Firecracker salmon is coated with a sweet and spicy sauce, which is such a great partner to the richness of the fish. 

One-Pan Firecracker Salmon

(6-ounce) salmon

garlic

brown sugar

sauce,

apple cider vinegar

kosher salt, divided

red pepper flakes

olive oil

scallions

Let 4 salmon fillets sit at room temperature while you prepare the sauce. 

Mince 2 garlic cloves. Place the garlic, 3/4 cup packed light brown sugar, 1/2 cup hot sauce, 1 tablespoon apple cider vinegar, 1/2 teaspoon of the kosher salt, and 1/4 teaspoon red pepper flakes in a small saucepan over medium heat. Bring to a boil, stirring to dissolve the sugar. Reduce the heat to low and simmer until slightly thickened, about 10 minutes. Stir and remove from the heat. The sauce will thicken as it cools. 

Pat the salmon fillets dry with a paper towel and season all over with the remaining 1 teaspoon kosher salt. Heat 2 tablespoons olive oil in a large cast iron or non-stick skillet over medium-high heat until shimmering. Add the salmon skin-side up and and sear until golden-brown on the bottom, 4 to 5 minutes. 

Flip the salmon with a metal spatula. Cook for 2 minutes. Pour the sauce evenly over the salmon and continue to cook, occasionally using a spoon to baste the salmon with the sauce, until the salmon is just cooked through cooked, about 2 minutes more.

Serve with the sauce from the skillet spooned over the salmon and sprinkled with scallions.

A delicious broiled flounder recipe that lets the natural flavor of the mild fish shine through.  the fish is first brushed with lemon juice then topped with a coat of parmesan, butter, mayo, and green onion.

Parmesan Topped Broiled Flounder

flounder

lemon juice

parmesan cheese

butter. softened

Tbsp. mayonnaise

green onions. chopped

sea salt

hot sauce (or more if desired)

Place fish fillets in a single layer on aluminum foil lined shallow baking pan that&#39;s been sprayed with a vegetable cooking spray. You may also use a mild drizzle of olive oil or melted butter. You don&#39;t need to season fish. Just brush the fillets with the fresh lemon juice.

In a medium bowl, combine remaining ingredients to make the cheese mixture. Set aside

Broil fillets 4 to 6 minutes or until fish flakes easily when tested with a folk. (The time will depend on the thickness of your fillets and the temperature of the broiler.)

Remove fillets from oven and spread with the Parmesan mayo mixture.

Broil and additional 45 seconds to one minute or until cheese is lightly browned and bubbly. Be careful so that it doesn't burn.

Garnish the mild white fish with lemon slices and parsley, if desired.

This is such a delicious combination of flavors with the flounder! The parmesan adds a wonderful savory element to this dish!

Flounder is one of my favorites and I'm always looking for new ways to prepare it. This recipe was delicious. It's a keeper!

All I have to say is WOW, and this Parmesan Broiled Flounder was some of the very best flounder I have had. I found this recipe on Pinterest, and it looked delicious, so I ventured off the fish market and picked up flounder. 

The whole family scarfed this down, and I wished I had made more. I loved the instructions too---those were spot on and perfect.

Flounder is a rather popular school meal dish in Italy and being a school meal it usually is rather bland. Can't wait to have it in a more interesting and flavourful way!

What a delicious way to enjoy flounder! So easy to make and delicious

I couldn't find flounder but made this with cod. It was so simple but delicious!

This was so delicious, I loved the addition of mayo and subbed haddock because it is easier for me to access here.

We eat our share of seafood too, but I've never made flounder before. Will have to try!

The enticing puttanesca sauce is an aromatic and flavorful tomato sauce that has a bold combination of flavors -- anchovies, olives, capers and garlic.

Puttanesca Sauce over Fettuccini

dry fettuccini

anchovy anchovy paste}

14.5 ounces cans (3 cups canned diced tomatoes with juice)

Tablespoons oi-packed sun-dried tomatoes (minced)

balsamic vinegar

kalamata olives (pitted and slivered)

oregano

parsley

Tablespoons brined capers (drained and rinsed.)

Salt

For the pasta, bring a large pot of salted water to boil over high heat. Meanwhile, heat a large saute pan over medium heat. Add the olive oil, garlic, anchovies,  and red pepper flakes. Stir cooking for 30 seconds -- you will smell the anchovies but it will not leave a strong taste.

Add the tomatoes, sun-dried tomatoes, brown sugar, and vinegar; stir to combine. Simmer sauce until slightly reduced, about 15 minutes. While the sauce simmers, prepare olives and herbs; pour capers into a small dish -- it's easier to measure them that way.

Meanwhile, add the fettuccini to the boiling water; stir to prevent them from sticking. Cook pasta until al dente (refer to package for times) Before draining, remove 1/4 cup cooking liquid to thin the sauce if needed.

Finish the sauce with the olives, herbs, capers, green onions, and salt, plus some pasta water if the sauce seems too thick. Transfer the sauce to a large shallow bowl and top with the drained pasta. Toss until pasta is evenly coated with the sauce.

Sprinkle the remaining green onions on the pasta or around the plates.

I made this for dinner this evening. Very tasty!

I love, love, love puttanesca!  Will have to try your recipe. Can anything be bad if it contains olives, capers, and anchovies??  Yum.  Just thinking about it makes my mouth water!
