An easy queso dip recipe, made in one skillet, combines chorizo, cilantro, 3 cheeses and fresh pico de gallo – perfect for entertaining!

Easy Skillet Queso Dip Recipe

oz chorizo (if in links, remove the casings)

olive oil

Tbs all purpose flour

milk

oz Oaxaca cheese

cilantro (chopped)

oz sharp cheddar (shredded)

oz mexican blend cheese (shredded)

Roma tomatoes

onion

jalapeño

tsp garlic

lime

Salt and pepper

FOR THE QUESO DIP

Cook the chorizo in a cast iron skillet until fully cooked, about 5 minutes.

Remove the cooked chorizo and set aside.

Add the olive oil to the skillet and whisk in the flour to make a roux. Cook for 30 seconds, then whisk in the milk.

Continue to cook until the mixture thickens.

Turn the heat to low, and add the chorizo back into the skillet, as well as the Oaxaca cheese chunks, and the cilantro and the Tillamook Farmstyle Cut Mexican 4 Shredded Cheese.&nbsp; Mix until well combined.

Top with Tillamook  Farmstyle  Cut  Sharp  Cheddar  Shredded  Cheese.

Place under the broiler until the top is bubbly.

Remove from the oven and allow to cool 5 minutes before serving with Pico de Gallo and corn chips.

Devour.

FOR THE PICO DE GALLO

Chop all ingredients finely, and combine in a bowl, testing for seasoning and adjusting.

Mine turned out great! I used Velveeta instead of American cheese and it was delicious.

Just made this for my sons birthday and it turned out great! I only followed the cheese instructions, not the vegetable instructions because it was for dipping soft pretzels. I used American, Havarti and Cheddar. I also used Cashew milk instead of regular milk.

I use sliced deli cheese rather than shredded Cheese and it worked out really nicely

This is a fantastic recipe.   I missed the green chillies but it still turned out great.    I opted to add some more milk for the consistency (because I used more cheese).  Thanks a lot!

I think that i will try velveeta  cheese next time. I used what ever i had in the refrigerator. It took and took a while to melt and get it thicker.I had to add more cheese to make it more thick. I also didn't have some the other ingredients but it turned out pretty good.

This is the worst tasting Queso ever. followed the recipe to the dot. Looks really good. But it tastes so bad. Do not use this recipe would rather just eat the brick of cheese.

This recipe was perfect for me. Dont know why so many had trouble. I could have warned you all not to use cheddar. You can make queso from cheddar but you really gotta know what you're doing. I used boar's head american and pepper jack from the deli and it was great. Always have used velveeta in the past but trust me this american recipe is way better

My beef queso dip recipe is made with a combination of 2 creamy and gooey cheeses, plus salsa and ground beef. It’s the ultimate party food!

Beef Queso Dip Recipe

beef ((90/10))

tsp kosher salt

tsp chili seasoning

tsp cumin

garlic powder

butter

all-purpose flour

pepper jack cheese (shredded)

cheddar cheese (shredded)

Pace Salsa Medium ((or salsa of choice))

tortilla chips

tbsp Cotija cheese (crumbled)

In a large skillet over medium heat brown the ground beef seasoned with salt, chili powder, cumin and garlic powder. Remove meat from skillet and set aside.

Make the roux to thicken your sauce by melting butter in skillet over medium heat and add the flour. Stir with whisk and continue to cook for 2 minutes. Whisk in milk and continue to cook on low for 3-4 minutes until thickened.

Whisk in the cheeses until smooth. Add the salsa and seasoned, browned beef (with accumulated juices). Simmer on low for 5 minutes.

Serve warm with tortilla chips and garnish with chopped cilantro and crumbled Cotija cheese.

White Queso Recipe

½ -1 jalapeño minced (to taste)

chicken broth

Add olive oil to a small skillet over medium heat. Saute onion and minced jalapeno.  Turn heat to low and add shredded cheese and milk.  Stir continuously until the cheese is melted.  Slowly stir in enough chicken broth to thin it out to the desired consistency.

Stir in fresh chopped cilantro and finely diced sun-ripened tomatoes. Season with kosher salt and freshly ground black pepper to taste. Garnish with fresh chopped cilantro or a little Pico de Gallo.
