Creamy, naturally sweetened pumpkin spice overnight oats that are also vegan and gluten-free (as long as you use plant-based milk and gluten-free oats!). It’s a quick and easy breakfast (or snack) to prepare during weekend meal prep for the week ahead.

Pumpkin Spice Overnight Oats (No Yogurt)

(180 milliliters) milk (of choice, see note below)

¼ cup (60 grams) unsweetened pumpkin puree

maple syrup

(75 grams) rolled oats

hemp hearts

flax seeds

pumpkin pie spice (see note below)

Mix wet ingredients.

Add milk, pumpkin puree, and maple syrup to a small bowl or measuring cup and mix well until everything has combined. Set aside.

Mix dry ingredients.

Add rolled oats, hemp hearts, ground flax seeds, and pumpkin pie spice to a medium-sized mason jar or a small container with a lid and mix.

Combine wet and dry ingredients.

Pour the wet ingredients into the dry ingredients and mix well until there are no dry ingredients left.

Refrigerate.

Place the jar in the refrigerator for at least 6 hours or up to four days.

Serve.

Serve plain or with the toppings of your choice.

Cranberry Pumpkin Steel Cut Oats

cranberries

Tbsp orange juice ((or sub water))

Tbsp maple syrup ((more to taste, or sweeten more with stevia))

water

steel cut oats ((gluten free for GF eaters))

pumpkin purée ((not pie mix))

Tbsp coconut sugar

tsp cinnamon

pumpkin pie spice ((plus more to taste))

ginger

Tbsp flaxseed meal ((optional))

Coconut Whipped Cream ((or coconut cream))

pecans

Preheat oven to 400 degrees F (204C) and add cranberries to a small baking dish, along with orange and maple syrup. Toss to combine and set aside while the oven preheats.

To a medium saucepan, add water and almond milk and bring to a boil. Once boiling, add oats and pumpkin purée and stir. Lower heat to a simmer, cover, and let cook for about 15-20 minutes, depending on how soft you prefer your oats (I like mine with a little bite so tend to cook them less).

Add cranberries to the oven and bake for about 15-20 minutes total, or until burst and tender. Once cooked, stir with a spoon and taste to see if it needs any more sweetness (I added a bit of stevia extract).

Once the oats have finished cooking, remove from heat and add coconut sugar, cinnamon, pumpkin pie spice, ground ginger, and flaxseed meal (optional). Stir to combine, adding a little more almond milk if too thick. Taste and adjust flavor as needed, adding more coconut sugar (or stevia) for sweetness, or spices for warmth.

To serve, divide oats and cranberries between two serving bowls. Enjoy as is or add a spoonful of coconut cream (or coconut whipped cream) and toasted pecans. Best when fresh, though leftovers keep in the refrigerator for a few days. Reheat on the stovetop (or the microwave), adding more almond milk or water as they tend to dry out once refrigerated.

Pumpkin Spice Latte Overnight Oatmeal

(160 g) rolled oats; gluten-free if necessary

(160 g) quick-cooking oats (for a creamier texture,

(42 g) ground flax seed

pumpkin

vanilla extract

(475 ml) brewed coffee (or sub more milk)

(235 ml) non-dairy milk; I used coconut milk

pumpkin pie spice

lemon (1 to 2 tablespoons)

Pumpkin Mix: add the coffee, non-dairy milk, pumpkin, maple syrup, lemon juice, pumpkin pie spice, and vanilla to a large bowl. Whisk until combined.

Oatmeal: add in the oats and ground flax, then mix well. Let the mixture sit for a few minutes to thicken, then divide it evenly among mason jars or similar containers. Top as desired.

Enjoy immediately, or store in the refrigerator for up to 5 days.

dairy-free milk (of choice)

pecans (to decorate)

You can watch the video in the post for visual instructions.Preheat the oven to 375 °F (190 °C).

Add all dry ingredients to a baking dish and stir with a spoon.

Add the wet ingredients and stir to combine.

Transfer the dish to the oven and bake for 35 minutes, or until the edges are golden, and the center has set.

Finally, allow the pumpkin oatmeal bake to cool and optionally frost it with cashew cream, and decorate with whole pecans. Enjoy!

Recipe works great, I make this every weekend now that it's fall! Especially delicious with some apples and pumpkin yogurt on top.
