Caramelized Onion, Mushroom, Apple & Gruyere Bites

vegetable oil

onion (thinly sliced)

baby bella mushrooms (sliced)

unsalted butter

granny smith apples

sugar

gruyere cheese

chives (minced)

thyme

puff pastry (thawed)

egg (beaten)

Preheat oven to 400 degrees. Line baking sheets with silicone baking mats. Set side.

In a large skillet, heat the vegetable oil and cook the onions (with 1 tsp. of salt) until they're golden brown, about 30 minutes. Remove and set aside in a large bowl. In the same skillet, sauté mushrooms until tender, about 5 minutes. Remove and set aside in the bowl with the onions.

In the same skillet, melt the butter and add in the apples with the sugar. Cook until softened, about 10 minutes. Remove from pan and add to the large bowl with onions and mushrooms.

Add the cheese, chives, and thyme to the bowl and stir to combine the mixture well. Season with salt and pepper, to taste.

With a pizza cutter, cut the puff pastry into 2-inch squares and place them on the lined baking sheets. Using a pastry brush, brush beaten egg on the squares.

Using a tablespoon, place filling in the middle of each puff pastry.

Bake for 25 minutes, rotating the pans halfway through and switching the baking sheet on the top rack to the bottom and the bottom to the top, until the pastry is golden brown and crisp.

Let the tarts cool a bit before serving, you don't want people to burn the roofs of their mouths!

1. Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.2. Toss together the asparagus, olive oil, salt and pepper.&nbsp;3. Roll the pastry sheets out on a floured surface and cut into 8 squares. Place a piece of brie on each square and then add a handful of asparagus. Take 2 corners of the pastry and wrap up and over the asparagus to enclose (see above photo). Transfer to the prepared baking sheet. Repeat with remaining squares. Brush each pastry with egg.&nbsp;Transfer to the oven and bake 20-25 minutes or until golden brown.&nbsp;4. Meanwhile, melt together the honey, butter, and thyme in a small saucepan over low heat.&nbsp;5. Serve the pastries warm, drizzled with thyme honey and crushed red pepper. Enjoy!&nbsp;

Cheesy Asparagus Puff Pastry Bundles

asparagus, woody ends trimmed off

olive oil

oz Gruyere cheese, grated

prosciutto

salt and black pepper,

Preheat oven to 425°F and line a baking sheet with parchment paper.

On a lightly floured surface, roll puff pastry sheets out and cut each rectangle into 6 squares.

Toss trimmed asparagus in olive oil, thyme, and salt and pepper. Set aside.

On each square of puff pastry, arrange a slice of prosciutto (folded in half if needed), 3-4 spears of asparagus, and about 2 tablespoons of cheese.

Wrap bundle by lifting two opposite corners of the puff pastry and wrapping them around the asparagus. Press to seal.

Brush puff pastry with beaten egg, sprinkle with more salt and pepper, and bake until golden and puffed, 12-15 minutes. Serve immediately and enjoy!

chicken breast (shredded)

puff pastry sheet

oz of cream cheese (softened)

mozzarella cheese

pesto sauce

tbsp sun dried tomatoes

garlic powder

Preheat oven to 375F.

In a medium size bowl, combine all ingredients except puff pastry. Mix well.

Put puff pastry rectangles into mini muffin tin.
