Edible cookie dough that tastes absolutely delicious! You'd never guess that it's made with chickpeas. Vegan and gluten-free.

Protein Cookie Dough

15 oz can chickpeas (rinsed and drained)

vanilla plant-based protein powder

almond butter butter

coconut sugar

vanilla extract

sea salt

chocolate chips

Add chickpeas

Add chickpeas to a large food processor and process until they start to smooth out. You may need to use a rubber spatula to scrape down the sides.

Add remaining ingredients

Add protein powder, almond butter, coconut sugar, vanilla, sea salt and process until a ball of dough forms.

Add chocolate chips

Use a rubber spatula to separate the cookie dough a bit, add chocolate chips and pulse 2-3 times or until chocolate chips get dispersed in the cookie dough.

Serve

Remove cookie dough from the processor and enjoy!

Store

Store any leftover dough in a sealed container in the fridge for up to 3-4 days.

13 g Honey (or Brown Rice Syrup (Lower Sugar))

Chocolate Chips (Optional)

Add all of your ingredients into a bowl

This protein cookie dough is a simple five minute recipe that is perfect for a post workout snack or healthy dessert. It&#039;s vegan, gluten free, refined sugar free and has 10 grams of protein per serving.

non-dairy milk (more as needed)

Whisk together the almond flour and protein powder.

melt peanut butter

Add the peanut butter to the microwave and heat for about 20 seconds, just to melt it slightly so it&#39;s easier to work with.

add all ingredients

Add the peanut butter to the flour along with the maple syrup, milk and vanilla.

Mix together with a rubber spatula until combined, adding 1-2 more tablespoons of milk as needed.

add chocolate

serve

Leave as is or roll into balls. Store in the fridge for best results.

Low Carb Chocolate Protein Cookies

vegan chocolate protein (4 scoops)

almond butter

tsp raw cacao powder

Tbsp granulated stevia

Tbsp milk (75 milliliters)

The Protein Works Spread

Combine your dry ingredients in a large mixing bowl: almond flour, vegan chocolate protein powder, raw cacao powder and granulated stevia. Stir until combined, then create a well in the middle and add in the Loaded Nuts spread and plant milk.

Mix everything together thoroughly with a spatula and switch over to using your hands, once the dough becomes thicker. Place the dough in the fridge for 10 minutes.

Scoop out the cookie dough for each cookie with a spoon and roll it into a ball. Place the dough ball  onto your lined baking tray and gently flatten the cookie. Repeat until you've got all your cookies on the tray. Place a little extra Loaded Nuts Spread onto the top and bake them into the oven for about 15 minutes.

Let them cool down for 10 minutes before removing them from the baking tray.

Vegan Chocolate Protein Cookies Recipe

An amazing Birthday Cake Protein Cookie Dough made with oat flour and protein powder, and no sugar. The perfect funfetti cake batter protein cookie dough to satisfy cravings and be healthy; Gluten free, Dairy free and Vegan too!

Birthday Cake Protein Cookie Dough - Be Happy and Healthy!

Oat Flour (22 grams, see post for sub)

Tbsp Protein Powder (11 grams)

scoop Unflavored Collagen (10 grams, see post for sub)

Tbsp Coconut Flour

tsp 1:1 Sugar-free Sugar Replacement (4 grams)

tsp Cashew Butter

1½ Tbsp Almond Milk (22 milliliters)

¼ tsp Rainbow Sprinkles

Combine all the ingredients except sprinkles in a bowl and mix - oat flour, protein powder, collagen powder, coconut flour, sugar replacement, cashew butter and almond milk.Use more or less milk depending on how runny you want it.

Add sprinkles and mix.

I was very excited to make this recipe as I am  constantly looking for ways to incorporate more protein into my diet. To my surprise the “cookie dough” did not look anything like the picture and tasted like oaty sand. I tried multiple things to make it better and ultimately had to throw it away. Very disappointing

This healthy cookie dough frozen yogurt is super creamy, packed with high protein cookie dough bits, and makes a great swap for ice cream!

Healthy frozen yogurt

full-fat coconut milk (*I like Trader Joes brand)

THICK coconut yogurt or greek yogurt

cashew butter

tsp vanilla extract

almond flour)

tbsp runny cashew butter or almond butter (**See notes)

tbsp melted coconut oil

tbsp monk fruit or coconut sugar

cacao nibs or mini chocolate chips

The night before you want to make the ice cream (or early morning), place the bowl of your ice cream maker in the freezer.

When you&#39;re ready to make the ice cream and your bowl is frozen, combine all of the ice cream ingredients in a blender. Blend a minute or so until completely smooth.

Turn your ice cream maker on according to it&#39;s instructions. Pour the ice cream mixture into the machine and let it work it&#39;s magic! Mine takes awhile to get thick and creamy (about 25-30 mins).

While the ice cream maker is running, make the cookie dough.

Combine all of the ingredients in a bowl until cookie dough forms. I use plant-based protein, so if you use whey or another kind, the texture of your dough may be different. If it&#39;s too wet, add a few tbsp more almond flour or an extra tbsp or two of protein. If it&#39;s too dry, add a little extra maple syrup or a splash of milk.

Roll the dough into small balls (you can also leave it in crumbles and add it to the ice cream maker while it&#39;s spinning your ice cream). I like to throw half the balls into the ice cream maker and save some for topping!

Once the ice cream maker is done and it&#39;s thick to your liking, turn it off. Serve straight away with some extra cookie dough on top and store the rest in an air-tight container in the freezer (I linked my favorite reusable ice cream containers in the blog post!).

When eating leftovers, let the ice cream thaw for 30 minutes before scooping and enjoying for the best texture.

Cookie dough

After blending all of the ingredients together, instead of pouring into the ice cream maker, you&#39;ll pour the mixture into a glass container with a lid (or saranwrap). You can stir in the ice cream chunks or store them in the fridge until you&#39;re ready to eat and just sprinkle them on top later.

Place the container in the freezer and stir every 30 minutes until it starts to get thick (I like to stir it every 30 mins for the first 2ish hours). It won&#39;t turn out as great as the ice cream maker but will still taste delicous!

To make without an ice cream maker

First time making ice cream and was happy with the recipe! Easy to follow, minimal and healthy ingredients. I like ice cream slightly sweeter but given it is supposed to be a healthy recipe, it works just fine and I prefer it this way. The cookie dough was bomb and have been eating it on its own too. I think I would make it by itself sometimes too!

Cup Rolled Oats (or Almond Flour (Use oats

Teaspoon Vanilla Extract

Scoop Protein Powder (Vanilla or Cookie Dough)

Tablespoons Syrup (Sugar Free

Tablespoons Nut Butter

Mini Chocolate Chips (Sugar Free if you can find them!)

If you already have Oat Flour or are using Almond Flour, skip the next 2 steps

Add your Rolled Oats into either a food processor or blender

Process or blend until they look like flour

Drain or strain your Cottage Cheese if needs/there&#39;s a lot of excess liquid

Add in the rest of your ingredients aside from your Chocolate Chips

Process or blend again until smooth or you reach your desired texture

Too much liquid? Add in another 1/4 cup of flour

Lightly mix your Chocolate Chips or anything else you want in

For optimal texture, cover and put it into the fridge for an hour

Eat this as is, on something like a rice cake, or use it as a dip!
