In a pan, heat butter and oil over medium heat. Cook the shrimps until all sides are done. Remove the shrimps from butter and set aside.

In the same pan with butter, saute garlic and onion until tender. Next, add the carrots and green peas. If using canned green peas then this should be added at the end. Mix in the ham and cook for 2 minutes. Add 1/2 cup of water, cover and let simmer until carrots are almost cooked.

Add the quail eggs, shrimp and singkamas or kohlrabi then pour in the all-purpose cream and stir. Season with salt and peppers and let it simmer under medium heat for about 3 minutes.

Add the cornstarch mixture and mix for about another 2-3 minutes or until the sauce thickens.

Serve warm and enjoy.

To make the dressing, whisk all the ingredients together in a bowl with some seasoning or place them in a screwcap jar and shake well. Can be made up to 2 days in advance. Cook the potatoes in plenty of boiling water for 10 mins until just tender. Drain, cool slightly, then slice.

While the potatoes are cooking, blanch the green beans in plenty of boiling water for 4 mins until cooked but still with a slight crunch, drain, refresh in iced water to stop them cooking further, then drain again. Cook the quail’s eggs for 3 mins. Drain, place under cold water, then peel and halve. Flake the salmon into large chunks into a bowl and slice the spring onions. All these jobs can be done in advance. Just before serving, halve, peel and slice the avocados.

This is a layered salad rather than a tossed salad, so start by scattering the watercress and chicory over a platter. Scatter different handfuls at a time of all the other ingredients (but not the mustard cress) so that they are evenly distributed. Drizzle over two-thirds of the dressing, then strew over the mustard cress. Serve with the remaining dressing on the side.

I bet this red braised pork belly (红烧肉) is most Chinese people&#39;s favorite childhood dish. The savory, glossy, and sticky sauce of this dish can totally turn everyone into a RICE KILLER! Our grandparents always make the best 红烧肉! I have adjusted this recipe for years and finally perfectly duplicated my grandpa&#39;s red braised pork belly. By blanching the pork belly for 30 minutes before pan frying and pan-frying the pork belly without cooking oil, we can get rid of extra oil from the meat and make the meat extra tender.

Put 16 quail eggs in a small saucepan. Add cold water to cover eggs by one inch. Bring to a boil. Once the water is boiled, simmer over medium low heat for 7 minutes.

Transfer the hard boiled quail eggs to a bowl of iced water. Leave eggs in the ice bath for 5 minutes for easy peeling.

Peel the quail eggs. Set aside.

Prepared quail eggs (This step is optional if you don&#39;t want to add quail eggs to this dish.)

Cut pork belly into 1 inch cubes. Put them into a pot and fill with cold water. Boil over high heat. Once boiled, skim off the froth if there is any.

Add 2 green onions and 3 slices of ginger into the pot. Put the lid on, simmer the pork belly over low heat for 30 minutes. (Most recipes do not have this step. This is the most special and important part from my grandpa&#39;s secret recipe! With this simmering step, the pork belly will be less oily and much tenderer!)

Drain the pork belly. Dry them up with kitchen towels.

Layer the pork belly cubes in a frying pan, pan fry over medium heat until each side turns golden brown and a little crispy. (Do not add cooking oil at this step. Pork belly will release oil.)

Transfer the pan fried pork belly cubes to a dutch oven pot. (There should be a layer of pork oil (lard) in the frying pan. You can pour the lard into a clean jar, and save it for other dishes. Lard is perfect for cooking Chinese style noodles.)

Add 2 green onions, 3 slices of ginger, ¼ cup brown sugar, ¼ cup cooking wine (Shaoxing wine), ¼ cup light soy sauce, and 1 tablespoon dark soy sauce to the dutch oven pot. Add hot water until barely cover the pork belly cubes.

Cook over medium high heat until boiled. Put the lid on. Turn to medium low heat to simmer for 1 hour.

Remove the lid. Add peeled quail eggs to the pot. Stir to cover the eggs evenly with the sauce.

Leave the pot uncovered, use medium heat to thicken the sauce for 10-15 minutes, until all the pork belly cubes and eggs are coated in glossy sauce, and there is barely no liquid left in bottom of the pot.

Serve with steamed rice and vegetables of your choice.

Using the simple ingredients of high-quality eggs and fine kosher salt, these hardened egg yolks make for an easy burst of flavor to grate over anything from pizza and pasta to popcorn.

Crack the eggs and separate the yolks from the whites. Reserve the whites for later use.

Pour about 1/2&quot;-3/4&quot; of salt into a bowl or tupperware large enough to fit all four yolks widthwise with at least 1/2&quot; space in between. Using your finger, create little impressions in the salt for the yolks, making sure to leave some salt at the bottom of the depression and not scratching the bowl bare. Carefully place the yolks into their depressions, then cover completely with salt. Seal or wrap with plastic wrap and place in the fridge undisturbed for one week.

After one week, remove yolks from fridge. Carefully comb through the salt and brush the yolks free from the majority of the salt.

Wrap yolks loosely in cheese cloth and allow to air dry or &quot;cure&quot; in the fridge 1 to 2 more weeks, or until thoroughly hardened. (Note: They may be a little tacky but should be completely firm.) These keep almost indefinitely in an airtight container, and can be grated over a dish to accentuate umami flavors.

Make 1 quantity shortcrust pastry (see related recipe), adding parmesan to the flour and butter in step 1.

Step 2

Heat oil in a medium non-stick frying pan over high heat. Add bacon and cook, stirring, for 5-6 minutes or until golden. Drain on paper towel.

Step 3

Cook spinach in salted boiling water for 20 seconds or until it wilts. Refresh in iced water. Drain, then wrap in a clean tea towel and squeeze to remove as much liquid as possible. Combine spinach and cream in a food processor. Season with salt and pepper and process for 1-2 minutes or until smooth. Set aside.

Step 4

Preheat oven to 200°C. Grease and flour nine 6cm-diameter (base measurement) tartlet tins. Use a round 6.5cm-diameter pastry cutter to cut pastry into 18 discs. Place on an oven tray lined with baking paper. Place in the fridge for 15 minutes.

Step 5

Working with 9 pastry discs at a time, place 1 disc into each tartlet tin and use your thumbs to press the pastry so that it sits 5mm above the edge of the tin. Prick bases with a fork, then place another nine tartlet tins on top, pressing down to sit neatly inside the pastry cases. Bake tartlets in oven for 10-15 minutes or until lightly golden. Remove tartlet cases from tins and set aside. Grease and flour tartlet tins and repeat with remaining pastry discs.

Step 6

Spoon 1 teaspoon of spinach mixture into each pastry case and make a well in the centre. Crack 1 quail egg into each tartlet, top with a tablespoon of bacon and sprinkle with smoked paprika. Place tartlets on a heavy-based oven tray, then bake for 8 minutes or until egg is just set. Remove tartlets from cases and serve warm.
