Pumpkin Oatmeal Pancakes taste just like pumpkin flavored chocolate chip oatmeal cookie. The batter is easy to whip up in a blender for a quick and delicious brunch pancake stack.

Pumpkin Oatmeal Pancakes Recipe

eggs

pumpkin puree

milk

honey

peanut butter

coconut oil (melted)

vanilla extract

whole wheat flour

baking powder

pumpkin pie spice

salt

rolled oats

chocolate chips

Place all ingredients (except oats and chocolate chips) in a blender and pulse until well combined. Or place the ingredients in a large bowl and whisk vigorously by hand or with a hand mixer.

Fold in the rolled oats and chocolate chips by hand.

If the batter seems too thick or too runny adjust by adding 1/2 tablespoons of milk or 1 tablespoon flour at a time until right consistency is achieved.

Heat a griddle or non-stick pan on medium-low heat and lightly grease it. Use about 1/4 cup of batter per pancake. Carefully flip once the edges are set. Repeat with remaining batter. Regrease as necessary.

Makes 10-12 smaller, thick pancakes. Serve with extra chocolate chips, a dollop of butter and/or maple syrup.

Healthy Pumpkin Oatmeal Pancakes

Add all of the ingredients to a blender and blend on high until completely smooth, about 30 seconds to 1 minute.

Lightly coat a griddle with coconut oil, vegan butter or olive oil and place over a medium heat. Once the pan is hot, add about 1/3 cup of the batter to the griddle for each pancake; the batter may be thick so you&#x27;ll need to use a spoon to spread out the batter a bit. It will get thicker as it sits so be sure to cook these pancakes immediately after blending. Cook for 2-4 minutes until pancakes slightly puff up and you see a few bubbles along the edges.

Flip cakes and cook until golden brown on underside. If you find that pancakes are browning too quickly, then you need to lower the heat. I normally start on medium heat, then reduce to medium low later so that my pancakes don&#x27;t burn. If at any point your griddle starts smoking, it means your pan is way too hot. Wipe skillet clean and repeat with more oil and remaining batter. Makes 6 pancakes total. Serves 3, 2 pancakes each.

Easy Pumpkin Pie Spice Pancakes {with Protein}

liquid egg whites

100% pure pumpkin puree ((can use canned or fresh))

vanilla protein powder ((optional))

apple,

water, (or more if you prefer)

Sprinkle of chopped pecans

In a blender, mix together all of the ingredients for the pancakes until combined and smooth. Add a tablespoon or so of milk, as needed, if the batter seems too thick to pour (it thickens as it sits). 

Preheat griddle or non-stick frying pan to medium high. Spray with cooking spray. Using a tablespoon, scoop pancake mixture on the pan so it forms a medium circle (use about 2 heaping tablespoons for each pancake).

Cook for 4-5 minutes on the first side or until edges start to harden and bubbles start to form on surface. Flip and cook for an additional 1-2 minutes on the other side.

Meanwhile, to make the apple topping, place a small saucepan over medium heat. Add the apples, cinnamon, maple syrup and water. Cook until apples have softened and mixture has caramelized, about 5 minutes. Serve warm on top of pancakes with a sprinkle of pecans or walnuts, if desired.

So good. Almost better than my regular pancakes. Not dry at all which a lot of protein powder recipes are. Can’t wait to make again!

Followed the recipe exactly &amp; these are great! I made them for my family &amp; everyone enjoyed them, including my 6 &amp; 2 year old. I topped with a few chocolate chips &amp; a drizzle of maple syrup &amp; they are perfect! I usually make pancakes similar to these but I blend the oats separately which requires an extra step so I figured I’d give these a go &amp; it worked wonderfully! I wanted to throw in a bit of yogurt &amp; cottage cheese for extra protein but forgot so I’ll try next time. Though these are delicious as-is

These were a hit in my home!!  Will be great to throw in the breakfast rotation on the weekends or an easy cozy dinner too!  Left out the protein powder as I didn't have any, still so healthy even though they tasted like a treat!
