A healthy and lighter alternative to the traditional beef and red bean chili. Made with chicken breasts, white beans, and topped with a cilantro cumin sauce.

White Chicken Chili Recipe {with Cilantro Sauce}

olive oil

onion (, chopped)

garlic (, minced)

jalapeño peppers (, minced)

oregano

cumin

white pepper

In a large dutch oven over medium heat, sauté onions and garlic for 2 minutes. Add the minced jalapeños, oregano, cumin, and white pepper and cook together with the onion/garlic mixture for another minute.

Increase heat to medium-high and add the chicken broth, chicken, and beans to the pot. Stir well and bring to a boil. Reduce heat to medium-low and cook, uncovered, for at least 30 minutes.

FOR THE CHILI:

Place all ingredients in a small food processor or blender and process until smooth. Add more lime juice or water if need to thin out.

To serve: place chili in bowls and top with cilantro sauce, shredded cheese, and/or extra minced jalapeños.

Quick Chili Recipe (23 Minutes!)

kidney beans, drained and rinsed

chili powder

garlic powder

onion powder

water (or broth), optional

Mexican hot sauce (we like Cholula), optional

For topping: Shredded cheese, sour cream

Heat the olive oil over medium heat in pot or Dutch oven. Cook the onion for 4 to 5 minutes until translucent.

Stir in the veggie crumbles and cook 1 more minute. Add the diced tomatoes and their juices, drained and rinsed kidney beans, chili powder, oregano, garlic powder, onion powder, cumin, and kosher salt.

Bring to a simmer and simmer for 15 minutes. If it&#8217;s very chunky, add up to 1 cup water or broth: all brands of diced tomatoes and veggie crumbles have different levels of moisture.

Taste and add a few pinches kosher salt and some shakes of hot sauce to taste. Serve warm garnished with your favorite chili toppings.  

I hardly ever write reviews. The chili itself was delicious but those BEYOND BEEF CRUMBLES are BEYOND AWFUL!  I will use the recipe again but I’ll use real ground beef next time. And I think beans are great in chili.

I made this recipe last night ..We absolutely Loved it !!! I was able to find enough fire roasted tomatoes in my pantry thank goodness because the flavor was great !! I loved the beef, not a fan of the meat substitute but next time I think I may try ground Turkey ! Thank you for this recipe ❤️

Easy Chili Recipe (Only 6 Ingredients!)

beef

chili seasoning (store-bought or homemade (1 packet))

kidney beans (fully drained and rinsed (2 (15-ounce) cans))

beef broth

Sour cream

Shredded cheese

Crackers

onions

jalapeños

Heat

Heat beef in a dutch oven over medium high heat, crumbling as it cooks.

Stir

Once beef is crumbled, stir in the chili seasoning and continue to stir while it cooks.

When beef is no longer pink, stir in the beans, salsa, beef broth, and cilantro. Stir to fully combine.

Simmer

Reduce heat to simmer and allow to cook for 15-20 minutes.

Serve

Just made this.  It was soo easy.  The grandkids ALL loved it including 2 of my picky eaters.  Will make this again soon.  Great for the cold weather.

Just made this for dinner and it was very easy and delicious!  Used Aldi’s chili seasoning packet and Chi Chi’s medium chunky salsa.  Didn’t add cilantro but served with cheese and sour cream.

So easy and so delicious!  I skipped the chili seasoning and used Bushes chili beans therefore no rinsing.   I used less beef broth because of my beans.  I like Aldi’s organic salsa.

I really enjoyed this recipe! I made it with half ground beef, and half turkey, mild chili seasoning, and mild salsa. I had to use cilantro from a tube, because that’s what I had on hans. It was so easy to make, it felt like I was cheating. I’ll definitely be making this one again.
