Keto Protein Waffles

scoop (30 grams) protein powder

butter

tsp baking powder

tsp Pink Himalayan Salt

Melt the butter in a pyrex measuring cup or small mixing bowl.

Add the rest of the ingredients and combine using a fork.

Preheat you waffle iron and pour 1/2 of the recipe into the iron. Close the lid and cook until cooked and browned. Repeat with remaining batter.

Serve immediately with additional butter or your favorite sugar free maple syrup.

I’ve made a lot of vegan waffles in my time, but these vegan protein waffles may just be my new favorite go-to recipe. Whole wheat flour, plant-based protein powder, vegan vanilla Greek yogurt and JUST Egg give this breakfast treat a surprisingly healthy twist and make them a protein powerhouse!

Vegan Protein Waffle Recipe

whole wheat flour flour (195 grams;6.75 ounces)

“old fashioned” oats

plant-based protein powder

tsp baking soda

tsp salt

plant-based milk

tsp vanilla extract

Make the waffle batter: Add the flour, oats, protein powder, baking soda and powder, and salt to a large mixing bowl and whisk to combine. Create a small well in the middle. In a separate, smaller bowl, whisk the plant milk, Just Egg, vegan yogurt, and vanilla extract. Pour this mixture into the well in the dry mix. Add the melted vegan butter. Stir well to combine, but don’t overmix.

Make the waffles: Heat your waffle maker. Ladle the mixture, a little less than 1/4 cup at a time, onto the hot waffle maker. Cook for approximately 2-3 minutes. Most waffle-makers have a “done” light that lets you know when it’s done.

How to freeze: Alternatively, the pancakes can be kept frozen for up to a month. Allow pancakes to cool completely, then place in an airtight, freezer safe bag. I like to cut some parchment paper squares to place between each so they don’t freeze together.

These actually crispy protein waffles only use 4 ingredients and make a very tasty breakfast!  Use your favorite whey protein powder, eggs, sour cream or Greek Yogurt, and baking powder to make these delicious and healthy waffles in less than 10 minutes.

Heat your waffle iron on medium and spray both plates with cooking spray.  I prefer a mini dash waffle maker as it resembles Eggo waffles!

Mix the protein powder, baking powder, and salt in a large bowl.  Now stir in the egg and Greek Yogurt until fully combined.

Using a ladle or cup, pour batter in the middle of the bottom plate until about 3/4 of the bottom plate has batter on it.  When the top is closed, the pressure will spread the batter to the rest of the spaces.

Be sure to cook the waffle through.  If you open the waffle maker and your waffle is split in half, it needed more time.  This is the same as with regular waffles.  For a crispier waffle, cook them a little past the indicator light.

Serve with butter and sugar free syrup.

Protein Waffles

rolled oats ((25 grams))

vanilla

cinnamon

baking powder

plain greek yogurt

vanilla extract

oil, butter/ghee, or cooking spray,

maple syrup, fruit, chocolate chips, nut butter…

Blend your oats. Add rolled oats to your blender and blend for 15-30 seconds or so until it is broken down into a flour consistency.

Combine your dry ingredients. Add processed oats, protein powder, baking powder, cinnamon, and salt in a small bowl and mix well to combine.

Mix your wet ingredients. In a separate medium bowl, add your egg, greek yogurt, and vanilla extract and mix well to combine. Add your dry ingredients to your wet and mix until combined. Try not to overmix. The batter should be pretty thick. Let the mixture sit for 5 minutes.

Heat up your waffle iron. Pour batter into your waffle iron (the amount will depend on what size you are using) and let cook until crispy and golden brown. You may have to make them in batches depending on how big your waffle maker is.
