Easy Sweet Potato Black Bean Quinoa Bowls drizzled with a zesty Cilantro Lime Crema. This fresh vegetarian meal is filled with roasted sweet potatoes, black beans, quinoa, roasted red peppers and corn. 

Easy Sweet Potato Black Bean Quinoa Bowls with Crema

potatoes,

olive oil

cumin

smoked paprika

garlic powder

salt

water

dry quinoa

red peppers, thinly sliced

red onion, thinly sliced

optional: jalapeno, sliced

avocado, sliced

cilantro

plain greek yogurt

red wine vinegar

lime juice

honey

dijon mustard

red pepper flakes

garlic

salt & pepper

In a small bowl, add olive oil, 1 teaspoon cumin, 1/2 teaspoon smoked paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon salt. Mix together.

In a large bowl, add sweet potatoes and the olive oil seasoning. Toss to coat the potatoes with the mixture.

Spread the sweet potatoes on a baking sheet in a single layer.

Bake for 20 minutes. Remove and set aside.

In the meantime, rinse quinoa with water. Then add 2 cups of water and quinoa to a small sauce pan. Bring to a boil. Then cover and reduce to simmer for 15 minutes or until liquid is evaporated. Remove from heat and fluff quinoa with a fork.

To a small food processor add fresh cilantro, greek yogurt, red wine vinegar, lime juice, olive oil, honey, dijon mustard, red pepper flakes, ground cumin, smoked paprika, garlic clove, salt and a pepper to taste. Blend until smooth and cilantro is finely chopped.

Assemble the Sweet Potato Bowls. To a large bowl add quinoa, sweet potatoes, black beans, roasted red pepper, red onion, avocado, corn and then drizzle with dressing. (optional sliced jalapenos)

Very yummy!  Al the flavors go well together. A balance of sweetness combined w spicy.

The cilantro lime crema doesn't have any lime. (Bowl is even better with roasted pepper and onion. Black beans and corn are good with a little roasting, too.)

Sweet Potato Black Bean Quinoa Bowls

A delicious, filling, meatless meal that will please everyone!

Sweet Potato and Black Bean Quinoa Bowls

potato

extra virgin olive oil

chili powder

red quinoa

lime

cilantro (chopped)

plain non fat Greek yogurt

agave nectar or honey

salt (garlic powder, and chili powder)

black beans

Preheat oven to 425 degrees then line a baking sheet with foil and spray it with cooking spray.

Toss the diced sweet potato in the olive oil and spices and lay it out in an even layer on the prepared baking sheet. Roast the sweet potato for 12-15 minutes or until it is fork tender.

Roasted Sweet Potato:

Rinse and drain the red quinoa then put it in a medium sized sauce pan with the water and 1/4 teaspoon of kosher salt. Bring the quinoa to a boil, then cover it with a lid and lower the heat to medium low. Cook the quinoa for about 15 minutes, until all of the liquid is absorbed.

Remove quinoa from the heat and season with the remaining 1/4 teaspoon of kosher salt, chili powder, cumin, garlic powder, lime juice, and cilantro.

Quinoa:

In a blender add all of the ingredients and blend until smooth.

Cilantro Cream Drizzle:

In 2 or 3 serving bowls divide the quinoa mixture. Top the quinoa with the black beans and roasted sweet potato. Drizzle the cilantro cream on top with a spoon. Top with more cilantro if desired.

These healthy meal prep quinoa bowls are packed with protein and flavor. With chipotle baked tofu, avocado, tomatoes and more!

Meal Prep Chipotle Tofu Quinoa Bowls

block ((16 oz) extra firm tofu)

chipotles in adobo (, sauce ONLY)

tomato paste

quinoa

Chipotle Tofu

greens

avocado (, quartered)

cherry tomatoes (, chopped)

Olive oil

Preheat the oven to 400ºF. Line a baking sheet with parchment paper and set aside.

Cut the tofu into cubes and set aside.

In a large mixing bowl, combine the rest of the tofu ingredients. Stir together to form a sauce, thinning with a splash or two of water. Add the cubes of tofu into the bowl and toss everything together. The tofu should be fully coated in the sauce.

Bake for 40 minutes, flipping halfway through, until the sauce has caramelized on the tofu.

Once ready to assemble, divide everything evenly between four bowls or containers (minus the avocado – serve that day of). Just before serving, drizzle with lime juice and some olive oil and enjoy!

Pulse all the ingredients for the sauce in a food processor or blender until mostly smooth. The texture should be thick and textured (see picture).

Cook the quinoa according to package directions (I always do mine in a rice cooker while I get everything else ready). When the quinoa is done, build yourself a Mediterranean Quinoa Bowl!

Store leftovers in separate containers and assemble each bowl just before serving, especially the greens and the sauces, as those will get soggy when stored with all the other ingredients.

Mediterranean Bowls with Red Pepper Sauce

We'll take this warm quinoa and arugula bowl, topped with herb-crusted chicken, olives and tomatoes, for lunch any and every day.

Chicken Quinoa Bowls

chicken breast

herbes de Provence

c. red quinoa

c. Champagne vinegar

green onions

Dijon mustard

c. packed arugula

c. pitted green olives, quartered

grape tomatoes, halved

These quick and easy Lemon-Chili Shrimp Avocado Quinoa Bowls are great for lunch or dinner, or make them ahead for meal prep!

Lemon-Chili Shrimp Avocado Quinoa Bowls

quinoa (tri-color

broth

shrimp (peeled and deveined (20 ounces))

olive oil (divided)

lemon (divided)

oregano

parsley

red chili flakes (or more to taste)

black pepper (to taste)

avocado

romaine lettuce greens

tomato

Cook the quinoa: Bring broth to a boil in a medium heavy pot. Rinse quinoa under cold water and drain well. Lower heat and cook, covered, for 25 minutes. Turn off heat and let rest, covered, for 5 minutes. Fluff with a fork.

For the shrimp: While the quinoa is cooking, add 2 teaspoons of the olive oil, half of the lemon juice, half of the lemon zest, oregano, parsley, garlic, chili, salt and pepper to a small bowl and mix well.  Add the shrimp and toss.

Heat a grill pan or heavy skillet over high heat. When hot, spray with oil and add the shrimp. Cook 2 to 3 minutes on each side.

Divide greens into 4 large serving bowls on one half of the dish.

Add half the quinoa to the other half, then top with shrimp, avocado, tomato, and onion.

Drizzle each salad with 1 teaspoon of the remaining olive oil, salt, pepper, red chili flakes and drizzle with remaining lemon juice.

These fresh and delicious Teriyaki Shrimp Quinoa Bowls seasoned with honey, ginger, and soy sauce are topped with avocado and a Cucumber Salsa.

Teriyaki Shrimp Quinoa Bowls with Mango-Cucumber Salsa

dry (multi-color quinoa, rinsed well)

vegetable broth

scallions

mango mango (from 1)

mini cucumbers (from 3)

jalapeño (sliced into thin rounds)

lime (juiced)

lb raw peeled and deveined shrimp (tail off)

garlic (minced)

ginger

soy sauce or gluten-free tamari

rice vinegar

sesame oil

oz sliced avocado (from 1 small haas)

Place quinoa into a pot with 1 1/3 cups broth and bring to a boil. When it begins boiling, turn heat to low and cover.

Cook 15 to 18 minutes or until liquid is absorbed.

Toss in scallions.

In a small bowl, combine the mango, cucumber, jalapeño, lime juice, pinch of salt and cilantro. Set aside.

In a large bowl, combine the soy sauce, rice vinegar, honey, and ginger. Set aside.

Add 1 tsp olive oil to a large skillet over medium-high heat. Add the garlic and ginger and cook until fragrant, 1 minute.

Add the sauce to the pan and cook 3 to 4 minutes until it reduces slightly, then add the shrimp.

Cook until shrimp are cooked through and pink, 3 minutes. Drizzle with sesame oil.

Divide the quinoa in 4 bowls. Top each with cooked shrimp and sauce.

Top with the mango and cucumber salsa and avocado.

Marinate the Chicken: Combine olive oil, oregano, garlic powder, paprika, salt, and pepper in a bowl. Rub the marinade onto the chicken breasts and let it sit for at least 30 minutes.

Grill the Chicken: Preheat a grill or grill pan to medium-high heat. Grill the chicken for 6-7 minutes per side, or until fully cooked. Let it rest for 5 minutes before slicing.

Prepare the Tzatziki Sauce: In a small bowl, mix together Greek yogurt, grated cucumber, lemon juice, minced garlic, fresh dill, salt, and pepper.

Assemble the Bowls: Divide the cooked quinoa or rice between bowls. Top with sliced chicken, diced cucumber, halved cherry tomatoes, thinly sliced red onion, chopped olives, and crumbled feta cheese.
