The only thing better than loaded nachos are Pulled Pork Nachos! With a few tricks, you can have this appetizer on your table in minutes!

Loaded Pulled Pork Nachos

oz Kroger Carnitas Seasoned Pork (1 container)

oz yellow corn tortilla

oz Mexican Blend Shredded Cheese (I used Kroger (1 bag))

15.25 oz black beans

15.25 oz sweet corn (drained (1 can))

cilantro (chopped)

red onion (finely diced)

roma tomatoes (diced)

lime

sour cream (for serving)

guacamole (for serving)

Preheat oven to 400 degrees.

Start heating Carnitas according to package directions.

Line a baking sheet with parchment paper and spread the&nbsp;entire bag of tortilla chips in one even layer. Sprinkle half of the cheese over top of the chips. Add the black beans and corn.

Shred warm Carnitas, discarding any fat as you go. Add Carnitas to the top of the nachos and then sprinkle with remaining cheese.

Bake 8-10 minutes or until cheese is completely melted. While nachos are cooking, prepare fresh toppings.

Once nachos are finished baking, sprinkle with cilantro, onions, tomatoes, lime wedges, sour cream,&nbsp;and guacamole. Serve immediately.

These incredibly flavorful nachos are served with melted cheese, tomatoes, avocado, a drizzle of spicy sauce, and lime wedges. The pulled pork is the star of this dish, rich and succulent and braised until fork-tender. It can be made ahead, and the nacho tray assembled at the last moment.

Preheat the oven to 350°F (180°C).

On a large baking sheet or oven-safe dish, spread 8 ounces of tortilla chips in a layer. They will overlap, and that is fine.

Sprinkle ½ cup of shredded cheddar cheese over the chips.

Add ½ cup cooked black beans, ½ cup corn kernels and the pulled pork evenly over the chips. Top with the remaining ½ cup of cheddar cheese.

Bake in the preheated oven for 8-10 minutes, until the cheese is fully melted and bubbly.

Remove the nacho bake from the oven and top with ½ cup diced avocado, ½ cup diced tomato and ¼ cup sour cream mixed with 1 tablespoon lime juice to make it more fluid. Garnish with chopped or whole fresh cilantro and jalapeño slices if desired, and serve immediately.

Preheat oven to 400 degrees F. Spread chips out on a prepared baking sheet. I used parchment paper, but you could also use foil.

Place pulled pork over chips.

Add on the red onion slices.

Sprinkle on your cheddar and Monterrey Jack cheese, and drizzle a couple tablespoons ( 2-4 depending on taste) of BBQ sauce on top.

Bake for 5-10 minutes until cheese is melted. Add optional toppers and serve immediately.

Excellent! My husband is not a real fan of pork, but he LOVED this recipe. We had it for dinner, and he wanted it the next day, too! Very easy to make. Definitely a keeper.

When you say 'Optional toppings  - Ranch Dressing... You're meaning the actual dressing, and not the dry dressing mix right?

Heat a large sauce pan over medium heat and add the pulled pork. Heat for about 5 minutes or until warmed through.

Lay out the tortilla chips single file across the baking sheet.

Top with the shredded cheese, pulled pork, black beans, red pepper and black olives.

Bake at 400ºF for 8-10 minutes.

Remove the tray from the oven and top with cilantro, sour cream and pico de gallo.
