No-Bake granola bites with peanut butter and chocolate chips are a quick healthy homemade snack! This recipe has oats, bran &amp; flaxseed&nbsp;for an energy boost.

Granola Bites with Peanut Butter &amp; Chocolate

honey

brown sugar

chocolate chips (mini semi-sweet, plus extra for topping)

oats

rice crisps

flaxseed (ground)

oat bran

In a medium-sized saucepan over medium heat, cook honey and brown sugar for 1 minute until brown sugar is dissolved.

Add vanilla and stir to combine.

Add mixture to a stand mixer fitted with a paddle. Add peanut butter and mix on medium speed until combined, about 1 to 2 minutes.

In a medium-sized bowl, combine oats, crisps, flaxseed and oat bran. Pour into a mixer with peanut butter mixture, and combine on medium-low speed, about 1 to 2 minutes.

Refrigerate the mixture for 10 minutes, or until the mixture has cooled completely to room temperature, to prevent the chocolate chips from melting.

Transfer mixing bowl back to stand mixer and add the chocolate chips. Mix on medium-low speed until combined, about 30 seconds to one minute.

Using a mini cupcake tin, enough to make 24 cups, add a heaping tablespoon of the peanut butter chocolate chip mixture into each cup.

Press the mixture firmly into each cup then top with additional mini chocolate chips, pressing gently into the batter. Each cup should be at least ¾ full with the mixture.

Refrigerate for at least an hour, or until the cups have hardened and are easy to remove with a small knife.

Store the peanut butter chocolate chip granola cups in an airtight container in the refrigerator for up to 1 month.

tbsp chia seeds

nut butter

tbsp raw honey

tsp vanilla extract

raisins or chocolate chips (your preference)

Combine oats, protein powder, cinnamon, and chia seeds and stir until well incorporated.

Add in nut butter, honey, and vanilla extract. Mix well.

Fold in your preferred mix-in.

Gradually add in liquid one tablespoon at a time until a doughy mixture forms.

Roll into balls. I like to use my hands, especially for this part.

Place in a container and set in the fridge for at least 30 minutes.

Vanilla Cupcake Low Carb Lite Protein Blend

maple syrup

almond flour

oat flour

almond milk

tbsp vanilla extract

tbsp Swerve sugar substitute (optional)

Mix flours, protein, and sweetener in a bowl; set aside.

Mix nut butter and syrup and heat in microwave roughly 30 seconds; set aside.

Combine wet and dry mixtures.

Add vanilla and milk and continue stirring until a batter forms.

Transfer dough to baking dish and press down firmly to create an even layer.

Press sprinkles into the top and refrigerate for 30 minutes or until firm.

Cut into equal pieces and store in the fridge for up to one week.

Combine

Combine protein powder, oat flour and salt.

Mix in

Add in peanut butter, honey, vanilla and coconut oil. The dough will be quite thick. I suggest combining the dough with your hands. If it’s still too dry add more coconut oil, 1 teaspoon at a time.

Mix in chocolate chips with hand or spoon.

Press dough

Press dough into a lined loaf pan and add more chocolate chips on top. Press the chips in with your hands.

Chill

Let bars chill in fridge for at least one hour before cutting.

Cut and enjoy

Remove bars from the fridge, cut into 6 equal-sized bars and enjoy.

Store

Bars will last about one week in the fridge or up to 3 months in the freezer.
