so easy to make and delicious!

I found these to be really tasty and great with a side of fruit!  I used dark chocolate chips and a mix of peanut butter and almond butter.
