Rainy days and soup go hand in hand. If you're a mushroom lover like me, you'll love this easy savory and creamy chicken and mushroom soup. Done in 30 minutes!

Creamy Chicken and Mushroom Soup

water

tbsp flour

celery

oz shiitake mushrooms (sliced)

oz baby bella (sliced)

tsp Chicken Better Than Bouillon (or to taste)

unsalted butter

oz skinless chicken breast

parsley (chopped)

Place cold water and flour in a blender and blend until smooth; pour into a medium pot and set heat to medium.

Add celery, mushrooms, chicken bouillon and butter and bring to a boil.

Add chicken, cover and simmer on low 15 minutes, or until chicken is cooked through.

Remove chicken and set aside; continue to cook the remaining soup an additional 5 minutes, until vegetables are soft.

Place celery and 1 cup of soup into the blender; blend until smooth, then return to the pot and simmer a few minutes.

Shred or cut the chicken into small pieces and add back to the soup, garnish with fresh parsley.

Delicious and hearty, this Instant Pot ham and bean soup is simple and easy to make and ready to serve in 20 minutes. It&#039;s the perfect way to warm up in the cold weather.

Instant Pot Ham and Bean Soup Recipe

Prep

Set the Instant Pot to the “saute” function. When hot, add the olive oil and let it get hot.

Saute

Add the chopped carrots, celery, and onion and saute, stirring occasionally, until the onion starts to soften, about 3-4 minutes.

Cook

Add the ham and garlic and continue cooking for another minute or two.

Add the chicken broth, beans, soy sauce, vinegar, poultry seasoning, thyme, salt, and bay leave.

Manual

Press “cancel” to turn off the “saute” function and use the “manual” and “+” and “-” buttons to set the time for 5 minutes (high pressure).

Release

Once the Instant Pot has beeped and the timer finishes, carefully turn the valve to let the pressure out.

Remove

Carefully open the lid and remove the bay leaf.

Garnish

Serve

Serve with cornbread or corn muffins. Best when served warm.

Classic Tortilla Soup from Delish.com is a simple a delicious soup that's perfect for fall. 

Classic Tortilla Soup

onion,

jalapeno, seeds removed, minced

garlic,

c. shredded cooked chicken

c. corn kernals

Kosher salt

black pepper

tbsp. chili powder

oregano

cumin

tomatoes

In a large pot over medium heat, heat oil. Add onion and cook until soft, 5&nbsp;minutes. Add jalapeño and garlic and cook until fragrant, about 1&nbsp;minute&nbsp;more. Stir in chicken and season with salt, pepper, chili powder, oregano, and cumin and stir to coat.

Add tomatoes and chicken broth. Stir soup to combine, add corn, lime juice, and bay leaf and bring to a boil. Reduce to a simmer and let simmer until slightly reduced, about 15 minutes.

While soup is simmering, make crispy tortilla strips: In a large skillet over medium heat, heat a 1/8“ layer of oil. Once shimmering, add tortilla strips and cook, in batches, until golden and crisp, 2-3 minutes. Transfer to a paper towel-lined plate and immediately season with salt.

Remove bay leaf, and serve soup with crispy tortilla strips, avocado, cheddar, and cilantro.

Very delicious.  If you leave out the tortilla strips it’s not tortilla soup.  I might try adding a can of black beans next time I make it.

Came out great -- I skipped the tortilla chips and cheese to keep it healthy -- also added a can of chick peas.  Will definitely make again.
